The idea that somehow the smoke from different types of tree that you burn makes one bit of difference in how the food tastes is complete crap. The main difference between different types of wood is the heat they burn at, how long they last, and how smokey they burn. The smoke may alter the flavor somewhat but no type of wood adds any particular distinctive flavor other than more smokey or less smokey.

I've been to the best of the best BBQ in the Carolinas, Memphis, KC, and Texas. Every BBQ pitmaster will tell you wood matters a lot. I have not met one that disagreed.

I don't think it is too much of a problem here since it is ground beef. (beef can be eaten rare in which case there's gonna be parts of it that are more or less raw anyways)
