- Would you try our amazing Red Lentil Spinach Pie, inspired by the classic Mediterranean recipe, Greek ‘Spanakopita’ or Turkish ‘Börek’?
Our wholesome and delicious pie brings together the rich, earthy taste of red lentils and the vibrant, nutritious spinach, creating a dish that's as healthy as it is delicious. By eliminating flour and extra butter fat, the recipe offers a gluten-free and guilt-free savory pie that is perfect for any meal. You can enjoy its as a snack, or an impressive dish for your family or your guests 😍
Instructions:
Soak the red lentils overnight in the refrigerator.
The next day, rinse the lentils thoroughly under running water.
Strain the lentils well, letting them sit in the strainer while you prepare the spinach mixture.
Take the defrosted spinach and press out all the excess water using a spatula through a strainer.
Transfer the squeezed spinach into a mixing bowl.
Add the chopped onion, feta cheese, olive oil, dill, and ground black pepper to the spinach.
Stir the mixture thoroughly to combine all the ingredients
Go back to the strained lentils and transfer them to a blender.
Add cottage cheese, eggs, olive oil, salt, and black pepper.
Blend until you achieve a smooth consistency.
Add baking powder and blend briefly to incorporate it into the batter at the end of the blending process.
Line a 8.5-inch x 8.5-inch (21.6 cm x 21.6 cm ) square pan with parchment paper to prevent sticking. You can use any pan shape you may prefer.
Pour 2/3 of the lentil batter into the prepared pan, shaking it slightly to distribute evenly.
Spread the spinach mixture over the lentil layer, using a fork to create an even layer.
Top with the remaining 1/3 of the lentil batter, ensuring it covers as much of the spinach layer as possible. Shake the pan gently to distribute evenly.
Optionally, sprinkle the top with sesame seeds and nigella seeds for garnish. You can use any seed you may prefer.
Preheat your oven to 365°F (185°C).
Bake the pie for about 45 minutes, or until it turns golden brown.
Once baked, immediately lift the pie out of the pan using the parchment paper as a handle.
Allow it to cool slightly before cutting and serving.

I like it that y work in quietness without music and talking. Y show it very clearly. Thanks. Excellent
Thank you for your feedback 🙏
I’m really glad you enjoyed the recipe and the video editing style 💓
Tried today and it is delicious 😋
Thanks for liking 🙏💓
I think that in addition to dried dill, I will use dried mint, and another time I'll use dried tarragon. That will be three times, each one a different flavor simply by changing the dried herb 😊
Sounds like a great idea 👏
Glad you’re loving the recipe 🙏🥰
Superb recipe. Cooked in about 35 minutes in a fan oven at 165°C fan. Thanks for posting.
Really glad to know you loved the recipe 💓 Thanks a lot for the feedback 🙏🤗
I made this tonight, substituting fresh chopped kale for spinach. It was delicious. Great recipe. Thanks.
You’re welcome and thanks for the feedback 🙏
Actually, I wanted to respect the recipe of inspiration (spinach pie) that uses spinach, but actually the recipe will be great with most of green leafy vegetables! I’m glad you opted for kale, an excellent choice 👏
Glad you’ve enjoyed the recipe 🤗
What a GREAT 💡, thank you!!!
Lovely silent soul relaxing presentation of an interesting dish that looks good

Yum, this looks delicious..
i wouldnt have thought to use the lentils like that😮😊
Delicious recipe & smelt soooo good while cooking.
I had to reduce the qty of greens as I have kidney disease. Salad & yoghurt could be a tasty addition!!
Didn’t expect lentils to work so well as a batter.
Thank you so much for sharing your experience with us 🙏
I’m really happy to hear you loved the recipe even if it was new to you 🥰
You could even substitute chickpeas for lentils and I’m sure would be equally delicious. Or even use both. Certainly worth making though as very healthy and delicious.😋 😊
Please, feel free to adjust the recipe to your own liking 🙏🤗
@@zaracooks Such a delicious and healthy recipe, just so very grateful you brought it us. More than grateful. 😊
Wow! Thank you so much I never thought about lentil bread!
It’s a life saving alternative for gluten free people! And, it’s way more nutritious and healthier 🙏🤗
A red lentil batter recipe that actually works! I honestly didn't know how this would turn out 😂 This is a great low carb recipe. I love borek so this is a good alternative. Next time to up the protein I'll try adding a tuna mixture or shredded chicken mixture using the lentil batter as the base. Thank you!
Thanks for the feedback 🙏
I have already made so many bread and flatbread recipes (even sweet cupcakes) with red lentils for you to explore on the channel, if you like! This legume is just so versatile, you can use it almost like regular wheat flour for so many things 🤗
I am thrilled to find this. I cant wait to try it. Thank you.

That looks fantastic and I am definitely giving it a try. I grow spinach so I thought of wilting it gently in a pan with the onion before adding it in. Thanks for sharing.
Oh that’s fantastic, if you can use your own grown spinach 👏 You can add as much as you want, I used the frozen version because it was easier to have a large amount ready to go 🙏
Absolutely, you need to just let it sweat for a bit before adding it to the rest 🤗

