- Pandan jelly iced tea is like the Thai, herbal version of bubble tea! The beautiful floral aroma of pandan leaves, brightened with a touch of lemongrass, and the fun texture of pandan jelly cubes are reasons why this drink has become popular in Thailand in the past few years. I had it for the first time during my last trip to Thailand and fell in love with it instantly!
You can find pandan leaves at Asian grocery stores either fresh or frozen, both work just fine. Before to give the leaves a quick rinse before using, especially at the root end because sometimes there's dirt in the crease.
Agar jelly is the classic option, but you gelatin instead, just make sure you make the jelly quite firm (definitely firmer than texture of Jell-O) so you can cut them easily, and make sure the tea is cold before adding jelly to the tea. You will need to experiment with amounts of gelatin as I have not personally tried it, but if you already have a recipe for regular jelly, just increasing the gelatin amount by 50% or even double.

Wow i used to do this yearly and i already did many variations sometimes with aiyu jelly sometimes with nata de coco, sometimes it has tapioca pearls or even strawberry flavor that tastes like kool aid and last but not the least with grass jelly

It's not that water comes out of the agar agar jelly, it's that the stuff is really good at pulling water right out of the air (hygroscopic). When you cut it, you give it way more surface-area so it absorbs more atmospheric moisture and gets soggy quicker.

Lucky you, able to find fresh pandan leaves. Yet another advantage to living up north. Since frozen produce is never quite the same as fresh, would you advise using more frozen pandan leaves if that is the only type available? If so, how many frozen leaves should one use to replace a single fresh leaf?

If you want to add coconut milk then only pandan leaves, lemongrass may taste weird with coconut milk.

Braun with glass blender jug. It's an older model, probably an MX2050 or similar, but still very good. The advantage is that it can be completely taken apart and the blending blades thoroughly cleaned so no debris collects in there. I had a similar one, but with plastic (polycarbonate) jug instead.
