I suppose the cake surface must be very smooth before wrapping in chocolate to leave a even and smooth choclate finish. Wouldn't it be more convenient to use an acetate sheet as it has more stability?

If your using melts or discs not tempering but if ur using chocolate chips u need to temper

Parchment paper but I think you can also use acetate cake collars too. Hope that helps
