    Love the fact your inspiring people to can, I've canned for, let's see, I'm 67..... 50 years now. Try to collect wild items like berries, wild vegetables. Lots of garden items. Right now our local CSA, is giving away veggies, so I can, what ever they give me. Don't have a freezer, no room for one, so canning is my only option. Your show's are nessary at this time, you never know what the future holds. 💞

      I belong to a CSA as well and I have a full share but I live alone. My caregiver and I will be doing a ton of canning and vacuum sealing to freeze and I will share with her because the full share is 12 choices. I prefer to freeze corn rather than can it and any other vegetable is fair game for canning! I love to can yellow squash to make yellow squash casserole in the winter! I am 10 years younger than you but I have been canning for 50 years as well. My mother and I started making pickles when I was 8 years old and then I took it over at 12 years old. I didn't watch cartoons as a kid I put on PBS cooking shows all day! :-)

    I found 85/15 ground beef on sale Monday for 1.49 lb and just could not pass it up So I purchased 80 lbs. I had recently watched both of your videos on canning ground beef with broth and without, I chose the beef broth and it came out really good. My husband was laughing at me when I came home with all the ground beef!! He said I guess we are canning beef today LOL. Yesterday we opened a jar to make sloppy joe and I am telling you, it had wonderful flavor and texture!! Thanks for all you do for us canning folks!! Have a good week!!😊 BTW as of yesterday we have officiallyy canned 365 jars of a variety of foods in our pantry now from meats, soups, veggies, you name it, we are trying it.We also did the Beef bone broth, 45 hours it simmered and my god did that come out wonderful. Thanks to your very well video instructions!!

      Ground beet is higher than ribeye steaks here in Smithfield Pa. Small pack is $25 so you got great bargain!

      Wow ... sure wish it would come done in price here.. it's around $6.00 per lb, more in other places, here in Louisiana !

      The issue was they had order all this ground beef for the holiday weekend and with beaches closed and Distancing in place very bad sales, so i was at the right place at the right time. They had like 300 pounds to unload.

    Lipton’s onion soup mix tastes wonderful too! In 5 lbs would use 1 package and about 1 tsp of salt. I too no longer dry can my ground beef☺️

    LInda I love to can, but you have made it even more fun with all your recipes. Might you consider showing your canning pantry or how and where you store all your canned goods?

    Boil the Ground Beef vs Frying it.
    Put meat in pan add enough water to cover meat. Break meat up as it cooks.
    It removes more of the grease. I then let the water cool down, remove the layer of fat that gels at the top. Then use the left over broth (hamburger water) to use with my beef and noodles.
    My Grandfather and Aunt taught me this way, it makes clean up easier and less grease on the ground beef.

    Hi Linda, I recently canned 7 quarts of 80/20 Ground beef from a sale at Gordon Food Service Store and it turned out beautifully. I'm a new canner, I've only been canning for 2 years and I watch my canning Diva's to learn but I also back it up with a lot of research from books and the USDA Complete Guide to Canning. Thank you for all that you put up here on UA-cam, it really helps!

    You may already know this by now, but in case you don't, here is a helpful hint. To prevent damage to cupboards or microwave from steam, set a 2" 45 degree plastic plumbing elbow on the vent hole. The elbow will direct the steam away from the microwave/cupboards without interfering with normal operations.

    So I had a jar that didn't seal. So I put a can of tomatoes in it along with sime green bell pepper, spices and the onions from the spicy broth from the spicy pork recipe. I served it over chickpea pasta and parmasean cheese. It was so good. Thanks Linda!

    We are retired now and moved from California to Oregon. I sold off all of my canning suppliers that I had acquired over the years thinking no more canning, but w as tching your videos it is giving me back the bug I use to have.

    dang!!! You just solved a problem I've been trying to solve. Around 1:30 listening to you. I make a meat based pasta sauce. I also add sugar to it. I cook it, and it tastes great. THEN I can it. When I take it out of the jars, it tastes BURNT!! I couldn't figure out what I was doing wrong. You just solved my problem. It isn't my sauce nor my canning safety, but the sugar that I add, plus the tomatoes own sugar. Thank you!!! Now I have to learn how to make my sauce with no meat, then add the meat later.