Glad, you’ve enjoyed it 🙏🤗
Inspiring for us vegans, too, who wish to remove the animal products, thank you. The lentil addition attracted me to this version of spanakopita. The lentils add a great protein ‘hit’ in terms of making this dish into a more substantial meal. To veganize this dish, fellow vegans, the eggs can be replaced with an egg replacement, like JUST, in North America. A plant-based cheese can be used. In health, Professor-Elizabeth
Thank you so much for the insight and glad you get inspired by this recipe and you loved it 🙏
Yes, the recipe can be easily adjustable to be vegan friendly. My followers on FB already tried different things and they all love the result! For the lentil part, you can actually skip the eggs all together and add a 1/4 cup of the creamy non dairy product you’ll be using (I found coconut cream best suited for this recipe). And, for the spinach part, you can use your greens of choice (some even tried with broccoli) and either tofu or a vegan cheese to make it more tasty 🙏
I'm not trying to be smart, but due to the amount of hexapods & pollinators that die during the making of fake cheese, It's worth considering eating the real deal! 🗝🙏
@@ralsharp6013could you explain please?
@drletedelete2928 I have quite a few family members who are vegans & some won't eat fake cheese, due to some of it being made with cashews (poorly paid plantation workers) plus too many insects dying in the making of that kind of cheese. It's their personal preference to give and take on the subject 🙏
@@ralsharp6013thank you for the explanation.
But cashew is not fake cheese, it is plant based cheese.
I used a simple immersion stick blender, left out the baking powder (forgot) and cooked the pie in my fan oven at 165° Celsius for 50 min (I made a double batch in a 35x22 cm dish, so probably slightly thicker than in the recipe). It’s absolutely delicious! Thank you!
(Anybody else had lots and lots of tiny brown bits coming out of the red lentils while rinsing them? I’ll make sure I’ll always rinse them thoroughly from now on...)
Thank you for the feedback and really glad you enjoyed the recipe 💓
Yes, please, if you see dust and or impurity in your red lentils, rinse them thoroughly before soaking and after soaking 👍
The one available in my place (Canada) are clean and nice, that’s why I usually rinse them thoroughly only once soaked to eliminate the tannins and phytic acid (anti-nutrients that block mineral absorption like iron and zinc) 🙏
Thank you, that’s interesting!
WOW!!!
Healthy and delicious ❤
Thank you 🙏🥰
Do you think this will work with brown lentils too? Thank you for the recipe. Looking forward to making this.
Well, you can make a nutritious and delicious spinach pie with green lentils too, but the texture and taste won’t be the same as this one with red lentils 🙏🤗
je découvre cette recette, tout simplement génial ! je vais faire ASAP

What a great way to increase the protein in spanakopita. Although I love filo, this makes a great alternative.

Looks good
Foarte interesant❤
Thank you 🙏💓
I just finished making this recipe and it is delicious. I made a couple of tweaks by adding minced garlic and using parsley instead of dill (no dill on hand). I also accidentally bought ricotta cheese instead of cottage cheese, but that still came out yummy. Overall it is a great recipe, the next time I make it I am going to soften the onions by sauteing them before adding them to the spinach filling. 😊❤
You did a great job with all those subtle changes 👏
Yes, definitely, you can play around with your favourite cheese, herbs or spices 👍
The recipe is simple and can be adjusted to everyone’s own liking easily 🙏🤗
Excellent video thank you v much i will make this 👌🏼

Looks so yummy! Can I use labneh in place of cottage cheese? Will thick yogurt work as well? Or sour cream? Any ideas?
Oh, yes, all of them work well 🙏

Looks yummy! What can I substitute for cottage cheese? I can't get it where I live and I really don't want to have to make it.
Oh, certainly you use sour cream, greek yogurt or a thick plain yogurt instead of cottage cheese 🙏🤗

Update: I have warmed up a left over piece in a pan with a little bit of oil today. It was crispy and delicious. 😮🥰

That’s so nice of you 😍

So amazing recipe..💕Can we replace cottage cheese with yogurt ?? As here cottage cheese is quite expensive..
Yes, you can use another dairy product like Greek or plain yogurt or sour cream 👍 It won’t affect the recipe 🙏
Oh very good ❤
I'm glad you like it 🙏💓
It looks great and delicious. I am a fan of lentil bread, but adding Spinach to it is a new favorite.
Question: wahat is the size of your baking pan that you used in this recipe..??
Thank you 🙏
The size is mentioned in the description box as well as all detailed instructions (see under the video). But, here’s a quick answer for you :
I’m using a 8.5-inch x 8.5-inch (21.6 cm x 21.6 cm ) square pan. You can any pan in that range 🤗
This looks delicious! Do you think it could work if I let the lentils rest for 2-3hours instead of overnight?
If you soak at least 4 hours, they will be soft enough to get the best out of this recipe 🙏
Thank you!
This looks delicious. Would an egg replacement (such as one can flax powder) work for people who are allergic to egg?
You can even skip the eggs altogether if you like. Add an extra 1/4 cup of cottage cheese or sour cream and the recipe will be good 🙏
Nice work
Thank you 🙏 🤗
Hi there, thank you so much for this delicious recipe. I enjoyed it but my daughter asked if I could make it with fresh chickpeas. Do you think I could substitute the red lentils with chickpeas and keep the ratio of other ingredients as they are?
Thanks again 🙏🏽
Thank you 🙏
I haven’t tried myself (yet 😅) with chickpeas but I would think it’s worth it to try. I have done bread recipes with chickpeas and the results were just as good as with red lentils 🤗
Can’t wait to make , should be fine without eggs I think .
Yes, absolutely! You can skip the eggs if you like and add an extra 1/4 cup of cottage cheese or other yogurt or cream you may be using 🙏🤗
👍👍👍🙋🙋
I would like to make this but without eggs. Is there an alternative or can you omit them altogether.
Yes, you can skip the eggs and add a 1/4 cup cottage cheese or you can use an egg substitute like ‘just egg’ 🙏

Oh, you can simply skip it and add a 1/4 cup of cottage cheese or other creamy dairy you may be using to keep the same batter consistency 🙏🤗
@@zaracooks thank you

Could sour cream be used in place of the cottage cheese? I'd like to make a vegan version of this, and I've not found a vegan cottage cheese.
