INGREDIENTS:
4lb Top Sirloin or Top Round
2tbs Dried Oregano (Knorr preferrred)
1.5tbs Garlic Powder
1.5tbs Onion Powder
1.5tbs Dried Basil
1.5tbs Crushed Chilli Flake
1tbs Toasted black pepper
1/2c Kosher Salt
1qt Grapeseed Oil
2qt Beef Stock
2 whole heads of Garlic
2 large Carrots
2 Onion
1 whole stalk Celery
1qt Mild Giardinara
5 Green Bell Peppers
5 Turano, Gonnella, or Amoroso sandwich rolls (cut in half)
COOKING METHOD:
1. Trim fat from beef and set aside, you can always use it as the fat base if you have a food processor but if you don’t, cover the base of your pan with Grapeseed oil.
2. Season beef with salt and pepper. In a large rondeau heat Grapeseed oil under medium / high heat. Sear beef on all sides to brown.
3. Once browned, remove beef and rest on a half sheet tray with a cooling rack. Deglaze pan with your aromatics - the rough chopped, skin on, carrots, celery and garlic and stir with a wooden spoon to melt. Once all the fond has come up from the pan, deglaze with beef stock and stir.
4. Mix in dried herbs, bouillon, and seasonings.
5. Add beef back in with the torn or sliced green peppers, just make sure to remove all the seeds. Cook in oven set at 350 degrees for 1 hour. Checking internal temp to 140 degrees.
6. Once your beef has cooked, take it out and let it rest until cool.
7. Remove your peppers from the jus and place in to another large pot that is on very low heat, then strain your liquid to remove all the onions, celery, carrots, and garlic. Taste for seasoning and add salt if necessary.
8. Once the beef has fully cooled and rested, thinly slice the beef about half an inch thickness if you can and place it all back in the jus with the peppers.
9. Get all your buns ready to start building! Slice your bun in half and take a tong-full of your beef, lay it in gently, then stuff one of the peppers in there and top with your Giardinara. Dip each corner into the jus and wrap up your sandwich in parchment or wax paper. - Комедії

I just binged the entire seanon of The Bear - in essence it was Kitchen Confidential on TV. Anthony Bourdain would be proud with how accurately the show depicted the back of the house. The food on the show is absolutely legit. Matty did amazing on the show, both acting and producing.

One of my favorite parts of the The Bear was Marcus and his love of trying to teach himself baking. I loved that so much. His sadness and happiness in his own success

What no one has really mentioned, and why I loved The Bear, was that the timing was sooooo right. Covid / post-covid stress and anxiety is where it hit me. Feeling simultaneously frantic and wrung out, trying to do better but feeling like you are doing worse, wanting new challenges but having trouble getting through the day, facing people and arguments and changing times that you just do not want to deal with and having to face ugly truths about yourself--I don't think I would have related to all that three years ago. I would have recognized the talent and appreciated it, but I don't know if I would have empathized or really felt what they were thinking / feeling. I worked in a school that mostly stayed open the past two years, not a kitchen, and a lot of this felt so relatable.

I can’t begin to describe how proud I am as a Chicagoan to see the beef getting its due! Forget a French dip, or a Philly cheese steak, or a beef on weck, the Italian beef is the king of roast beef sandwiches! Also, why isn’t giardiniera a more utilized condiment/accoutrement?

I have to say, as someone who has lived in Chicago for my entire life, this show was beautiful. And as someone that loves to cook and has been in and around kitchen my whole life, this was a very real interpretation of how it is in these kitchens. If you haven't watched The Bear yet, you're fucking up!

Great show. you guys hit so many Cheffy things that most foodie shows miss. The sharpies, the tape cuts, the dishdog asking the team to take off the tape before putting the quart containers in the pit ect.... Just fucking loved it.

Matty… dude… I’m sitting here 6 episodes deep on The Bear. Owner of a small restaurant myself and I gotta tell you… by far the most spot on depiction of the life on screen and I LOVE IT! Got me in the feels and the giggles a ton, I relate to Carmen a ton. Great job man.
Former cook here. This is the only show on TV that I have ever seen that truly captures what it is to work in a kitchen. I love it and I want more.

Just started watching the show this morning and I love it. I could definitely see hints of your cooking style and I just loved how authentic it was. "The Bear" is definitely now in my top 10 and makes me want to take a trip back to Chicago specifically for the culinary scene

Came and found your channel after watching the Bear, and then binging it two more times because I couldn't get enough. Man, what a great show- you all did an amazing job. I worked in a kitchen for years and I knew almost immediately by the banter and energy that there were real professional chefs contributing to the making of the show. Thanks for giving us the secrets to delicious Italian beef, can't wait to try making this myself!
Matty I discovered The Bear on Friday and spent the weekend watching the whole series. Amazing show--best TV show this year by a wide margin. I've work in two very different kitchens , one was a Mediterranean restaurant thay function like a Chipotle, required lots of prep work , and the other was an Italian dinner kitchen, loved working for both and can say the bear captured what it feels like to work in most restaurant kitchen's, also inspired me to get back to making new dishes, i hadn't tried to cook anything in a while until i watched the show , thanks

Just moved from Chicago and I miss the Italian Beefs the most. Finding a good italian beef outside of Chicago is so difficult, but there are Portillos chains across America that do it very very well for those that want to try a good one. My fav in Chicago is Jay's Beef, absolutely incredible and such a delightful/unique Giardiniera. It's my favorite sandwich in the world. Italian beef/sausage combo with Giardiniera dipped is unparalleled when done right. This looked fantastic, so stoked to watch the Bear.
This is exactly what we need to be watching! They are awesome.

I’ve had beefs all over Chicago but there’s this one restaurant here that just has the best gravy or au jus however you wanna say it. I guess it is just what you prefer, but to me the gravy means everything.

Paused this half way through to say this is the perfect Yin and Yang duo, I hope they make many more videos together. Matty is perfectly leveled out to the best cadence and demeanor (not that there is anything wrong with the raw Matty).
I'm from chicago and I believe in cooking things different. I live in Oregon and I'm opening up my food cart and my Italian Beef is made different but still packs a bunch of flavor. So I approve.
