    When I was a kid, my family, grandparents, parents, and us kids all made cannoli together, 100 at a time. I have also made mini cannoli, added orange zest to the cream, and dipped the ends in chocolate shavings with orange zest.

    Brunetti's is a site of pilgrimage for me. I've been going there for nearly 20 years and it never disappoints. The absolute best of everything is in there. Top tier pasticceria.

    To have the full joy of cannoli, I have to be in Sicily, so I can smile to my aquintances at the hotel and the restaurant. Fortunately, for the 6. time, I´m going there this summer. Ahhhhh, so relaxing, enjoying La Dolce Vita in several ways!!

    I used to love to go to an Italian Bakery in North Beach in San Francisco and buy their cannoli …so good! I can’t wait to try this! I also love a good Biscotti with a Cappuccino. I may cut the sugar in half though. Thank Vincenzo and Antonio!

      @@vincenzosplateI can't narrow favorite desserts to one any more than I can narrow favorite works of Classical music. I do have the fondest memories from the years we lived in NYC and would go with a group of friends, for my birthday, to a delicious dinner in Chinatown, followed by a walk over to Little Italy for cappuccino and fresh cannolis. All that was missing was the Verdi.

    @11:44 or there abouts, the ricotta doesn't even look like it needs to go through the sieve. It literal looks like the consistency of thick cream. The only way you will get ricotta like that in the western world is if you make it yourself. These gus must have a awesome hookup with the cheese maker that's for sure

    Best Cannoli in Melbourne are from Arena Bros, O'Heas Deli in Coburg. I used to live nearby. They had all the awards on the wall to prove it, too. I'd go there to buy rolls and meats for Sunday lunch (take a number and be prepared to wait) and one of the brother would always say, after I told him my shopping list "And 24 cannoli". I don't really care for cannoli and he knew it. Cheeky bloke. I think all the Nonnas had a huge crush on him.

    Vincenzo you need to tell people the true Cannolo is made with sheep’s milk ricotta or even Goat milk ricotta. Not cows milk ricotta. 🙌🏼👍🏼🇮🇹🇺🇸❤️💪🏼

    Very surprising to see that the cannoli cream only has 10% sugar, i would have also thought that powdered sugar would be used rather than the granulated shown

    Did you know that the reason why marsala has such a different flavor compared to other wines is because they leave the barrel open, so the wine is essentially oxidized.
    You could say that it's wine made the wrong way, taste is good though so...

    Why you didn't roll out dough multpile times like recommend others bakers? Most recipes order to do that and reach more bubbles on surface.

    My cannoli shells like to pop off the tubes. I don't know what I'm doing wrong!

      Make sure your dough is well-chilled and seal the edges tightly with egg wash or water. Fry at the right temperature (350°F or 175°C) and avoid overcrowding the pan. This should help keep your cannoli shells from popping off the tubes.

      I love cannoli, but can’t find “real” cannoli. I really want to make these successfully. Can you explain the difference between plain flour and bread flour? I have only seen bread flour and cake flour. If I don’t find the wine what can I use as a replacement? Also I live in the States, what do you consider the BEST Ricotta? Thank you so much.
