    I guess I didn't realize how much chicken could go in a half pint, but you're right. A pint is too much for just me. I guess I'm going to start buying half pint Wide Mouth Jars now. Thanks for the kick in the pants.

    Could you please tell me *what kind/brand of bouillon you're using?* I have been looking for a good powdered or granulated product, but, can't seem to find anything other than Knorr's. I can find NOTHING in bulk, so, if you could provide a link, I would truly appreciate it!!!

    I just canned butter in the 1/2 pint jars, 20 jars, 8 lb. butter. I bought 3 cases since that's all there was. No pints, just regular mouth quarts. Maybe 10 cases of those. 2 flats of wide and regular lids. Every time I see them I pick up a couple so I've got a good stash. That's called preparing, not hoarding. I'd like to say the off season of canning is why there aren't jar but I can't. My store always had a ton no matter the time of year. Think I'll be checking every time I go from now on. I canned chicken thighs I bought at Sam's. .98 a pound. I left the bones and shin on. Marked the jars for soup. should have a lot of flavor with bones and skin.

    First, I am going out this week to find wide-mouth half-pint jars because I am inspired! Second, I'm going to mix breast and thigh meat next time I can chicken because that inspired me, too!!

    The chicken in small jars is a good idea for sandwiches. I think I would also use them IN CASE things deteriorate to the point that pet food is impossible to get or in a pinch. The small jar is more than enough to keep my Ragdoll cat from standing on me and screaming in my face for food in a pinch! Alot of people have said they are having some difficulties right now finding certain pet foods. I could never deal with having to make my pets go hungry. I know it's silly, but I just couldn't. Even though my girls are still at home (they are 22 and 19), the small jars are great because they are in and out to school or doing whatever kids do! I was making too much food for awhile because it was portioned out for 4 and then someone or two someone's wouldn't be here for dinner. Or one wants tuna salad and the other wants chicken salad etc. Small jars will allow them to make up something quickly, without making a huge mess or waste! God Bless 🥰

    Its so great watching you can again. You are one of the gals who taught me how to water bath can and dehydrate many years ago. I finally graduated to pressure canning. What a game changer. I cant thank you enough. Look at the times we are in now. Can rely on stores. Have a blessed day!!!

      I do the same, I put about 4 Tablespoons of bullion water in my 1 Gallon jars. I like the flavor and it gives just a bit more liquid as well.

    Tried your method. But instead of processing 24 chicken jars, I processed beans pint jars (16 oz) on the first level, then the 8 oz chicken jars on 2nd and 3rd levels, 8 - 8 oz per level. I added 1 tablespoon of filtered water to each chicken jar. All jars were processed in the canner for 75 minutes. Worked perfectly.

    Canned chicken in bone broth and survived…lol. Thank you for your video on pressure canning chicken. I opened a can after 24 hours to see how it tasted. It is soft like long cooked chicken but tasty. So nice to be able to put jarred chicken in my pantry.

    I have never thought of half-pints 😍 I am starting to use my shelved meats (2 yrs old) in chilis etc! Such a blessing…I am starti g to write prices on my lids--shocking how prices are so much higher!

      What I do when I use my home canned meat, I replace it as I go along. I am using meat that is going on 2 years old as well and you are correct, is it ever good!

    I can ugly chicken in the 4 oz jars ~ perfect for a single serving! I use them for work lunches. 🙂

    Just found Garlic Chili sauce in my pantry. Yippee! Pulled chicken out of the freezer and checked jar stash and I have two cases of wide mouth half pints. Looks awesome. Thanks Linda. Lived in your old neck of the woods for 40 years, over ten in the central part of the state and now outside Elko. Watching you for years! You look very familiar.

    Half pints are the way to go for quick meals for one person. I do teriyaki or butter chicken this way as well since you serve it over rice so you don’t need too much chicken

    Now that lids aren't so scarce I'm back to canning in half pints too. I'd given that up as 'frivolous' during the shortage but those large jars of meat are just too hard to get through for only two people. I've even been doing pork and beef cubes in this size too. You had some very clever flavoring ideas, thank you for sharing the inspiration Linda.

