I made very similar last week. The main things I do different are: 1) use a 13x9 ceramic-coated iron baking dish, 2) pour only half into the dish, bake a little until it rises a bit, 3) take it out and add 2 layers of sharp cheddar cheese slices, 4) pour the remaining batter over the cheddar slices... and then pop it back in the oven until done. When I slice my cornbread I have this nice, quarter-inch layer of sharp cheddar running through the middle. Oh, and I use fresh-diced jalapenos.
