I do think there is a lot of potential with all the Eeveelutions, considering you can play multiple in the same deck with the energy overlap, though the kanto Eeveelutions felt better to me. And you never know what cards we're gonna get after this, maybe something that really makes one of the Eeveelutions decks really good.
This is a gimmicky deck, but like you said, these Eeveelutions are for collectors. Espeon is playable, Umbreon is meme but can work as a final prize getter.
As one of the worlds biggest umbreon fans myself I tried to get it to work as best as possible but ive given up mostly, I did see a dumb interaction with the chanseys though in my testing where umbreons onyx goes ahead, and then you just keep pulling chanseys back to back and make it a 3 prize turn if you're really lucky but its not any form of viable even with an academy at night and arc phone list.

I think out of all 8, the only ones worth anything competitively would be Espeon and Sylveon for a control style and Jolteon for an offensive Raging Bolt At Home sort of deck. Other than that, I don't see any reason to justify running any of the remaining 6 Eeveelutions.
Espeon paired with hydreigon or even uxie.
Apply spread damage and then use the devolve attacks for knock and disruption

That espeon might be a counterplay to charizard if they can get it off
