  • My goal has been to establish a perennial stand of ginger that can be harvested, and divided each year. Learning how to grow ginger in a container is a great starting point. I've been cultivating the rhizomes in a container or small pots, with the intention of planting them in a raised garden bed at some point in the future.
I got so excited when harvesting this ginger. I couldn't believe how well they grew! It was just in time to, as we got some cold weather, and the fresh ginger tea that I made from this harvest warmed me right up.

Hi, I am in Texas zone 8b also and had my ginger (first time growing it) in a pot doing fantastic. But I didnt realize it was so susceptible to freeze and it completely froze and turned brown. Not knowing what to do I just left it. This was a month ago? Do I try to see if it will come back in the spring, or pull it up, or just start over? If i pull it, can i eat it? Thanks and merry christmas!

Hello! Ginger is listed as hardy in zones 8-12, and it's normal for the top growth to die back after cold temperatures. That being said, I do protect my container grown ginger during cold spells just for good measure. I would expect it to regrow once the soil warms up in spring, maybe in April or May. The rhizomes may be smaller after their first year of growth, but you won't be hurting anything if you dig them up to investigate, and as long as they're not mushy they should be good to go. Hope that helps! Merry Christmas.
