Vegan Air Fryer 101: General Tso's Cauliflower, Nashville Hot Tofu, and Ranch Dip!

  • People have been asking me for vegan recipes to cook in an air-fryer. This “recipe” is more of a guide on how to bread and air fry pretty much anything, from vegetables to tofu to mock meats. I give you a basic binder recipe, made from chickpea flour, and I talk you through using panko bread crumbs to create a crispy coating. I have created two recipes for you, General Tso’s and Nashville Hot, that showcase how you can use this breading and turn vegan proteins and veggies into delicious, healthy, crispy meals.

      I also have an air-fried grilled cheese up on my channel. But I will definitely be using it more in the future. I love it, and use it more than most of my other cooking appliances.

    Very nicely presented, a thorough explanation of ingredients, techniques, and ideas to build on. I am not a vegan-vegan, but many of my meals are, 50+ years of being a pescatarian-lacto-vegetarian: it suits me just fine, with veggies being 2/3rds of my food intake. I, too, would have a wrestling match on my hands if I tried to add an air fryer to a crowded counter, but ya never know... Great ideas, Chef.     Really nice video. I’ve been vegan for nearly twelve years and just picked up an air fryer a few days ago.     I'm glad you mentioned the taste of the bean flour cooked vs raw. Trust your spices because the uncooked bitterness disappears after it's cooked. Like you I have found so many uses for garbanzo flour. I just live it. I like your videos. I get good ideas from the things you make. Thank you 😊

      I'm obsessed with chickpea flour. I even made a whole playlist. My most recent video for noodle-less butternut squash lasagna has a chickpea béchamel that I am OBSESSED with. I used it as a pasta sauce the other night, even.

      Thank you. I didn't really have many vegan men to look up to, since I'm not a vegan athlete or body builder or anything, so I decided to try to be what I couldn't find. There are some great vegan men on YT, don't get me wrong, but the women, especially Canadian women, are really dominating the whole vegan UA-cam game.

      People are always trying to figure out the best way to cook frozen veggies to get them to not be soggy, and the truth is that you can't with most of them. Peas and beans are about it. But the frozen works well here since the freezing helps to make them cook faster. Thank you for watching!

    Great video again as usual! Been thinking about getting an air fryer for months now, even so, not really sure I truly would use it that much. But these recipes are killer, with or without the air fryer. Haven't had any ranch type dressing/dip for the last yr since I became vegan so I'm realy interested in trying your recipe. Not interested in anything jarred, bottled for that, prefer fresh made so this recipe looks right up my alley. Loved the quiet humor in the video too, snuck it in there a wee bit. Fun!

      Teri Ruiz you will be Amazed! And will use it more than you realize, I brown beets, eggplant, yummy plantain, awesome pitatoes they even have additional pans that cam hold stews, chilies, even a small cake pan can also use for mini pizzas, you will question what took you so long!

    I made air-fried breaded tofu last week. I have the oven-style air fryer, I think it may be the same model you have...I'm just starting air frying. Took some homemade flour tortillas this am, cut them into wedges, and used the air-frier to make tortilla chips. I love crispy things! I'm thinking of trying it with the chickpea flour tortillas as well. Blessings, Michael.

    This video was almost perfect. The recipes look tasty and pretty easy (once you've been shown how!). The host is likeable and seems knowledgeable. The explanations were clear, and the pace of the instructions was spot-on. The music was like something from a filmed nightmare sequence, quite disturbing. I had to watch some of the video with the sound off.

    I love panko crumbs, but they are hard to find and very expensive here, so I started making my own and it works great. Buy two half baked baguettes (here that is 1 pack), then grate them using the coarse blade on your food prosessor or grate manually. Add to a cookie sheet and slowly bake on low heat until fully dried (or use your dehydrator, same thing). Let cool and add to a mason jar. I usually get around (or a little over) a quart/liter.

    I was looking for air fryer recipes ,got your video. Great idea of coating with bread crumbs on runny batter. there is a trick for making chickpea batter and that is vigorously stirring the batter in one direction 4 minutes or so till batter turns somewhat glossy and also it thickens. This technique is used to make veg fritters .

