2023 Christmas Baking | 6 Holiday Baking Recipes with Gluten Free Options

- Join me in the kitchen for a full day or Christmas baking. Included in this video are some of my favorite holiday cookie recipes that are either naturally gluten free or able to be made with a gluten free flour blend or all purpose flour.
Sugar Cookies:
4 2/3 cups bobs red mill GF 1:1 flour OR all purpose flour
2 cups sugar
2 cups softened butter
2 large eggs + 2 egg yolks1/2 teaspoon baking powder
Cream together butter and sugar. Mix in eggs. Add flour and baking powder. Divide dough into two and roll out on parchment paper. Chill in the fridge at least 30 mins. Cut and bake at 375 for 7-9 minutes.

Iced Oatmeal Gingerbread Cookies:
1 c butter
3/4 c sugar
1 c brown sugar
2 tbsp molasses
2 eggs
2 egg yolks
2 1/2 c oat flour (oats blended to a flour)
2 1/2 c oats
1 t baking soda
2 tsp ground ginger1 1/2 tsp ground cinnamon1/2 teaspoon ground nutmeg1/4 teaspoon ground cloves
1/2 t salt
Cream together butter and sugar. Add molasses, eggs, and egg yolks. Mix together. Add oat flour, oats, soda, ginger, cinnamon, nutmeg, cloves & salt. Chill dough 30 minutes. Portion into 1 1/2 tbsp dough balls and bake at 350 11 minutes. Allow to set a few minutes on the baking sheet.
Once cooled, mix together the below icing ingredients. Dip tops of cookies into icing or drizzle over top and allow to set.

1/2 teaspoon vanilla extract
1 1/2- 2 tablespoons milk
Chocolate Peppermint Crinkle Cookies:

Shortbread:
1 3/4 cups bobs red mill GF 1:1 flour or all purpose flour
1 cup powdered sugar
1/2 teaspoon salt
1 teaspoon vanilla
14 tablespoons cold butter
Stir together flour, powdered sugar, and salt. Add vanilla and butter. Best for 3-5 minutes. It will look powdery and eventually it will come together. Roll out dough to 1/3 inch thick. Cut into rectangles or squares and chill 30 mins. Bake at 350 for 15 minutes until just set.

Thank you Carrie! That meant a lot. Brown sugar is just sugar and molasses. You can adjust the molasses depending on how light or dark you want your brown sugar. 1 cup sugar and 1-2 tbsp molasses. If you use whole eggs in place of just the egg yolk you’ll end up with a more cakey cookie :) Merry Christmas!

I was just thinking the other day that I need to make some iced oatmeal cookies! I've never made them but I randomly was remembering having iced oatmeal cookies at church as a kid and it made me all nostalgic. 🥰 Yours look exactly like I remember them, too.

Wow those sugar cookies looks amazing. Is that the normal amount of frosting on a sugar cookie?? I’m from Denmark 🇩🇰 so have never tried them. We have lots of Christmas cookies to. But not someone like that. Have a merry Christmas. We celebrate Christmas eve the 24. With a big dinner, ( pork with crackling, duck, white and caramel portates, red pickled cabbage, and the best brown sauce of the year 😍 and then risalamande with cherry. And the on that find the hole almond, get the almond present ) singing and dancing around the Christmas tree, and then opening the presents . The 25 most people rest or have a Christmas lunch with lots of open sandwiches on rye bread , snaps and beer. But most people have it the 26 so they rest the 25….
Thank you! These may be frosted a little heavier with the piping bag/tips I used. They are delicious but rich, so we only have them this time of year. My husband lived in Demark for a year, so all of those traditions sound familiar to me! We have made risalamande many years for Christmas :) Merry Christmas!