    I love canning in half pints. For the two of us, it is perfect for two hot bbq sandwiches on a bun for lunch. I do beef, chicken and pork. I found rump roast to can this week for 3.99 pound at Winn Dixie (NE Florida).

    Tonight, I am canning corned beef and potatoes. Aldi had the beef for between $12-$15 a package. I fill my pantry with a years worth. It is so delicious for breakfast.

    Just finishing quart’s of ground beef. I started canning in the fall thanks to you and Homestead Heart. I’ve only been doing meat, 99% ground beef. I’d like to do some chicken and this looks yummy!

    I've been canning LOTS of half pints. Spinach, meats, beans... everything. It's my favorite size to can and I have a lot of quarts that are sitting untouched. A little goes a long way.

    I canned 1.89 chicken breast And similarly priced breakfast sausage 2 weeks ago , 24 pints of each. I think that's my most recent canning project. But we've been eating what I've canned - made 2 big cranberry coffee cakes with jarred cranberry sauce I canned in December. Chicken salad with my canned chicken and for one breakfast last week I served home canned potatoes with breakfast sausage.

      When you think about it , if you eat one jar a week you have nearly a year's worth of chicken or sausage. Now, combine that with canned ground meat and roast chunks and the like and you become pretty protein secure. People who are alone tend to get frustrated with the waste and suffer food fatigue eating the same thing all week. This could be a game changer. I have been hitting up thrift stores for canning jars. Usually .25 each.

    Brand new and researching/learning about canning. Can you show more about how you load the canner, water levels, why the vinegar, etc... thx. Looking forward to seeing all of your videos. I only eat meats and seafoods, zero carbs zero oxalates so interested in the canning of proteins and broths. Thanks again for great content.

    Prices are increasing every week. I've been fermenting this past week. I have plenty of canned meats but I'm going to ferment asparagus for salads for Easter.they were .79 cents per pound. Limit 3. I'll get the neighbor to get 3 pounds for me. I also love the fact of canning half pints of meats. Linda Rocks

    Not sure how old this video is but just found and thanks for showing use for half pint. I used to think they’re useless or for jams and jelly which I don’t eat so…Walk right by those, Not I’m going out to get some half pints😆 yes I loves that sauce and I add my homemade ginger/ garlic paste!!!

    It’s just two of us now, I can most things in half pints. It really cuts down on waste. It is perfect for two of us. I also do this with ground beef and taco meat.

    Does anyone else make a mess in the kitchen? I just made raspberry syrup and blueberry jam is next. My counters are going to look tie-dyed. 🤦🏽‍♀️
    Great video Linda. I usually save my half pints for tuna and salmon but chicken is a good idea for single servings. It’s always nice to have a variety of choices. ❤️

    Back before mom passed, I would can 1/2 pints of veggies and meats for her. She liked the smaller size and it was good to know she was eating good quality food. I'm going to try the red curry next time I do chicken. That looks yummy! Linda, thank you for the video!

    Thank you. I really enjoy your vids. I am so thankful to find this video especially today. I was able to get whole chickens for $5, so I am working the prep today while I have a full canner of barbeque chicken processing. But I wanted the rest of it for just chicken in half pints. So perfect for sandwiches or a small meal like you mentioned. So I was so happy to see your video on doing this very thing. Thanks again.     I ad water to mine too. I also ad a 1/2 tsp of bullion. I lucked out & got bone in chicken breasts at WALLY'S for $1.32 #. They were the same day date. I came home & jarred them up the next morning. Cooked bones & made broth with that. Then used the broth to make chicken veggie soup with half of it. Had 3 qts & 1 pint left of the broth. Processed that today. Thanks so much. I enjoy your videos.

    Most of my canning of meat is in half pint jars. I usually will load 6 to 10 half pints, and maybe a couple full pints. It's a great for 1 or 2 people.