    I’m getting ready to can about 25 lbs of ground beef. I have Angus, Chuck , and lean beef. Prices are going up these days so I’m getting it when I can. I canned many jars without the broth. It was very good but now I’ll try half this way and half with broth. Maybe lol haven’t decided yet.

    love your videos. would you share the sauces that can be canned? like sloppy joe sauce, taco sauce, enchilada sauce, ect.

      I absolutely will I've got a couple sauces coming up that I need to replace in the pantry one of which is in shalott a sauce a green Chile Verde salsa sauce and some barbecue sauce so yes those will be coming up soon

    Long time sub. Love your vids and the journey your taking us on. Next time I can groundbeef I will add the bullion and test it. Been canning for 45 years and just love the gold nuggets I get by watching channels like these. In these times we live now and food scarcity, get it done now while you can and put it. The best thing I like about canning is its a ready to go meal componant that no frig or freezer, put it the shelf and pull it when you did it. It's nice if people show up hungry I can throw a quick meal together just open-heat-an plate. Besides for most folks freezer space is precious.

    I have never canned before, but our freezer went out and haven't been able to find another large one anywhere. Canning it is. Veggies are coming out of the garden soon. Thanks for being here for us to learn from.

    For as long as you've been canning you should expect some siphoning when pressure canning anything with liquid added to the jars. I'm 56 and grew up canning my whole life with my parents and I always expect some siphoning when pressure canning anything that's a liquid base(sauces) or has added liquid.

      @@dawnstrohm6982 Siphoning is when "some" liquid(even minute amounts)from inside from inside the jar purges or leaks out from within the jar during the pressure canning process. It's nothing to worry about, it's very common for this to happen.

    You are amazing! I watched your videos when I canned a couple years ago.
    I just canned 24 half pints of butter, and will be canning ground beef in a few days. I just ate a mini meatloaf I canned 2 years ago. It was delicious!

    You have totally inspired me to start pressure canning. Bought a canner and will be canning ground beef too. going to bring a friend over to show me how to use it because I am so scared that I'm going to blow up the kitchen lolol!

      Don't worry. Follow the simple rules and guidelines and you'll do fine. It's a lot easier than you think. After the first time, you'll find yourself wondering what made you hesitant in the first place. Modern-day canners are very safe. If you're unsure, do a couple cans and if something goes wrong, throw it in the fridge to eat later in the week and get back on the horse. But it's seriously easy. Easier in some cases than water bath canning.

    I just came to UA-cam looking for a video like this because I found 93/7 ground beef on sale today for $2.99/#. My husband worked a night shift last night so he hasn't seen it - but imagine his surprise when he opens the fridge and finds about 17# of ground beef inside... I can't wait to try your recipe with the broth. I canned ground beef once before (dry) and nobody liked it. I have a feeling the broth will make all the difference

    Hi Linda! Been watching you for a few years. Been canning for about 55 years!! I started with water bath and now have a vintage all american pressure canner that I love. Can you do the Sloppy Joe sauce soon? I need a recipe that I can adjust without green bell pepper. I do have a bunch of yellow bells that I freeze dried. Love your videos. Be well!!

      I canned my first ground beef with broth. I had some liquids to come out of jars and one did not seal. I am afraid that others could come unsealed later. Do you have any info to help me ?

    Like the idea of adding the broth. I get a little overboard about but I use my scales to make sure I have a pound of meat in each jar. Only can meats in wide mouth pints. Thanks for the video. God Bless, stay safe

    This is on mynlust to do tomorrow. I canned 25 pints of salsa today and still have half bushel of tomatoes. Plus another bushel coming tomorrow. Hoping to make some roasted tomato soup tomorrow.

    Because of your videos, I made the plunge and bought a canner. I want to start with ground meat (hamburger) and bacon first. Just waiting for my accessories to arrive from Amazon any day now. If I can keep from blowing up my kitchen I will eventually get an All American one!!!

    About maltodextrin, my roasted chicken and roast beef Better Than Bouillon did not contain maltodextrin, but my vegetable with seasoning Better than Bouillon did. Hmm... so did my dried beef bouillon

    I’m thinking of doing some half pints bc I can get by with less than a full lb of fully cooked ground beef for some of my recipes. I’ve only canned pints before, though. Great video!

