Brilliant Steve. I've never thought of lining a tin in 3 goes before - I just try and get one big piece in with loads of folds (and make a mess of it!!) - live and learn! Madeira cake this weekend (you've gotta stop these vids mate LOL) 😂
It stops the drying out process that you have with home electric ovens in the Bakery oven when I have 1 or 2 cakes it's lost on them because it's to big of oven, funny thing I found out at home Baking, currently got sourdough bread proving in the electric oven testing out just to see if I can in this pizza oven laters

Hi sorry this is a Madeira cake recipe from 1947, if you want to add liquor then go for it 😀😀 it's not in a Traditional 1947 recipe, just to point out this recipe is used in UK Bakery colleges from 1947 to 1990 😀 laters

Hi mate best is a moderate oven 350 - 375 f or about 180c if you are making small tins and bake for hour and a quarter, the big 2lb tin needs to be lower hope this helps

The tin size is 23cm x 12cm x 9cm basically it's a 2lb bread tin, or you can use 2 x 1lbs tins 😀

My kid is allergic to almonds, can I just use more flour instead?
Yes or rice flour, funny thing is I don't use almonds in the bakery for cakes even the recipe has it in, I just add in flour 😀 laters Steve
