I’ve made this for our dinner this evening and we’ve just completely mullered it, it was that delicious. This was the perfect meal for today as it has been very, very hot (by English standards) and a delicious salad like this is all we wanted to eat. Thank you for posting another wonderful recipe. I've made this twice. It's a great, simple recipe and tasty summer salad! The 1st time I made it I had to use plain off-the-shelf (unspiced) chili oil, and the second time I used your special spiced chili oil recipe. The layers of flavor in your chili oil were essential to the overall flavor of this dish. The first version had a completely different flavor and tbh was a liitle bland with the plain chili oil, so I added fresh lime juice of almost one whole lime and a tablespoon of cane sugar to the dressing and then about 1/4 cup (or small handful) of thinly sliced purple onion - it gave the salad that flavor that seemed to missing without your elevated spiced chili oil - - which is easy to make and great for so many things! Your spiced chili oil is a game changer. Thanks for the recipes Wil!! 😊
I tried making this salad, and didn’t realize I didn’t have fresh basil or cilantro. (So I used dried/herb versions) It’s pretty good. I’m sure It would be better with the fresh. I will try this again. Thank you!

I've been suffering from chronic acid reflux for about a decade on and off and it's got particularly bad in the last 2 years. I tried paleo, it did not help, tried cutting out various things, to little effect. But I swear to god, since I've been following your recipes it has improved immeasurably! Such a relief. Love your cooking, every recipe I've made has been great. I bought your ebook (cooking with confidence) and really want to get a physical copy as well but I live in a country in the middle east and their postal system is chaotic, to put it politely :,) One day I'll get it. Edit: I typically don't go for cold salad recipes, but this one looks so banging I'm definitely gonna make it!

Oh my. I just made this and it’s delicious! So nice on such a hot, hot day! I didn’t have red pepper flakes or peppercorns and made my own concoction with red pepper flakes, chipotle powder and cayenne. It was still delicious! I plan on getting the correct hot ingredients soon and will make the oil again. Thank you again! This is a keeper. I will share in my blog for you and link back.

Wil, almost a year has gone by now since I subscribed and you do deliver in motivating people to cook with confidence. Your books are great. But what's even better is you have helped me develop a mind to not rely on a recipe and truly better understand components to making good dishes in the kitchen. Also. To be noted. You don't use fancy equipment people may not have or afford. Those things have their place. But it's great to not sigh in frustration not being able to participate in a recipe without such.

I've been into this chilli oil for some time now, though I buy mine. I want to take a crack at yours. The one I bought is actually smokey as well ( and it smells almost like a meat sauce we make in my country), but the spicy level is way too much for me. Can't wait to try yours!

Our childhood cuisines were mixture of dutch. Indonesian and hokkien. Now I eat my sushi with homemade pesto from my basil tree. .. and sambal & avocados. Crazy huh.

Your recipe is so original, so youuu....initially i thought it looks thai when u used the cilantro, then maybe chinese cuz of the chilli oil. But its a mix of both when u just had to throw in apples & such!!! Brilliant & original!!!
