Easy carrot cake recipe using a blender

  • This is my go-to recipe of carrot cake. Once you taste the first slice you won't be able to stop eating. You can add melted chocolate on top of the cake while you are waiting for it to cool down. You can also use this recipe into making cupcakes. Hope you enjoyed baking with me.

    I've been making this recipe for a few years now, my daughter loves it. But I add Allspice powder to mine :) and also I use brown sugar only.

    I tried this yesterday and loved it. So easy and delicious and moist and I don't have to grate a pound of carrots. Thanks for the recipe. I added a 1/4 tsp salt and 1 tsp pure vanilla extract.

    Made this wigh variation
    Carrots 300gms
    Oil 200gms
    Flour 2.5cups
    Eggs 4
    Salt a pinch
    Brown sugar 200 gms
    Yum

    I tried this recipe yesterday! I tried to convert the measurements.
    wet:
    4 eggs
    1/2 pound of carrots
    2 cups of sugar
    1 cup of oil
    Dry:
    2 cups of flower
    1 tbsp of baking poweder
    It was a lot of batter! I think I used a 12 inch round pan.
    At 350 degrees, mine needed like 45-50 minutes.
    It did not taste like carrot. I think next time I'll add the carrots after mixing the rest of the wet ingredients so there will be more "carrot." And I think I might use brown sugar instead of white sugar.
    To us, it tasted like the Mexican muffin with the red liner. Almost like a Madeleines. Yummy but not quite carrot cake.
