My low carb, keto friendly, Creole sausage and eggs. A one-pot recipe that has a zesty tomato cream sauce and just a hint of spice. A wonderful recipe for breakfast, brunch or dinner.

Ingredients:
• 8 ounces - breakfast sausage
• 2 Tbs - unsalted butter
• 2 - finely chopped green onion stalks
• 1 - finely chopped celery stalk
• 1/4 cup - finely chopped green pepper
• 1 tsp - minced garlic amzn.to/2MXT2MI
• 1/4 tsp - red pepper flakes amzn.to/2P5fDEs
• 2 cups - V8 original tomato juice amzn.to/2M52yNf
• 2 Tbs - heavy cream
• 1/2 tsp - garlic powder
• 1 tsp - dried basil amzn.to/2PaFlYb
• 1 tsp - prepared horseradish amzn.to/2G6fVuG
• 1/2 tsp - salt
• 1/4 tsp - ground black pepper
• 1/2 tsp - dried oregano
• 1 - egg yolk
• 4 to 8 - large eggs (1 or 2 per serving)
Optional garnish - dried parsley
2 eggs serving (recipe divided by 4):

Ate something very similar in appearance to this in New Orleans. The dish I had was Andoullie and Eggs, and I got it at Pierre Masperos. It was mind blowingly flavorful.

Update. Used sauce left overs while greasing up my pulled pork I made last weekends. The boys loved the sandwiches

This reminds me of a British breakfast using canned tomatoes. ;)
Instead if v8 i would use Kettle fire bone broth and a litlle tomato paste with heavy cream

Hi Scott. I don't think it'll work as well. The flavor profile is quite a bit different... kinda like using tomato sauce in a bloody mary.

Yikes! Isn't adding salt to V8 kind of like adding salt to salt?! I can't drink that stuff on its own without a water retention reaction but I know I'm not the norm. Looks like a great recipe though!
I used tomato sauce instead with no added salt. I don’t care for V8 juice at all. This meal was delicious tasted like a high class restaurant dish. Everything else I used per the recipe
