Great interview ! I am English & my family always cooked from scratch - the old, traditional English fare. Yes, it included meat but also many, many vegetables. I have been WFPB for 6 years now & often adapt old family recipes to this way of eating. Actually looking at some of my great grandmother’s recipes, they are almost medieval - including a version of pottage (basically vegetable stew 😄). I think in the west (USA, Europe, UK) we have turned to processed foods so very heavily that we have brought obesity & diabetes upon ourselves. London & it’s unhealthy way of life is definitely NOT the rest of the country. I live in a relatively remote rural area where I just cannot get fancy ingredients & I am glad 🤣
