There is a way to calibrate those pitco solid state controllers without replacing them. If you get a razor blade and pry the end cap off the knob there’s a 5/16th nut behind it. Hold onto the knob so it doesn’t turn while you loosen the nut then remove the knob and place it where the white line points to the actual temperature the oil is at then tighten the 5/16th nut back on and install the cap back. I read the manual one time when I replaced the controller and it had the calibration guide. You could also probably find the manual online as well. Thanks for the videos. burners not heating right and frozen item cooking usage can skew the top oil/bottom sensor location by a pretty wide margin. and then if it's there's burners not heating one side, possibly further skewed bottom to top surface. clean first, but have sensors/controls stocked or make them stock their own, if they "love" those fryers. lol, when they cry about multiple thousands in stock, ask then how much they lose in three+ days down time...
This place is on a whole bldg regulator so not likely. I’ve seen the safety disconnects at the hose fail and only open partially. We’ll pull the burners and check all the gas related suspects.
