A question .. i thought you were suposed to have a small chiminey with a damper in the back. Also Did you put corn meal on the pan and in the wood stoveon the bricks. Helps the crust slide. Also ya need a realy wet rag on a handel to mop the left over corn meal out of the oven,it burns and makes the next pizza taste bad. Fresh corn meal each time . Your oven looks really awsome man it so cool.. i want to make one now.

Having eaten Pizza at a traditional wood oven place in Milan I have to say, you nailed it! That looks very much like the Pizza, shape, dough and toppings, we had there. Ruined me for what passes as Pizza in North America, but this looks like it has real possibilities!

"get er done" my husband's favourite saying. Way to go, the oven looks great! We made one of these when the boys were young, they were so small they could fit inside, it was so much fun! Ours was straw and clay, and we stomped it together, we felt like we were living in Egypt or something, it was such a great experience. I want your pizza dough recipe please, the crust looked fantastic!

I did that once and made calzone with no peel. When you get a peel use corn meal it slides right off. Smells yummy from the lower 48 😜

Great job guys, on the peal you should put yellow corn meal it makes the pizza roll off easier and you get a nice crunch
That was an awesome episode, I love the pizza oven build. We make pizza almost every Friday night. The key to getting the pizza off the peel is to make sure you use a good dusting of flour on the bottom of the crust and don’t let it sit too long on the peel, if it sits on the peel for more than a few minutes the moisture from the dough will work its way down and start sticking to the peel. Always give the peel a couple of shakes every couple of minutes to move the dough a little bit to help prevent the sticking. You could use cornmeal but I don’t like the taste it adds, so I just use the flour. Also, for the best pizza dough use Caputo 00 flour, the blue not the red bag, the blue is for high temp ovens. I weigh my ingredients to get a perfect dough every time. My dough recipe is 800 grams of flour, 500 grams warm water, then measure out the yeast 1.5 teaspoons, 2 teaspoons of course salt. I mix it in a stand mixer with a dough hook for a minute, let it sit for 5 minutes then mix again for 1 minute. Then knead it by hand for a minute or two and place in container to rise for at least 8 hrs. Then separate into four dough balls off equal size and let stand for at least 10 minutes before making a pizza. Each dough ball will yield a 12”-14” pizza. I love how making pizza brings people together.

Your pizza oven is fabulous
Terrific design for version 1.0, for version 1.1 consider adding a chimney just inside and a little above the closed door. Allowing smoke to escape while starting and stoking fire without smoke getting in the cooks eyes. If you place your pizza crust on a mixture of flour and cornmeal it should slide easier on and off peel.

I sized our build to allow easier placement of our Dutch oven and a pizza platform. A chimney damper can be fashioned to allow more heat retention.

Yup. Corn meal will act like little ball bearings, getting the crust on and off of the peel.

Nice Earthen oven, some people use straw or string to help hold them together when mixing the slurry, the pizza looked awesome and i bet it wuz delish

Yes!!! On my list! I’m renovating my kitchen and had to tear out the built in stove piece by piece. I saved the oven (in pieces) to make the cave for the pizza oven. And I have awesome clay at my farm to make it!

That looks great, I would just add a chimney to help with drawing combustion air and steam management when the door is closed. I have got plenty of wood, not as much as ya'll have, but making a wood fired oven for my French Batard is on my bucket list. Needed a bit of motivation and you guys just provided it. it is good to see uncle Dave and Shoshanna as well.

@@MikeSheasheaDtree Yes it does do that. You are correct in the case of French bread but not pizza in my opinion. 90% of pizza surface is composed of ingredients anyway that are usually have a lot of moisture. In this case here you would need dry heat not moist heat. I always spray moisture when I am baking bread but not when I am making pizza.

If those are the light weight ceramic fire bricks, they can be easily cut with a wood saw and filed down to fit any shape with friction against anything harder.
That looked SO good I almost took a bite out of my phone
I have a question about this, where does the smoke go when the door is closed? Most ovens I've seen have a chimney of some kind to direct the smoke outwards and have a draft.
Edit: They take the fire out for the most part and have a few embers. Nice!
Home made pizzas cooked this way are fabulous. only thing I'd say; don't overload them - keep pizza thinnish and toppings simple - they are DELICIOUS.
I see some pretty awesome loafs of bread in your future. Keep that thing well protected from the weather in a permanent spot.

Each season put another layer of clay over it. Each season It will fix cracks and make it more better, thicker, hotter, keep warmth longer.
If you build another one, season it with a few small fires first with plenty green leaves etc on it. Try not to be tempted to cook in it straight away with a hot fire.

Hahah inhad the same problem. I pre baked the pizza base for a bit.
Corn meal is the secret to non-stick bottom. Pre-cook all raw meat. Keep toppings thin since it's cooking so fast.

Hello, to be your first time with a clay oven, I congratulate you, the problem with the cracks is due to the fact that they did not put a mesh reinforcement, with a chicken coop mesh was enough.

tip - put polenta (if you have it way out there) in the oven and on the wooden board - helps to just slide the pizza off the board and retrieve from the oven - almost like tiny bearings

Wood fired pizza is my mistress. When you have to make transfers like that, use a lot more corn meal. You have enough when you can give it a little shuck and jive and it literally slides off the peel and into the oven.

Dry the mix down with sawdust you got plenty of that plus as it burns off on the inner layers it'll create extra insulation little straw bits woulda worked too,:-)