    As a guy who hunts and fishes, I really enjoy the “ catch clean and cook formats. May I suggest as feedback maybe you can do some “prep, can, and cook” formats? I’d like to see more of the canned foods being used later for the quick meals and what is done with these canned meats and veggies.

    Great video ! I canned up a bunch of chicken last fall in quarts family of 5 here. I like the idea with the spicy stuff in smaller jars though as we have a couple that can't hack the heat. I just finished my second batch of navy beans about 45 minutes ago so its time to take those out of the canner.

    Thank you for sharing. I love canning chicken. I currently do pints and keep the jar in the fridge at work and it 3 days worth of chicken on my salad.
    I love the thought of half pints though to add some different flavor to my daily routine at lunch😊🐥🐓

    I think it’s a great idea to do some this size. Will be doing that. I thought it was pretty much a rule to Not tap on your lids until they have Fully cooled whether they already ‘sealed’ or not. That’s a very bad thing to teach any new canners!

    I found 1/4 pints that are perfect for me. They great size one person and can used for sandwiches , noodles, shelf salads and tastes so much better then the canned meats. The flavors are much better. And canned meatloaves in 1/2 pint and wide mouth pints. For the garden season ahead. Just reheat and mashed potatoes and canned veggies.

    I have been canning chicken, pork loin, ham chunks, turkey and beef like this for years, so fast to make a dinner when you work full time...! haven't tried ground beef yet, may try that this year...I put chicken broth (or beef) in all of them...

    We are two seniors and don't need huge quantities so I always like small jars. ( We don't eat the same thing always) I was getting stumped when canning, recipes always give the times for pints or quarts. I never knew if I had to adjust the time. Chicken is good for salads, in pasta, curry, soups, sandwiches, Chilli, etc.

    Smart idea 1/2 pints.
    I bought the new Ball book today. Completely different with all new updates and more recipes.
    I am in Cincinnati. Meat is not a deal. Chicken legs and boneless thighs were $4.99 pound. I got a lovely pork lion 3.99 pound.

    I have always wondered if one could can in 1/2 pint jars. That is all I need but I've never found any information in all my research to state that it is safe. I think I was more worried about the jars being pressure canned for so long because I just always associate those smaller jars with jelly and jam so hot water bathing. Thanks for this video to help me out with smaller amounts.

    Linda, I can in Kerr 1/2 pints for pizza toppings, chicken, sausage, hamburger. I also do Salmon for sandwiches.

    I have canned stewed tomatoes and pickles many, many moons ago. I bought a pressure canner. I have to admit I'm a little afraid to use it. I'm collecting turkey necks and backs to make a large batch of bone broth to can - to start with. But I think I'll have to try the 1/2 pints - perfect size for my stepmom.

      Be brave Robin you can do it. I am 61 and just started a year ago. My first project was water bath strawberry pie filling. Went to use and every jars contents covered in mold. I got a pressure canner and started canning meats. Never looked back! Go for it!

    Yesterday at Sam’s Club, we paid $2.98/Lb. For some nice chicken breasts. They are the nicest I have seen in a couple of months. A 2 lb. Top round last was $6.48, and 90/10 ground beef was $3.98/Lb. I am canning it all. Today I did some of the chicken in half-pints with chunky salsa.

    I live close to Chicago. On Wednesday I went to Gary Indiana to get pork picnic roast. It was $.98 a pound, every March I go and buy 100 pounds to put away for the summer when I don’t wanna heat the house up to really cook. I went in I asked for 100 pounds they didn’t have any out she said the truck just arrived. And there’s a lot of people trying to get things cut up from the butcher. So it’ll be like two hours unless you want a whole case. So I told her I’ll take two each of them each box was 70 pounds. The person behind me hearing this said she’ll take three. That left two cases for the entire sale. Chicken here I only buy chicken leg and thigh quarters and it was $6.49 for 10 pound bags at Walmart
