试做了, 如果照食谱的水分,完全阵亡。 我用215gram牛奶, 结果面团都太湿, 根本不可能揉成团,后续加了两次粉, 一共35-40gram高粉才勉强可以成型。 whoever want to make, please reserve 50 g of milk, do not add all in. Slowly add it in.

I love you video however I believe in the translation we have different amounts of liquids. My dough was very sticky and I kneaded for about 45 minutes until it was somewhat ok to rest. Not sure all measurements are correct .

當麵團中加入奶油後,開始混合時麵團確實會很黏,繼續揉麵團,隨著油脂完全與麵團融合後,麵團就會光滑和柔順。不過我在剪輯影片時不會把麵團的整個變化過程放出來,那樣影片就會很長。動手揉麵團其實只是一個熟練的過程,做的多了,這個過程也就容易了。
可我怎麼覺得越揉越黏的感覺!能灑些麵粉嗎?還有就是妳影片中提到發酵時間1小時,我知道會因天氣溫度發酵時間不同,可我今天台灣台北約15~17度,我發了2個多小時麵糰沒什麼澎度真的好挫折,光發酵我就失敗好多次!

您好,这个面包我放凉后就放入冰箱冷冻保存了,没有室温保存看结果。
😀谈到家庭自制面包变硬的问题,
面包做好以后,主要决定变硬的因素有以下几个:
1⃣️面包食谱中,高含糖量、含油量。高含糖量、含油量能够保持面包柔软。
商业面包房含糖量常常20%左右。而我们自家做面包一般就是10%左右的含糖量。
2⃣️商业面包基本都添加面包改良剂之类化学品来帮助面包防腐、保湿、并增大体积。
3⃣️面包烤好后,无可避免的,有淀粉自然老化过程。
🔺🔺家庭面包需要保持面包柔软新鲜,可以通过冷冻面包(面包放凉后当天不吃的冷冻)来保存新鲜,并注意密封防止风干。
需要吃的时候您可以喷水复烤十分钟左右,或着盖盖子微波炉加热30秒到1分钟左右,也可以蒸一下,面包马上复原柔软了。

如果烤箱功率比較小、火力比較綿、且烤箱容量比較小可以200°C預熱。因為預熱完成後打開烤箱放入麵包的瞬間,烤箱小很容易溫度快速往下掉,所以提高預熱溫度,在放入麵包後及時調回180°C(如果烤箱大就不容易出現這樣問題。)

因為你沒有把它們揉製到薄膜的狀態;那個你可以用醒麵的方式冰一段時間再揉,還有揉的過程太久會失去水分也會筋性太老;如果妳是初學者最好用機器最快
