This video both warms my heart and breaks it all at the same time. I had no idea they discontinued it! I was a manager at a Taco Bell in Denver Colorado for a few years and the Mexican Pizza was my favorite thing to eat on break. I would make it for myself and if you put a thin layer of nacho cheese on top with the sauce, cheese and tomato and then take a few packs of fire sauce and drip over the top.... so good. Assembling a perfect ratio Mexican Pizza is a skill that few have achieved, but those who have experienced it know it is one of the best items that Taco Bell ever had. RIP Mexican Pizza. Taco Bell gives 0 f's. They have always introduced great menu items and then snatch them away. But to kill off such an old staple is just tragic and unforgivable.

I will definitely give it a try with slightly fresher ingredients than they would use at The Bell. Side note - speaking of nostalgia, how many of you remember the $0.39, $0.59, $0.79 cent menu items? That's right, Taco Bell tacos used to be had for a mere 39 cents each. Terrible for their bottom line but great for your late night cravings in the early days.
I substituted the corn tortillas with store bought tostada's & it came out good. This recipe is spot on! I was apprehensive but pleasantly surprised it actually tasted similar to TB's Mexican pizza

I used to work at Taco Bell and I did for a REALLY long time. I was able to create amazing things and ensure they were always fresh. However now nearly all the good menu items are gone and I will never be able to trust Taco Bell again.

I love Taco Bell’s Beef burrito. They discontinued it years ago. You can still order it and if they won’t you. You can ask for a bean burrito minus bean add beef. 2023 and it is much easier to go buy them again, that is for sure. This is the best recipe I have tried so far, thanks. I had some canned Keystone ground beef and with it's texture so close to Taco Bells, I thought of making these. If you go the canned enchilada and Ragu route like i did, be sure to add some sugar, that is what it is missing for me using Ragu Pizza sauce. I thought the pizza sauce would be sweeter. Be careful drying the shells in the oven with all the scurrying around, they can dry/cook fast.(ask me how I know) I will just skip this next time, the flour Fajita shells I used did just fine without drying them. Overall the meat flavor was pretty spot on, but like always getting the shells just right is the hard part. I like the flour tortillas so I used those and they were very crisp, and I liked that, wife thought it was too crispy. I told her since "they did not travel in the box steaming" on the way home .....:) Now the big question? Will it go through me, like Taco bell usually does? LOL

I miss so many of the early TB items: the Mexican Pizza, the Enchirito, the Bell Beefer (don't hate me) and the Taco Lite Supreme (no lite about it, it was a fried flour shell instead of corn).
The shell was pure flour, no corn. The sauce was semi-marinara, semi chili, so you were close, but you needed cooked tomatoes in the sauce and the tomatoes on the top were supposed to be steamed or cooked as well. And the original recipe had green onions as well.
I worked at taco bell in the 80's. I was a manager and we used to go in early in the morning to food prep. We actually cooked the beans in a pressure cooker, then drilled them to blend them down. We actually cooked the meat. Real meat. We had a person that we called the fryer who spent all day, every day cooking all the shells. We shredded the lettuce and cheese from fresh. Diced tomatoes from fresh. The green onions and olive from fresh. (They don't offer green onions or olives anymore) I was working their when they came out with the Mexican pizza and the meximelts. Our fajita meat was real chicken strips and the beef was actual cut up steak, cooked on a grill. By 1991, they switched everything. The meat is boil a bag. Beans are dehydrated. They only fry the cinnamon twist, taco shells and the Mexican pizza shells (which are flour, not corn tortillas, fried). Everything else comes in prepackaged. It's gross. Even the steak and chicken is boil a bag. Gross. I don’t eat there anymore.
I’d never had a Mexican pizza until I watched the Fancy Fast Food episode and it looked so good. And then just months later it was discontinued. Perfect timing.
Back in the 80's i used to cook the beef 10 pounds at a time.. that was tiring, but we started with the raw meat and then we added the wet taco paste to the meat then constantly stirring.. also the pizzas sauce had like small melting chunks of tomatoes.. im thinking crushed tomatoes.. and we also deep fried flour tortillas back then to make the pizzas and the taco bell lights.. but those shells broke to easy.. my solution to cooking the meat is,... get a tall pot about 6 inch tall.. add your beef.. and a seasoning packet.. of taco bells fajita seasoning.. and then stir the mess out of it, (or like whipping it good against the sides of the pot) till its cooked.. drain the grease.. and add back to pot add another packet of the seasoning and a little bit of water.. you will have a fine grain taco bell meat.. also back then it came with green onions and black olives on top with the tomatoes..
Add to your list ... Double Stuffed Steak Burritos ... Also, here's my idea. In my spare time, I plan to knock out the whole menu and give it away freely.

