    Thanks for watching this video I made quite some time ago. I have gotten better at shooting videos and now have multiple cameras so I can now do close ups. No, I did not put olives on it. I do not care for black olives so I chose not to put them on. The original did have 3 olives on it. Also, I have remade this video with the correct Hybrid Corn/Flour Tortillas they used.       They will be back at Taco Bell by the end of the year. Minus the black olives and onions of course. Sadly, they got rid of those a long time ago.

      I do worked there in high school 86-88..we cooked real beef in a pan with spice mix and drained and put into stainless pans that went into the steamer doors…food was way better back then since like 94/95;is when that precooked bagged meat came in.. there was taco lights, taco bell grandes, enchiritos, taco salads, toastadas, and pintos and cheese in a paper cup with lid, the combo burrito, the chili cheese burrito…they got rid of all that ..

    I'm 67 yrs young I loved taco bell it was my favorite of any fast food,, they have changed so much no more tostadas pintos and cheese, no enchiritos, bell beefers. I loved them all the flavor of the beans and red sauce, and green it was so good. I don't go there any more nothing like the good Ole days.

      At the time I don't think any of us thought "these are the good ole days" but here we are. Looking back always makes everything taste better but it really was MUCH better then. Thanks for your comment.

    I worked at a Taco Bell that was merged with KFC and one day the GM said they were getting rid of the enchirito. I got upset and argued about it and told the customers and they got upset. I gave them Corp number to call and protest it. They did too. About a week later my gm told me when I came in to work “well, you got what you wanted. They said they will keep it on the menu”. But about about a year later they started raising the price from the 1.25 it was. Last time I bought it I paid 2.50 for just one. Now they are gone and I’m not surprised.

      You always knew when Taco Bell was getting ready to nix an item when the price went way up. That way they could justify removing it, as the sales would drop off. Pretty stupid really. What ever happened to simply "give the customer what they want"?

      I love Taco bell but why doesn't Taco bells have playgrounds?? It's hard to play on a playground when You have messed Your pants and it's running down Your legs. 🤣🤣

    Just made this at home and it was so much better than Taco Bell's version. My son is a manager at TB and you are correct as he verified that corporate did away with the little plastic bowl, so they had no way to serve them any longer. Enchirito in a cup anyone? I loved the Bellbeefer too. Who else remembers the 3 different chalupas they used to have? Loved that Baja one.

      They still have all the ingredients for the Enchirito, it's very simple really, but that bowl is the key. Not sure why Taco Bell likes ticking off their customers so much but I hope they have a change of direction soon. The Baja Chalupa was my favorite too. When they got rid of it, I came up with my own Baja Sauce. Now if I could find a good source or recipe for the shell for the Chalupa I'd be set! If I do it will be a video here!

    Enchirito had three slices of black olives. I’m 61 and remember Taco Bell when they had natural gas fire pits in the front of their restaurant in Sacramento, California area buildings.

    I must go waaaay back. My favorite item from Taco Bell EVER was the Enchirado. I remember going for them when my son was about a year old. So that was around 1975. Unbelievable! Not only did they have the 3 slices of ripe olives on top, they had rounds of sliced green onion tops back then. I remember the chopped onions inside that were so good. Making this tomorrow for sure.

      Check all of your local stores. I have one out of four near me that still makes the chili cheese burrito. Back in the day it was called the Chilito. I order it with ground beef and take it home to make a quasi-enchirito by pouring red sauce over it and adding a ton of cheese. It's pretty close to the enchirito.

    It is back in our area and we’ve eaten it so many times so I decided to make it. I just made it following your order of operation and my husband loves it. He said the original had olives so I added some. Delicious and I like how I can make it really one meal as I overstuff it. Thank you!

    They are Bringing it back by the end of the year! Only for two weeks but that was what they said about the Pizza and look what happened.
    Yes, I know the original 70's version had three olives. No, I didn't put them on this one. That was intentional. This is a copy of the later version I grew up on. If you like olives, please feel free to include them with yours.

      loved your video! Taco Bell was my 1st job 1989 to 1997. later went back and worked 2 different stores in 2000.
      The original enchirito was made with the same shells they used for the Mexican pizza before it was deep fried which I think gave it a much better taste. Anyways TB quality of food is nothing like it was back then when we cooked that meat and pressure cooked them beans. what do u think?

    yes, I wish they go back to the way it was. The beans were pressure cooked in 3 giant pressure cookers with just water, salt, & a small brick of lard by opening manager. It was their 1st duty of the day then mashed in metal square pans ; the cheese & lettuce was shredded & the tomatoes & onions sliced in a machine with a push handle; all shells were fried by an actual fryer person, that was their job exclusively; the red & green sauces weren’t made from scratch but they were mixed as needed. I miss the freshness & the goodness. Everything tasted better. The only gripe I had of old TB was the steam cabinet for tortillas. The tortillas weren’t as tasty (as in raw) as on a hot plate but they did it for speed. I miss going into the Reefer(walk-in fridge) & snacking on the chicken used on the Taco Salad(you can eat the bowl). It was season just right. Cooke thanks for memories!! They were lowly, low paid jobs but the attitude was different back then: you did the job as well as you could & you were polite knowing that you were eventually working to something better. Today you go & the employees act as if they are doing you a favor & don’t care if they show their true feelings. I’m not expecting fake nice just politeness.

