What are the command lines? Unable to follow that.
Does UTM follow the same procedures to install Ubuntu? or Should I just vmware Fusion to get a better experience?
I find utm to have low performance on my M2 silicon, but you can give it a try, VMware should be best, and it's free for personal use

So after setting up the desktop UI, will it always boot up at the Ubuntu desktop UI login? If so, can you revert back to starting at the Ubuntu server?
Yes you can , just change the setting in your inittab or equivalent
