    7 eggs - hard boiled (steamed preferably)
    ¼ cup - chopped celery
    1/8 cup - chopped green onions
    4 Tbs - mayonnaise
    1 Tbs - apple cider vinegar
    3/4 tsp - salt
    1/4 tsp - ground black pepper

    I steam my perfect 3 min eggs in pressure cooker like grandmother taught me back around 1972! Just like she taught me to cook bacon and fried chicken in the oven! Love your channel and your clear soothing voice! No hype! Straight to the point! “Just keep it simple stupid”way of teaching! Love it keep em coming!!

      You have to try Korean spa eggs sometime. You pressure cook (using a steamer rack) eggs for 2-4 *hours*. The whites turn a beautiful even brown color with a slightly nutty taste and the yolks become much creamier than normal. They’re quite soft overall and not dry at all. I don’t understand how it works but it works perfectly every time. They’re very easy to peel too

    Steaming eggs in a double boiler is the only way I have cooked eggs to ensure release of the shells. This may be just another gadget, but seems so much easier! A little stevia to the dressing makes it taste like an "Old South" version I grew up on. Thanks again! You're a pro! Really! Great channel! 💕

    You can also steam cook your eggs in a rice cooker- there are several ways that you can steam them, and they definitely taste better when they're steamed, rather than boiled ;)

    I realize I'm a little late to the party, but ... Oh, my goodness!!! SOOOO good! If I want that "potato salad" feel, I just add 2-3 cups steamed cauliflower, and a little dill pickle relish! THANK YOU!

    Little tip: you can perfectly steam eggs in a instant pot. I put one cup of cold water under the tray, put eggs in a pot (on a tray so they arw not touching water), set for a steam for 5 minutes. After it beeps I release zzsteam and instantly put eggs into cold water. Best soft but not to soft boiled eggs and doesnt matter how many eggs I put into the pot, they all come perfectly boiled and easy to peel.

    I tend to use mustard instead of mayonnaise as many of them use bad oils like Soy or Canola and some even have sugar in them.

    My favorite way to cook eggs for egg salad is to Crack them in a small baking pan or a few ramikens, place them in a water bath in a larger baking tray, and cook in the oven for about thirty minutes.
    If you want easy, that's as easy as it gets. Takes about as long as it does to steam and cool eggs this way. And you don't waste time peeling.

    I want to say that when I heard you mention steaming the eggs, part of my mind went to "man, when will good enuf be good enuf? Do we have to 'improve' EVERY darn thing?" But something in me went along and I tried it. Boy am I glad I did!!
    I simply placed a steamer into a pot, added half an inch or maybe an inch of water - not letting it touch the steamer, laid the 12 eggs on the steamer, covered the pot, brought to a boil, lowered heat just a bit, and let it steam for 20 minutes - twice as long as you said because you said doing it like this on the stovetop does not guarantee it will be done in 10 minutes.
    When 20 minutes were up, I placed the cooked eggs, using a big spoon with holes carefully to not burn myself, into another new pot with handles and carried the eggs to the sink and simply (I don't use ice much anymore) ran cold water over them - strongly at first then only a gentle flow - while I peeled them. After barely a minute of the cold water flowing on them I started peeling and experienced absolutely no problems!!! I NEVER experienced such easy peeling of eggs before. It was stunning.
    I am here to say that I barely could believe it - this is absolutely - INSANELY SO - the easiest and nicest way to cook eggs I have ever come across. I made 12 eggs - not for one second, nor for a single centimeter, did the shell or that inner skin stick on even one of them. No rings around the yoke just as you said. Texture of the yoke as you said. SUPER METHOD. EVERYONE needs to know this!!
    Unbelievably fantastic method !! Thank you!! Oh and let me not forget to say that this is the best egg salad I personally ever made! I saw in your response to another comment that this is your wife's recipe. Thank her for me! So simple, so tasty. A base you can add to as you wish WHEN PLATING, adding different touches for each person according to their wishes at the time, if desired.

      +marshafisch it's Great! I use mine all the time. The vinegar adds some acidity - in turn adds flavor. Some use mustard (which can have vinegar in it). But I think that changes the flavor profile completely. I hope you enjoy! Thanks for the support.

    I love your recipes but you do know you're using fats that are not low carb/keto approved right? NO oils other than olive oil, avocado oil, coconut oil, real butter, and lard. The mayo you use contains canola oil as an example.

      Just curious here, how do you know what mayonnaise he's using here? Are you just ASSuming he's using bad mayo? All the mayonnaise I use is keto friendly.

      Hi Jim. Thanks for at least giving it a chance. So many people try to over do recipes, when simple is usually best. There are some people (my daughter was one) who feel very inept in the kitchen. This recipe gives a simple balance of acidity and flavor without using odd ingredients. Consider it a platform or canvas for which you to begin your own additions, making it truly yours. I hope you at least give the recipe a try and comeback and tell me what you think.