      I don't remember the opening manager doing that. Maybe it was a 1st step prep thing. What I remember was how much of a $%#! job it was to cook those damn beans! Talk about getting hot and sweaty and all worked up...and with no relief, at the end of the job! Cooking the meat wasn't much better, but at least it didn't bubble and pop hot substance on your arms, neck and face! Okay, I gotta stop...this is starting to sound a bit raunchy!😳🤣

    Love the schtick! Also a Taco Bell alumnus (1986/87). The original Enchirito DID have a yellow tortilla, more floury than corny; but it was yellow at the start. They went to a white one later. Your cheese-melting cook time was eaten up by your vessel. Love making these - AND bellbeefers - anytime I want at home. Thanks for the walk down memory lane!

    Funny thing about Micro Wave Math: 1 minute CONTINUOUS is way hotter than, 45 seconds plus 15 seconds, Microwaves heat H2O (water) molecules and it takes a certain time where the Water begins to boil, if you haven't reached that Temperature by the first "Nuking" you'll need even more time than you thought for the second Nuking, because you'll need to reheat the Water molecules. Refried Beans oddly don't have much water in them so they add to the Cooking Time. I've just come to the fact that it's a guess when Nuking something for the first time and I'll start at 3 minutes and WATCH because that Enchilada Sauce will begin to boil and spray the inside of your Microwave probably about 2:15.
    I LOVED the Enchirito back in the late 70's, back then they also had sliced Black Olives on top.

      Thanks for the great info on magnetrons and microwaves. That will help a lot of people understand them better and that is a great thing. They will heat every molecule eventually but the water reacts first so things with higher water content do not take as long. If I would have just hit it for 1 minute to start with it would have been fine, but in the end it was at least entertaining so I kept it in there. TB of course used to steam the Enchiritos so they didn't have those problems. And finally, yes, they had olives back then. I don't care much for olives so I didn't mind when they go rid of them in the 80's. I should have at least acknowledged them I guess. My bad. Thanks for your comment. Remember, the Enchirito will be back for 2 weeks by the end of the year. If we all go out and buy one (or six) maybe they will be permanent.

      @@howtocooke My Dad's Uncle worked on the "affordable" Home Microwave at Tappen, so yes I did have "inside info" on the workings. When the Enchritos moved to the 80's and they dropped the Black Olives, lots of people said "hey where's the Olives?" seriously though 3-5 thin slices never affected the taste it was just a "presentation thing" when you took the cover off.

    I used to love the enchiritos, those were my favorite. Even though the tortilla looked like it wasn't cooked all the way. Mmmm the sauce, then on top of it, their "Fire hot sauce packets".

    I remember when the enchirito was made with two (2) corn tortillas and topped with black olives. I loved it and ate it maybe two or three times a week! I was a little annoyed when they switched to the flour tortilla, but when it was discontinued, that was the end. I haven't eaten at Taco Bell since.

      Okay, so a long time ago, in a land far away (California), I was in the Navy and stationed in San Diego.
      In that town was a fast food restaurant called - Taco Bell.
      The Tacos were hard shell corn tortillas with beef , cheese and lettuce, for 9 cents.
      There was also an Enchirito, for 23 cents.
      This Enchirio was a combo of beef and onions wrapped in a corn tortilla smothered in red sauce, cheese and black olives.
      I never saw anything like this in the midwest !

      I forgot to mention...that I was not in the Navy. This was from research I found on the web. I grew up in Cali and maybe that is why I remember them that way.

      That was the way they originally made it, yes. They ditched the olives sometime in the 80's and went with the smaller tortillas as well. This was more the "later period" for the enchirito but you are correct. Black olives would have been more authentic for this item.

    I remember it came in a little aluminum tray. One of my classmates in school worked at the Taco Bell in the early 70's. They had these huge kettles with lids that clamped down with knobs that they pressure cooked the beans in. After they were cooked they used an electric drill and a paint stir mixing blade. Almost the same as you would use to mix paint or drywall in a 5 gallon bucket. Today the beans come dried in a plastic bag and they look like brown corn flakes. All they do now is just add hot water to them and stir. I always ordered mine with lots of green sauce instead of the red enchilada sauce. How many of you remember that they used to have a natural gas fire pit in front of each store surrounded by the outside dining tables?

