I've been gardening 11 yrs!!! I can't believe it! It is just part of our life at this point... it is just what we do! Gotta try these! I love dill pickles. These look like some outstanding refrigerator pickles I bought at Costco recently. They were excellent, but not cheap.
I made these several times now. My family loves them and refuse to ever eat store bought pickles again. I do make one small adjustment, I add 2tbs of salt. But otherwise huge huge hit. 1 1/4 Cups white vinegar 3 1/2 Cups water 1 TBS of sugar 1 TBS salt Also, these last longer than the 3 days as suggested. I kept mine in for a week and they were still crunchy and not bad.
I also add red pepper flakes. I think the jalapeño takes away from the pickle taste. It overpowers. Great refrigerator pickle. This recipe also is a good brine if you want to go a step further and make them shelf stable by water bathing. Just remember to add pickle crisp.

The stems are okay to leave on. If you are fermenting your cucumbers however you should remove the blossom end. It contains an enzyme that can break your fermentation.
In the old days before mass refrigeration, pickling was a way for families to have a supply of vegetables during the winter. This was also before agriculture became heavily commercialised. They always use up the bounty surplus and preserve these in a pickle to save money, as back then buying off season produce was way out of their price range. Today, the purpose of pickling is different; not for preservation or sustenance but for flavour.

Adding a small amount of sugar helps balance the acidity. The end product will not be sweet.

Don’t forget to take stem ends off.
The stems are okay to leave on.

Absolutely you can even mix apple and distilled vinegar. Any vinegar will work as long as the acidity is 5% or above.
