- This Kuih Talam Agar-agar Jelly Pudding is inspired by “Kuih Talam”, a popular kuih in Malaysia. If you like pandan flavour or our local kuih, you’ll love the taste of this jelly. The flavours for this jelly pudding is similar to Kuih Talam.
Main ingredients for this agar-agar pudding are pandan and coconut milk. Pandan is a fragrant plant very often used in making desserts in Malaysia. It's easily grown in the garden or in a pot. Agar-agar is extracted from algae and acts like gelatin. It is commonly used to make jelly in Malaysia.

White layer 白层
3 grams agar-agar powder 燕菜粉 3克

40 grams sugar 糖 40克
200 ml water, room temperature 水，室温度 200毫升

1/4 teaspoon salt (adjust to taste) 盐 1/4茶匙 （自己调味）
1-2 pandan leaves 香兰叶 1-2片
Green layer 绿色层
7 grams agar-agar powder 燕菜粉 7克

145 grams sugar 糖 145克
1 egg (room temperature) 鸡蛋，室温度 1个

Pandan juice (20 grams pandan leaves + 100 ml water) 香兰叶汁 （20克香兰叶 + 100毫升水）

Nothing like having your own pandan plant. We have to contend with frozen pandan leaves here.

Can I use less sugar for the green layer? How much I can reduce and I still maintain a decent taste integrity? Thanks!
Hi you can reduce probably 20 grams. Best is to add less sugar, after cooking you can test it and gradually add. Just note that when it’s cold it will be less sweet. If you reduce for green layer, recommended to reduce the salt for the white layer.

Oh hello 👋 it’s a fragrant plant like vanilla bean pods. You can probably find it in extract or powder form. Can try to search pandan leaf extract or pandan leaf powder.

Hmm 🤔 I let my relative try most of them say just nice but if you generally don’t like too sweet can reduce maybe some sugar from the pandan layer and reduce the salt amount from the white layer. Definitely recommend trying the exact recipe for the first time then adjust next time .

is 1 gm of agar agar flake the same as 1 gm of agar agar powder?
Hi normally it is the same. After boiling Scoop up a little on a saucer then place in the fridge to test. If it sets then ok.

May I know why we cannot pour the pabdan mixture direct into the agar agar water and let them cook together ?
Hi 👋 when you pour in to cook together when it boils the pandan will float up then the agar will have one green layer and one transparent layer at the base. Hope this explains it

Why type of agar agar powder. (7gram)
any brand is fine. as long packet instruction shows ratio as 1 gram = 100 ml water/liquid if not you have to adjust the water amount