I worked at taco bell in the 80's and we had to cook all the meat, beans ( in a pressure cooker), taco shells, from scratch. It was 100 % beef back then cooked with spices . Beans were freshly made everyday and had real lard used. This was the reason behind the original "taco bell jones" it was truly good and addicting.

Some great tips here. That beef looked and sounded pretty spot on. And Ive always been confused about what type of tortilla they used, but the corn/flour combo makes sense now! Only thing is the tortillas you used seemed too thick and maybe a little overcooked? The mexican pizza tortillas manage to stay almost white. Dehydrating in the oven was a good trick though. They do have this texture quality of being somewhere between baked and fried. Im gonna have to play around with this recipe.
The oats are also known as TVP or textured vegetable protein. It's mostly used in highly processed foods, one example is Banquet salisbury steaks. It's what gives processed meat that almost "spongy" texture. It's not harmful in any way and in fact is a great survival food because it acts like mushrooms or tofu, it will absorb whatever you cook it in and take on that flavor. My dad used to keep some on his sailboat to cook with. It wasn't a powder like what he uses here, but actual TVP, it looks just like rolled oats. When added with sloppy joe mixes, it almost has the texture of beef, though a bit of a spongy texture because it absorbs the water. The controversy comes from companies using it to sell you less meat to raise profit margins. Taco Bell does this (as Josh points out), but they've never denied it either. Check your ingredients, if you see anything along the lines of TVP, textured vegetable anything or some other form of vegetable ingredients that aren't actual veggies. Just a way to ensure you're getting what you pay for. If you're ok with it, continue on :D

I made a Mexican pizza from Taco Bell tonight and nothing put none of that stuff in it and it was delicious and I put the cheese and olives and the green onions on top and tomatoes and it was so yummy
We cook the meat in a similar matter for our restaurant. Then cool it. Vacuum seal it lay flat sheets . When wanting it just pull it out put it in a sous vide bath.
Mexican pizza was neither pizza nor truly Mexican but it made a place in my heart. RIP old friend

I was doing something else while watching this and I actually had to say "what???" I've never heard anyone reference Caspa & Rusko besides me pushing them on my friends back in the day and then seeing the whole world go crazy for this "new" music.

You forgot mass quantities of minced dried onions to the beef. I worked there, dried onion is a major factor in the beef base.

I used to work at Taco Bell and I did for a REALLY long time. I was able to create amazing things and ensure they were always fresh. However now nearly all the good menu items are gone and I will never be able to trust Taco Bell again.

I love Taco Bell’s Beef burrito. They discontinued it years ago. You can still order it and if they won’t you. You can ask for a bean burrito minus bean add beef. It’s beef, cheese, onion and red sauce. Can you teach this one and or the red sauce!!! It’s my favorite item there! Thanks love the show. Get a can of red enchilada sauce. That's basically all their red sauce is.

2023 and it is much easier to go buy them again, that is for sure. This is the best recipe I have tried so far, thanks. I had some canned Keystone ground beef and with it's texture so close to Taco Bells, I thought of making these. If you go the canned enchilada and Ragu route like i did, be sure to add some sugar, that is what it is missing for me using Ragu Pizza sauce. I thought the pizza sauce would be sweeter. Be careful drying the shells in the oven with all the scurrying around, they can dry/cook fast.(ask me how I know) I will just skip this next time, the flour Fajita shells I used did just fine without drying them.
Overall the meat flavor was pretty spot on, but like always getting the shells just right is the hard part. I like the flour tortillas so I used those and they were very crisp, and I liked that, wife thought it was too crispy. I told her since "they did not travel in the box steaming" on the way home .....:)
Now the big question? Will it go through me, like Taco bell usually does? LOL

I'm 62 years young and I miss the original green and Torito and the bell beefer bring them back. Bring that back. Bring them back.
I miss so many of the early TB items: the Mexican Pizza, the Enchirito, the Bell Beefer (don't hate me) and the Taco Lite Supreme (no lite about it, it was a fried flour shell instead of corn).

