I usually make cheese spreads in the Fall & Winter (especially around the holidays) for impromptu snack boards/trays. I have a few Old Faithful recipes that have stood by me for a few years now, but I'm looking forward to trying your versions! I can't find the Baked Tofu locally, so just bake my own for meals and recipes. Thanks much for the inspiration!

Sounds like a great weekend! And yeah, I searched for smoked tofu for literally years, and it was at WinCo all along. The smoked one is really good. I would also highly reccomend the onion one on pretty much any flat surface. Currently eating it on toasted sourdough.

I used regular firm tofu, twice as much siracha as any normal person would and had to use a blender to process it since that was my only option available. But it did the job! Maybe didn't turn out as smooth as yours but still superduper yummy :)
Yay! I'm so glad you made this, and did the work of testing out other tofu and a blender. Definitely good to know. I devoured the onion one all by myself the same day. It didn't take me much longer to finished off the other two. I have some in the freezer as well to test how well it thaws. Hoping this would be a good recipe to make in huge batches and then frozen.
I have made the Smoky White Cheddar sooooo many times over the past few years and it's a family favorite for sure. To avoid any feuding, I learned quickly to make enough for all 5 of us to have our own little ramekin batches. If you eat all of yours too quickly, you have to try to barter with someone else to give up their portion. It's serious stuff in our household! 🤣 The price of the Trader Joe's baked tofu is overpriced so I've tweaked the recipe so that I can make big, affordable, delicious batches. My recipe has a lot more ingredients but it's because I'm using plain tofu instead of the baked that already has lots of flavors. I've tried to make it without the coconut oil but it adds a decadent mouth feel that I couldn't get without it. This is a BIG batch so feel free to cut it in half. Creamy, delicious and it freezes well. Blend the following in Vitamix or food processor: 1 block super firm Tofu (no need to press) 1 block firm or extra firm tofu (quickly pressed) 3/4 cup cashews (soaked) 1/2 cup nutritional yeast 1 Tbs Onion powder 1 Tbs Garlic powder 2 tsp smoked paprika 1/2 - 1 tsp Turmeric pinch black pepper 1/2 tsp lactic acid 1 Tbs Soy sauce 1 Tbs Lemon Juice 1.5 - 2 Tbs liquid smoke 2 Tbs apple cider vinegar 2 Tbs white wine vinegar 3 Tbs coconut oil 1 - 2 Tbs water salt Add 2-4 Tbs Sun-dried tomatoes after blending everything else and give a couple of pulses so as not to pulverize tomatoes. I hope this becomes a family favorite for someone else as well. You'll never want to buy spreadable store bought cheese again!

I've been on the quest to find smoked tofu for so long, I can't find it anywhere around here for some reason! Not the Trader Joe's, not Whole Foods, not my local health food specialty stores. I had it once and loved it! Thanks for these recipes, I love the idea of cutting the cashews with tofu to make it less of a calorie bomb and add these extra flavors.
WinCo is the only store I've been able to find it. Using the "savory" baked tofu, or just the high protein super firm tofu with a bit of liquid smoke should get you pretty close.
Thank you. I love a good Miyoko's cheese, but yeah, they are super calorically dense because of the coconut oil and cashews. You're looking at about 700 to 750 calories per wheel here. And they're about twice the size of a Miyokos.
They would be great for the holidays. I would probably reccomend the caramelized onion one for a mixed crowd. The texture is really great, but it's not necessarily trying to mimic a familiar cheese flavor. Let me know how it goes!

I'm still really proud of these recipes. Shortly after making these I tried one of Miyoko's $10 cheeses, and although I have been a fan in the past, I felt like they were missing something. The texture of these tofu cheeses are so great, and I honestly prefer them to other commercial brands now. And in terms of the ads... My good friend Jackie from Vegan Yack Attack (whose cookbook I just did a video for) has made me feel more confident in accepting compensation for my work. My partner and I put a lot of time, energy, and our own money into these videos. People forget that there are food costs, and the website costs, and just general expenses associated with sharing this content with the world. I used to feel bad about the ads because they ARE annoying, but it's my way of getting some compensation for my work, and I shouldn't feel bad about that. As fun as these are to make, they are still work, and I should get something in exchange for my work. Thank you so much for the love, and understanding that the ads are not there to bug you, but to help me out.

Greggs (a national bakery chain) brought a vegan sausage roll out last January for Veganuary and it was such a hit that they kept it on. They've brought out a vegan steak bake this year much to the same excitement, although sadly, a daytime TV chat show had a feature last week entitled 'Has Veganuary Gone Too Far' 😂

No Wincos on the east coast… But! One can purchase small oven size “ Smoker”and venture into making your own tofu and tempeh… Smoked with the array ig spiking chips available. I’m sure Amazon has both since it has everything and you can smoke to your hears content ( not hard at all),

And yeah, I don't love the idea of ads, and it sucks not knowing exactly what their pitching to my viewers, but as someone who watches more UA-cam than conventional television, I've learned to block them out, or wait through the countdown until I can skip them. Necessary evil, for sure.

Thanks! You should be fine to skip it. Agar would be too much work. Maybe just add a few more cashews. The coconut cream just adds a bit of fat, creaminess, and stability.
I have not tried it. I know that beans tend to lend a bit more flavor to the dish than cashews. It should work, but I do imagine that you would taste the beans. It's definitely worth a shot. Let me know how it turns out!
I would say up to 5 days in the fridge. Wrapped very well, the will last in the freezer for a couple of months. Personally, I had a couple of these saved for about 2 months in the freezer, and once thawed, they were as good as the day they were made.

Yeah, the smoked is really hard to find. The only place near me that I can get it is WinCo. If you want to make the smoked cheese and can't find it, then get the Trader Joe's "super firm" tofu, and add a few drops of liquid smoke. I actually did a vegan party foods video where I use the super firm tofu to make a very simple cream cheese which makes a great base. Let me know how it goes!
The onions burnt! That’s not caramelized, yes you better now give it all your attention! They would technically be burnt and bitter! Yes balsamic will disguise the problem….

I’ve found the tofu at Trader Joe’s, except the smoked tofu. Since cheap lazy vegan uses it all the time, I need to find it.
