To answer your question since I have two headless guitars including the model Manuel has. It's several things. Small size of guitar both in length and thickness (while still having 24 frets). The necks tend to be slimmer as well. Weight of guitar and more specifically no weight at the top reduces neck dive and the feeling of needing to lift the neck while playing or bending down to play more comfortably. They are imo the most comfortable and easiest type of guitar to play. Headless guitars tend to hold tune longer but this varies with price and quality. Also, Headless guitars tend to need less tuning adjustment when putting on or removing a capo. The most immediate thing you notice is just their playing versatility. Standing up, the guitar causes less neck/shoulder fatigue, you are less likely to bang the head on things and they sit on the lap more conveniently when sitting down. You can tell how fully I've converted :) I was definitely a skeptic at first. Glad I pulled that trigger.