    Linda, you just solved "The Siphoning Mystery" ! Now I will use more patience at the end of the canning process. I will rest the lid on my American canner at an angle and wait a bit :-). Thank you for that tip and for Zen & the Art of Canning Ground Beef. I was only going to can roast beef chunks, but will try 7 pints of our farm's ground beef.
    I may try Lipton Onion Soup mix. Thanks again!

    Be careful with the methodextrine, it is very high on the glycemic index and will spike blood sugars for diabetics. Just for information. Love your videos

    Perfect timing to find this video.....found ground beef for $2.77....so I bought 12#.
    I use 4# to can taco meat but wasn't sure about canning the rest. After seeing you use the better than broth as liquid I'll do the same.

    Elizabeth said, I happened to see this video advertised, after watching your Home Canning Cream of Chicken and Mushroom Soup (2015). I don't have much knowledge exactly what all is cannable, so this was a new idea. It makes sense; I just never thought of canning ground beef. I've heard of canning butter and also canning cheese. What is your opinion? I've noticed you can can hamburger patties, also.

    Another timely video! I'm really happy to see this video come up just now. I've canned several kinds of meat, but this will be my first experience with canning ground beef. I was interested to hear your comments on the taste and texture of dry canned vs. canning with broth, and believe the broth method is the way to go, at least for this time. My family loves sloppy joe's and a variety of other recipes made with ground beef, so it will be great to have this on my shelf, especially for quick meals. I've got about 40 pounds of potatoes I need to can and get in the freezer first, but this is next on my list. As always, thanks, Linda!

    Linda, your awesome! ❤ love your videos pretty lady! You inspired me to pressure can and today was my 1st time. I liked your Facebook page also. It took some nerve to try out my vintage All American Pressure Canner I bought used but it worked. I canned up chicken cubes with celery onions garlic and broth.i tried the pre-boil 2 minute then rinse method so no scum in jars.went fast and easy maybe you can do a video on that. Faster than oven pre-cook method. Going try you ground beef when I find it reasonable. Looks great and convenient to use

    I was wondering how to keep the jars from cooling. I'm brand new but it makes perfect sense to just put the jar in the canner and then go to the next one. I filled all of mine at one time and then put them in and had some siphoning.

    I had canned some spaghetti sauce with the ground beef and several cans of sloppy jo's with ground beef and none of us cared for the texture of the beef. It had a very mealy, mushy texture. Does it have this texture when cooked and canned with the broth? I ended up throwing it all to the chickens. I also was disappointed when I canned some spaghetti sauce with sausage. The sausage had a similar texture. I wish someone could tell me what I'm doing wrong. The beef roast on the other hand, turned out wonderful. I did the pork but it sounds like it turned out like you describe the pork loin and I raw packed some chicken breast. It wasn't terrible but I've decided to use broth next time. I've been canning for years but had never canned any meats other than fish. I appreciate you sharing with us.

      Thx to comments like yours it's saving me from wasting too! The MALTODEXTRIN in broth is what helps & I took advice from other commenters to rinse it off when ready to serve, & re-fry it up before adding your sauces to firm it it. That made a huge difference in firming it up & taste I thought!

    I have lids from the jars I have purchased but I think that tattler lids are going to be very economical for me. :-)

    Great video. I canned ground beef for the first time this weekend. After the process was complete, I found some fat in the canner and fat dried around my jars. The seals look fine but I'm worried if the meat in the jars are safe. How can I tell if there was leakage? Thanks.

    I would love 2 c more recipes featuring canned goods lot of people put interesting twists or tips in there that u might not have thought of like beef broth in hamb lol ill give it a try

    How about putting a little soya in the broth to make Asian meals? And a little watered down 57 Sauce for Mexican meals. Also can one add onions and celery to the canned meat?

      Yes to onions and spices. And mixed meats as long
      As its same size can and time.

    I'm saving the meat drippings from my present canning and will put it in the freezer long enough to separate the broth and fat. Once this happens I will remove the fat from the top.
    I plan to freeze the broth and use it with my boiling water next batch. Add a few spices if preferred and I think it was be a tasty broth in itself.
