I made this last night, followed it almost to the letter. The supermarket had no fresh green chillies so i substituted some from a jar of Basque hot red ones. Latif, it was really, really good. In the 60s I trained as a chef, have always murdered curries but this turned out perfectly. Thanks so much for your trouble and time.
To add, Imade this today with half kilo of lamb leg..I have a confession to make..I ate it all myself..couldn't resist! Just what I needed to warm me up 😁
Just made this curry and pretty much followed it to the letter (though didn't have black cardamom pods).... An absolute BIG THUMBS UP!! Moved to rural Ireland 5 years ago and in this part of Ireland, you can't get a really good authentic curry. So grateful for vLatiffs videos enabling us to enjoy a good curry in a place where you can't buy one!!

This is what is known as 'extreme multi-tasking' keeping track of all that stuff on the go at one time is actually an act of genius. I now know why I could never have worked in a Restaurant kitchen - the stress was just too much. Respect! I'm amazed. And does this mean you sometimes have to take an hour to produce a dish for customers while they wait? Surely not. Or maybe things are cooked in advance and kept warm until someone orders them from the menu. Anyhow it's mind-boggling. Very impressive work.

I actually made the Bhuna last night and although i thought i had burnt the Masala at the beginning it turned out fantastic, I actually couldn't believe i had made it. brilliant videos mate ....im from sheffield but live in holland and indian is not the dutch palate so i have to drive to another country for a good curry so i started trying to cook my own bir and with great chefs like you im getting quite good so thanx...as one curry lover to another is there any chance you could show us a proper staff curry ??? id love to see your version
me andyou that was a proper staff curry, if it was for a customer he would have had it done in 15 min cooked the lamb in the tandoori and used the in house gravy/stock.