      I was the tallest guy at my TB and when I was on the opening shift I was the bean stirrer. The manager was a little guy and the drill was about at his face when he tried to do it. It was pretty funny. Oh, the good ole days!

      In 1962 when my mother took us down to Mexico to live I remember when dehydrated refried beans came out. The lady who cooked for us decided to try them out and we thought they tasted good. And a lot more convenient.

    Taco Bell near me just brought back the enchirito for a limited time, since going and getting one, I have been craving them, and today stubbled upon your video, I will now start making my own enchiritos thanks to your video, looks great, Thanks for sharing.

    After cooking the seasoned meat, put it in a small food processor and pulse about 5 times...it comes out super fine, like Taco Bell meat.

    I worked at TB too probably about the time you did. The enchirito had a special tortilla that was half corn half flour-not just flour, otherwise it would taste like pizza. I know, I I’ve done it as an experiment. Also, back in the day everything was done in-house so they used shredded cheese that they shredded not store bought.

      I remember shredding the cheese. That was my first job after I got off dishes. Then ground beef, then beans before working the line. Boy, have things changed there! My store did not have the fancy tortillas. We just used flour. I wonder if that was regional or they were just phasing it out and stopped caring?

      This is false. The enchiritos were ALWAYS made with just flour tortillas. Now it is true that they were made with large tortillas back in the early days (when they had olives), but then shrunk in size and were made using the soft taco tortillas (flour) during the 80’s until their discontinuation. As someone who claims to have worked there, you should know this unless you were misinformed by a fellow staff member about the ingredients.

      @@GilbertGTV nope. The small flour tortillas did not exist at TB when I worked there-only the reg sized ones used for the burritos & fried up for the Taco Salads. Try it. Make one of those copycat enchiritos with a flour tortillas. The taste will remind you of pizza. I tried when I worked there.

    I also worked at Taco Bell as a teen (I’m 66), and my FAVORITE is the Enchirito!!! I only heard they were bringing it back on Nov 29 only til Nov 30! So I didn’t get a chance to get one! 😪 I love olives and hate that they took those away altogether! I love the dish you put it in, do you know what it’s called? I’m for sure gonna make this!! I never knew what the sauce was-the best part-the sauce/cheese on top! Love this!

      The dish is an au gratin baking dish. It's made for individual casserole servings and things like that. It wors great for stuff like that. They come in a few different sizes. This is the larger version. 10" or 12" I believe. I love them.
      You did not miss out on the two day only return of the Enchirito. It was awful! They put the onions on the outside and it was $5! No olives anywhere as well. I don't think they care anymore...

I made the Enchirito tonight, I put too much enchilada sauce but it just didn’t taste the same as TB but was pretty good. I appreciate your doing this video!     For my meat I use McCormacks "Burrito" mix as opposed to taco mix. Burrito mix is a little more hard to find. Wal-Mart sometimes carries it. My local Texas grocery store used to carry it, not anymore.

    The only thing missing from the original Taco Bell Enchirito is the sliced olives and green onion that they use to put on top.

      Very true. I'm personally not a huge fan of olives and neither is taco bell apparently. I'm sure it was for cost cutting when they stopped using them 30 years ago but mine was the more modern version. They original was also about twice the size.

    As I’m reading comments from other TB employee alumni I remember stuff. I only worked cash register then steam cabinet as the “thrower” I think it was called… so I don’t know other details (hey I’m 66, with CRS) I worked a couple TBs. The last one was close to EMU (college) and I worked the night shift-there was a line out the door on weekends after the bars closed at like 2am, can’t remember if we were open all night? It was crazy, you had to work fast! This was 1974-1975! I do remember big huge containers the beans were in, and I remember the lettuce and cheese were shredded with machines but can’t remember much else! I also remember going home smelling like a greaseball. Wearing the brown and yellow uniform.

    Try a microwave cover to help it melt faster, also where are the slicked black olives? Those were on top also :). Your recipe looks great. I will make this tomorrow.

      Oh yes, the black olives. That was the original enchirito, back in the foil tin days. That predates my first enchirito so it I always forget about the olives. They dropped the olives in the 80's when they changed the packaging. BTW, did you hear they are talking about bringing back the Enchirito? No olives though...

    You forgot olives. I would throw it in the oven instead of microwave. Also would add the onions to the beef in skillet about 1/2 way in.

