Does the coconut mousse need to be set in fridge or freezer ? I saw a video of the original michelin star restaurant and they said to be freezed. Anw I love your detailed videos, please keep it up ❤🎉
Thanks! And you should freeze it before removing from the molds and brushing with melted chocolate for the coconut texture. After that you can keep them in an airtight container in the fridge before service
I would not recommend it if you plan to keep it for a more than 1-2h in the fridge, if you do make sure to take it out of the fridge 15min prior to serving to get rid of the condensation on the plate

Eater has a video where Thomas Raquel shows how this dish is made in a 3 Michelin star restaurant. So I think both got it from that Thomas Raquel video.
