I've been smoking for a while now and like to remove the bark. Been using shagbark hickory but I'm gonna try white oak this year.

Some are against and the bark amd some old timers swear by it. The bark definitely has a more bitter smell. I've only had oak brisket once, when I bought a 20 lb brisket for a party. The next year I told the guy (a customer) to do it with maple. It was way better however, while selling to my smokehouse customer lately, I've been mixing 30% oak in with the maple to tone it down. While I like rich foods, getting a brisket sandwich everytime I delivered helped me gauge the flavour and what ratio of oak to put in. This derived out of not being able to keep up with the smokehouse's growing demand, which was hard to keep up with the original 100% maple bags. It was actually the customer who suggested the mix

Yes, considering that the guys who messed it up earlier charged me 1200! I ended up paying 1600 cash this time. I was trying to give the other guy business and I got screwed. I still have to put your sticker on. The splitter, it's buried in my shop among things that I have to sell

Morning Anthony, does it matter if you’re smoking wood has the bark still on, do your customers care if the bark on or off, can you get more money if the bark is off, 👍🚜🏰🔥🚀🏰

I've heard that some care, some dont and that the old timers swear by it. I do try to remove some if it's thick, this can be the case with oak