    Gr8 video.... I am not a vegan/vegetarian, but I have had vegetarian/vegan dishes that I've enjoyed. It's all about the flavor you are able to add that makes the food so enjoyable. I just got a Philips brand air fryer as an early Christmas present. I can see myself using your breading and batter preparations on many veggies, boneless chicken breast...and maybe even tofu!!     Great ideas. I really appreciate the technique demo. What’s great is you just skip the hosts and not hear the vegan talk. Now I just gotta swap in my favorite ingredients like an egg wash and wheat flour or cornstarch and we’re good to go.

    Thank you for this! I wish I could make them, however I'm WFPB, which means whole grains, no sugar, no oil, and of course, vegan. Would you please, please show some awesome options that are easy to make? Our air fryer isn't getting as much use as it once did. Thank you and God bless!

      I love to air fry vegetables, even without breading. Broccoli, cauliflower, zucchini, green beans, potatoes (all types)... I also have an air fried "noodle" video where I show you how to use the air fryer to cook zucchini and sweet potato noodles. For most veg, I just set the air fryer to around 400 F., throw cut vegetables inside, and check them every few minutes. Test them for crispiness and tenderness along the way. They're done when you can't stop eating them out of the air fryer basket.

    I like the recipes you chose. But I would use rice flour or cornstarch instead of the garbanzo bean flour. I’d think it would taste beany.

      Elsa&lisa It doesn't. Completely disappears. It's my favorite binder for this type of breading. I've done it at least a dozen times with different veggies. Trust.

    I just bought my first air fryer -- it took someone explaining that an air fryer is just a mini-convection oven to get me to cave. ;) So, this was a great way to start off. I love fried foods for the flavor and crunch, but I hate having to deal with all that oil. What's a good way to properly dispose of half a gallon of used fry oil???     Great video can I purchace the chicpea flour in the grocery store or is it a special order item??? BTW love your shirt and the pup's in your other video. tks and you are right about the smaller airfryer cooking faster. I also have the phillips 9220 and it isn't that small, as a matter of fact my husband loves chicken and I can fit 4 chicken thigh's in it, I love the vegies, but he's a meat and potato man. your video's are so informative, tks again

      I can find the chickpea flour in most stores. It's a Bob's Red Mill product in most places, so it's with their other flours. Sometimes it's in the gluten free section. I've been making my own lately using the flour blender pitcher for my Vitamix and just whole dry chickpeas. Chickpea flour is a cool product. I've been enjoying experimenting with it. It also makes a great quiche. Who knew!? I too live with a meat eater, so I understand. Thanks for watching, Nicky, and thank for the compliments!

      Haven't found the chickpea flour yet, but will try walmart, or maybe one of our health food store's, and I love the video, just got to get the ingredents, I order most of my stuff on amazon, it's sort of difficult for me to be gone for very long, my husband has spinal nerve damage and my time is very limited, my son and his family live next door, but 3 of them work and the two grandaughter's are in school, so I wait until they are home to do my shopping, but I don't like taking up their time...and if you have a quiche recipe I would love to try it, tks again.       In Indian store you can easily find chick pea flour it is called Besan. Haven't tried online, but it should be available. Happy cooking.

    Have you used the Mealthy lid on the Instant Pot? I’m wondering if it’s worth buying. I have no air fryer at all and am trying to determine my best approach

      I haven't tried it. I have an old school Philips one which is like 4 years old now. And I have a Smart Oven with an air fry setting. I think they are all pretty much the same in terms of how well the cook. It's still one of my favorite appliances, and I use both of my air fryers a couple of times per week. Even if you're not breading things, it's great for any frozen foods that you would otherwise bake, and it's so good for just cooking veggies. Broccoli, zucchini, mushrooms, cauliflower... you name it, they come out great. 10/10 would recommend.

    Looks great! Wondering...do frozen vegetables without batter work well in the air fryer? All the recipes I see online use fresh vegetables. I just bought an air fryer and haven't used it yet. Thanks!

      I've actually never tried... The water that is released when frozen vegetables thaw could be an issue. Although, the air fryer, with it's convection power, could evaporate that water off pretty quickly. Frozen veggies are fairly inexpensive, and I think it would be a worthwhile experiment to conduct. Worst case scenario: They are a bit too soggy. Turn them into a soup. :)

      Ok! My first run in the air fryer. My first batch of frozen brussel sprouts turned out like oven roasted. The next batch, I left in longer to see if they could get crispy. They were great, and did get a crisp texture with a creamy inside! I didn't use oil, and they were only seasoned with basic spices.

