      @@blackaxium234 I was skeptical about using a scale, but after living abroad, I love it. It's more accurate, which is especially nice for some things like baking. Dry ingredients larger than a tablespoon just get dumped into one bowl which sits on the scale. It's much nicer than getting out all of the measuring cups, making sometimes several scoops just to measure one ingredient, and then hoping you don't have to reuse scoop that you just dirtied.

      Certain parts of cooking needs to be extremely precise. Brining with salt and curing salts are very precise. Measuring by volume can be problematic because of maybe something like flour. Flour has too many variables of the flour compressing into a smaller volume. If the same amount of flour of 1/2 cup is compressed into 15/16 of a cup it is still the same amount of flour. All matter has a molecular weight and by using weight we can accurately reproduce our recipes and their dishes.

    To get most of the kim chi smell out of your fridge. My mom uses plastic wrap before putting the lid on. Then puts it in a large plastic lock container. Lastly because we make 10 pounds of it we need a second fridge just for kimchi.

    just thought i would share... I just made this with corned beef from the can , mayo, kimchi, parmesan, thick cut tiger bread and an egg. I would say it was very tasty and fast to make ;)

    Wow looks and sounds good. Might be even better to fry the kimchi a little, make it a little caramelized. It turns sweeter and more savory and works better on sandwich's and hotdogs with cheese in my opinion.
