- What's for Dinner? The dreaded question that every mom hopes to avoid. Well, today we are here to show you our simple, delicious answer to that question as we finish our final week of the 2024 Pantry Challenge, hosted by Three Rivers Homestead.
Meals of the week include pork loin with lemon pepper broccoli, tacos with homemade tortillas, as well as spatchcock chicken with roasted cabbage, and "baked" potatoes out of the instant pot.

Every night! We have a floor crew and a table crew. In the morning they handle the dishes.
My husband and I aren’t tossing out rice on the floor, so we leave the sweeping to the kids. 😉

Just a tip for the tortillas. If those are flour which I’m pretty sure they were. You do not use a tortilla press for flour tortillas. I see it being used incorrectly quite often. It’s only for corn tortillas. ❤️

Just a quick tip, place your grater directly on a plate instead of that catch on the bottom. I really think that is not as stable a surface for grating. Thank you for the great video.
Great idea! The little container has measuring marks on it, and hooks to the bottom, but might not be worth the week plus or a sore finger after!
I press my tortillas on the press, flip them over, press again. They’re nice and thin and perfectly round. Hubs and I love them!
Somehow it still doesn’t get ours thin enough! Perhaps it’s my press.

Can you give the recipe for your pesto please?
It’s from a book called Freeze Fresh, which you can pick up here. It’s packed with awesome recipes! amzn.to/4eSrbr0 (affiliate link)
1/2 c coarsely grated Parmesan cheese
1/2 c raw walnut halves
1 T minced garlic
2 c firmly packed fresh basil leaves
2 t fresh lemon juice
1/2 t sea salt
1/3-1/2 c extra virgin olive oil
Mix the first 3 ingredients in a food processor, pulsing 10-15 times until crumbly.
Add basil, lemon juice, and salt. Process until finely ground, or about 30 seconds. Scrape down bowl as necessary.
With processor still running, start to add EVOO slowly. Scrape down sides if it’s sticking. Process until it flows freely, using just enough oil so that it doesn’t get runny, and then process 30 seconds longer before stopping.
Freeze immediately. I use jelly jars, as they’re about the correct serving size.
Lay the grater down.
Great idea! I would have thought the cheese might fall out the other side, but I’ll give it a try next time!