      And that was from frozen? I love throwing unseasoned, plain vegetable in there and seeing what happens. I just put fresh Romanesco in my Breville Air (hint at tomorrow's video), and it turned out awesome. It's like it concentrates the flavor. I should do a video of just air frying fresh or frozen veg without any accouterments. I'l always so impressed.

      MsBellaFate Not sure... mine is Totole brand. Try a little bit and see what happens. Can't be that bad. Or just leave it out. It's good without it, too. You could add a teaspoon of nutritional yeast. It has a similar effect.

      Honestly, I love mushrooms, especially breaded mushrooms, but I've never tried them this way. I think they would work... my only concern is that mushrooms release about half of their weight in water when cooked, so I don't know if they would be or stay crispy. I do know that stuffed mushrooms are amazing air-fried, so you could always go that route.

    I can’t have Panko because of the gluten. What can we use instead? Also, how do we make enough to freeze and cook later using the oil-less fryer?

      Places like Sprouts and Trader Joe's sell gluten free panko. Also, I did another air fryer video a few months ago using a gluten free breading. In terms of freezing, I haven't tested that out, so I can't really give you any advice.

      No apologies necessary. Pretty much any firm tofu will work. I like extra firm and super firm quite a bit. Experiment a bit and see which texture you prefer.     Theres endless airfryers and convention ovens out there. Also true with the pressure cookers .fyi theres even pressure ovens now. Ya look it up. I dint know that until I saw it on hsn.Wolfgang puck was selling his .i have two a f s .would luv the oven but more so an insta pot now or something .I'm not vegan but looks good .I do luv veggies in the af too

    You shouldn't add wet things to the wet batter until you've dredged them in 'flour' to help make the wet batter stick to the "now dry collieflower" then wet batter and then your panko..

      I honestly haven't tried that many, but from what I can tell, they are all pretty much the same in terms of effectiveness. Size is the only real difference, so it just depends on how much you want to cook at any given time. I have an old Phillips one that's still going strong after 4 years, and I have a Breville Smart Oven Air with an air-fry setting that cooks just as well, but is great for larger batches of food. The only difference is about $300.

      I buy mine at Sprouts or Trader Joe's. They are both my favorites. But If you read the labels, you should see that most brands are vegan.

      I have an old-school Philips air fryer that's about 5 years old, and I have a Breville Smart Oven Air, which is essentially a toaster oven with air-frying capabilities. I don't think that either companies make those exact models anymore, though. And honestly, from what I've seen, there really isn't that much difference other than price. It'll have to come down to the size you want for the number of people you're trying to feed, and availability.

      Because of the panko, they stay crispy for quite a while. They will soften once you add sauce because there is no oil to keep the breading from absorbing the liquid, and If you have leftovers, they will soften in the fridge as well.

      Thanks! The larger appliance is a Breville Smart Oven Air. It's basically a counter-top oven with a air fry, or a hyper convection setting. Love it!

      My Philips air fryer is two years old, and I wouldn't know where to begin to find the model. It's a very outdated model at this point. My Smart oven is the Breville BOV900BSS The Smart Oven Air in silver

      Yes and no. Air frying is essentially hyper-convection. It's a lot more hot air swirling around in a smaller space. I use a Breville Smart Oven Air for some of my air frying, and when I set it to "air fry", it says "super convection" on the display. So, they are not the same, but they are essentially the same. If you don't have an air fryer, then a convection oven is the next best thing. Hope that helps. Thanks for watching.

      I love my air fryers I use them almost daily. They are great for cooking things like broccoli and cauliflower, or pretty much any vegetable. It's almost like steaming the veggies, but the flavor gets more concentrated, and you get some crispy bits. It's truly my favorite appliance for cooking veggies.

    Please avoid the use of endothelial inflammation inducing oils....the advantage of an air fryer is a crispy finish WithOUT the unhealthy addition of oil!

      Air-fryers have many uses and can be used with or without oil. If you're avoiding oil in your life, then by all means, omit it when cooking these recipes.