The shell was pure flour, no corn.
The sauce was semi-marinara, semi chili, so you were close, but you needed cooked tomatoes in the sauce and the tomatoes on the top were supposed to be steamed or cooked as well. And the original recipe had green onions as well.

I worked at taco bell in the 80's. I was a manager and we used to go in early in the morning to food prep. We actually cooked the beans in a pressure cooker, then drilled them to blend them down. We actually cooked the meat. Real meat. We had a person that we called the fryer who spent all day, every day cooking all the shells. We shredded the lettuce and cheese from fresh. Diced tomatoes from fresh. The green onions and olive from fresh. (They don't offer green onions or olives anymore) I was working their when they came out with the Mexican pizza and the meximelts. Our fajita meat was real chicken strips and the beef was actual cut up steak, cooked on a grill. By 1991, they switched everything. The meat is boil a bag. Beans are dehydrated. They only fry the cinnamon twist, taco shells and the Mexican pizza shells (which are flour, not corn tortillas, fried). Everything else comes in prepackaged. It's gross. Even the steak and chicken is boil a bag. Gross. I don’t eat there anymore.

I’d never had a Mexican pizza until I watched the Fancy Fast Food episode and it looked so good. And then just months later it was discontinued. Perfect timing.
TB's menu is getting kind of weak.
Back in the 80's i used to cook the beef 10 pounds at a time.. that was tiring, but we started with the raw meat and then we added the wet taco paste to the meat then constantly stirring.. also the pizzas sauce had like small melting chunks of tomatoes.. im thinking crushed tomatoes.. and we also deep fried flour tortillas back then to make the pizzas and the taco bell lights.. but those shells broke to easy.. my solution to cooking the meat is,... get a tall pot about 6 inch tall.. add your beef.. and a seasoning packet.. of taco bells fajita seasoning.. and then stir the mess out of it, (or like whipping it good against the sides of the pot) till its cooked.. drain the grease.. and add back to pot add another packet of the seasoning and a little bit of water.. you will have a fine grain taco bell meat.. also back then it came with green onions and black olives on top with the tomatoes..
The Mexican Pizza, Double Decker Taco, and Doritos Locos Tacos are all dead, and Taco Bell is now dead to me.

I just made this a few days ago. Can report it was utterly incredible.
They told employees they got rid of it because the packaging was contributing some odd percentage to landfills.
It was also a pain in the ass for everyone who worked there.

I worked at taco bell in the 80's and we had to cook all the meat, beans ( in a pressure cooker), taco shells, from scratch. It was 100 % beef back then cooked with spices . Beans were freshly made everyday and had real lard used. This was the reason behind the original "taco bell jones" it was truly good and addicting.
What kind of tortillas did they actually use for the Mexican pizza? These don't look right.

Some great tips here. That beef looked and sounded pretty spot on. And Ive always been confused about what type of tortilla they used, but the corn/flour combo makes sense now! Only thing is the tortillas you used seemed too thick and maybe a little overcooked? The mexican pizza tortillas manage to stay almost white. Dehydrating in the oven was a good trick though. They do have this texture quality of being somewhere between baked and fried. Im gonna have to play around with this recipe.

The oats are also known as TVP or textured vegetable protein. It's mostly used in highly processed foods, one example is Banquet salisbury steaks. It's what gives processed meat that almost "spongy" texture. It's not harmful in any way and in fact is a great survival food because it acts like mushrooms or tofu, it will absorb whatever you cook it in and take on that flavor. My dad used to keep some on his sailboat to cook with. It wasn't a powder like what he uses here, but actual TVP, it looks just like rolled oats. When added with sloppy joe mixes, it almost has the texture of beef, though a bit of a spongy texture because it absorbs the water.
The controversy comes from companies using it to sell you less meat to raise profit margins. Taco Bell does this (as Josh points out), but they've never denied it either. Check your ingredients, if you see anything along the lines of TVP, textured vegetable anything or some other form of vegetable ingredients that aren't actual veggies. Just a way to ensure you're getting what you pay for. If you're ok with it, continue on :D
What the F happens to Josh's voice at times? It gets pitched up and I really don't think he is talking at a higher pitch. It sounds like it's sped up in post.
I made a Mexican pizza from Taco Bell tonight and nothing put none of that stuff in it and it was delicious and I put the cheese and olives and the green onions on top and tomatoes and it was so yummy
We cook the meat in a similar matter for our restaurant. Then cool it. Vacuum seal it lay flat sheets . When wanting it just pull it out put it in a sous vide bath.