    I tried to get an enchirtio when it made its comeback for the 30 days just a few months ago, went to the drive thru, waited in line only to pull up and for them to say you can only order it thru the app, can't order it at the drive thru. Pissed me off so bad I just left and haven't had taco bell since. Lol Honestly don't miss it tho. This recipe looks good, i'll try it next time I make some tacos 👍

      I have no idea why TB doesn't let you order some food items at the drivethru. I think they are trying to make us use the app for whatever reason. That is dumb! Make food, sell food, repeat. Sounds like a solid business model to me! Glad you like the video. I'll keep making them if you all keep watching them, repeat.

      @@howtocooke they want people to use the app so they can gather information on where you eat, what you eat, how often you eat it etc. Same thing with things like kroger cards or memberships, they track everything you do and tailor things to you to get you to buy more. Crazy world we live in now-a-days. ✌

    I worked Taco Bell as a police detail. The manager would let be keep black olives in the cooler. She would make me 2-3 when I worked my 6-7 hour shift. She was the only one in the store that knew how to make one and she trained a couple of the employees to, so someone would be working when I worked.

    For me it is just not the same with standard enchilada sauce. Taco Bell's Red Sauce isn't regular enchilada sauce (they put it the burritos too) and for the Enchirito it's the main thing. Can you figure out that recipe? I haven't found one and watched several videos saying theirs is right but they aren't.

      90% of canned red enchilada sauces are not correct for the Taco Bell Red Sauce. The Hatch brand is the closest I have found to the taco bell red sauce but it is still a bit too much chili forward from their sauce. I did a video on my other channel about a tomato based red enchilada sauce that my wife swears is the exact Enchirito sauce. It's really good and super easy to make. It was when she came home crying that they didn't have it anymore I really became aware it was gone this time. That was when she told me to figure out how to make it for her and I had 1 hour.     Big argument here: the original Enchurito was a corn tort, not flour. My guess of why they did away with it - nothing else on their menu used corn torts.

      That is not 100% true. It was a hybrid 20% corn/ 80% flour tortilla that was used only for the enchirito, and still is. They do use corn tortillas for plenty of things, they are just all fried. Also, since no one makes a commercially available hybrid tortilla it's pretty impossible to make it exactly as tb does so I think it's more of a small argument.

      I have heard from several people who worked there at the time who swear it was still a hybrid yellow and white tortilla back then too. It was a lot more on the corn side back then and I'm sure tasted much different than they do today. Sadly, those tortillas are even harder to find these days.

      Do you mean the taco sauce that comes in the packets? That can easily be purchased at just about any grocery store or on the internet. You can even buy it on Amazon. The ingredients needed to make it would cost a ton of money (strange, sciencey stuff) and is really not something that is easily reproduced at home (too much science). For $2 you can just buy a bottle of it. If you mean the Red and green sauces they use to assemble their items, that is just mild enchilada sauce. Hatch brand is about the best and closest I have found. That can easily be made at home, sort of.

      Remember, back then (60's/70's) mexican food was still pretty foreign to many americans. NOT having a burger on the menu was very risky. TB was always about what is the most they could do with the same 5 ingredients. Add a hambuger bun and you have a bell beefer.     The reason TB got rid of the enchirito, the first time, didn't have anything to do with the container they put it in. It was a very lame and greedy decision to remove it from the menu because it was the only menu item they had that used a SOFT CORN TORTILLA. They made the decision purely in order to cut costs. The reboot is a sad attempt to bring back a phenomenon and it, too, is very lame. Make one, yourself, at home but use a soft CORN tortilla and you'll instantly taste and love the difference!😋 BTW: I worked there in 1983 so that's how I know and remember them.

      The hybrid tortillas (part corn and flour) are definitely an oddball item but now they use them in the Mexican Pizza too so that may be why they can bring them back now and again. Still, the modern version doesn't even come close to the original. BTW, where do you get soft corn tortillas? I've been looking everywhere for them.

      @@howtocooke What we found worked...sort of. They were REALLY good, the way we made them, but still not like the original enchiritos. They turned out to be more like tamale wraps. I think my wife found them at Walmart or Price Chopper. You say they use them for the Mexican Pizzas but, those are hard not soft? More like a tostada flat tortilla. I don't remember the tortillas being a corn/flour combination but, then again, I was 17, at the time, in 1983, so...lol

The pizza tortillas are fried to make them crispy and they are more flour than corn these day but they are hybrids, like the enchirito was. That is why they were a little lighter in color back then. I can't find hybrid tortillas for sale anywhere though.

      @@howtocooke I live in the KC Metro area on the Kansas side. Price Chopper grocery stores are all over the place, around here. As I said, though, the tortillas we found are more like what you would get with tamales. I guess, unless TB finally brings back the original, we're stuck with these less-than-stellar new mehs.🙄 Maybe, with any luck, the company, that made the original tortillas for TB, will make them again and package them for retail sale. Yeah...right! lol
