This the first of your videos I've watched since subscribing a while back (I have dozens of subscriptions). Your technique and recipes are wonderful. I might just marinate the tofu in its container. Your sub for wet-dry-wet-dry dipping is cool. Now all I need is an air fryer... my oven will have to do for now. The dressing is right up my alley. I think I'd want the salad to marinate for a few hours. You're so talented and here I am, remarried to an omni, who smokes and is an alcoholic.

Late to the party, but prior to adding the tofu to the marinade, do you press out the liquid of the tofu, so it can absorb the marinade completely? Thanks!
Welcome. Better late than never. I didn't marinate these, the liquid is from the package of tofu. But, if you did decide to marinate, then yes, I would dry them and remove the water before adding marinade. Then just proceed with the dredging and air-frying.

Honestly, I love my air fryer/s. I use them all of the time, even for things like cooking veggies, or warming things up. It was sort of a novelty at first, but it's become one of my most used kitchen appliances. I just saw the Instant Pot top one on someone's UA-cam channel the other day. Seems like it works.
That looks so yummy!!! I love making my tofu like that! I do it in a more lazy fashion though. Lol. I toss my tofu in some seasoned corn starch and leave it overnight or until I’m ready to use it. I will have to try your way, I have also never marinated tofu for more than a few hours so I definitely need to try that too. Did you press it before you marinated it?
Sounds like this is pretty much just like your technique, but with gluten-free flour instead of cornstarch. I didn't press the tofu at all at any point. I guess you could if you wanted to get more marinade inside. But I think they came out flavorful without that extra step. Let me know how it goes if you give this recipe a a try.
I have 2 air fryers that I use pretty much daily. I have a small Phillips one that was gifted to me about 4 years ago. That one works really well for serving 1 or 2 people. My other "air fryer" is actually my "Breville Smart Oven Air", which I'm not sure if they make that exact model anymore, but it's essentially a glorified toaster oven with an air fry setting. It's great for larger jobs and keeping everything separated. Most small-sized air fryers do a good job, and it's just about getting the best price. If you need something larger, I would definitely look into the counter-top ovens with "air fry" settings. Breville is not cheap, but I am obsessed with my Smart Oven.
I have a Breville Smart Oven Air. I think they still sell it, but it might be under a different name. It's pretty much a glorified toaster oven with an "air fryer" setting. If your Breville has an "air fryer" setting, then it will automatically set the convection really high. If you don't have an "air fry" setting, then just bake at 400 with convection.
I always refer to it as "the other other white meat". We are never without it. With air-frying, it's all about checking regularly. I never follow times. I just open it every few minutes, toss, and check the progress. I test it for doneness, when I want to keep eating it, I say that it's done. Don't give up! Haha.
Genius. Definitely get the buffalo sauce on before cooking, or crisp them up, add the sauce, and then let them crisp up a bit more. The breading is crunchy out of the air-fryer, but any added sauce will take a bit of the crunch out.
I googled "maïzena" and it's cornstarch? It won't be terrible, necessarily, so long as it's fully hydrated by the tofu before you cook it. If there are dry spots, then it won't be good.
