  • Eden Gebre Egziabher owns and operates Makina Cafe, the first and only Eritrean and Ethiopian food truck in New York City. Driven by her passion for the foods she ate as a child growing up in Addis Ababa, Eden serves Eritrean and Ethiopian staples like injera bread, chicken and beef tibs, misir (spicy red lentils), tikel gomen (cabbage with carrots and potatoes), gomen (collard greens), and sambusas, which are similar to samosas. Eden, born and raised in Ethiopia from parents of Eritrean descent, aims to use Makina Cafe to celebrate her two countries of origin and their cuisines.

She made up that part. There are a lot of women in the food truck/stand/cart business in New York. Of the half a dozen food truck/stand/cart near my office, half are run by women (Halal grill, roast nuts, fruit salad). Look at Munchies' own videos on New York street food, so many are run by women including black women.

Peizxcv Peizxcv what do you mean “made up that part” lmao, brother if you’re coming from a foreign country and you’re of color, you’re bound to come across difficulties, you can’t just discredit her just because you peak out your office window and see other food trucks run by women. How do you know that they didn’t struggle? You’re tripping me out g.

She now can. Ethiopia and Eritrea patched up their differences and no more fighting between them.

She is vague about her immigration status. Her story implies refuge, but she might be illegal (i.e. was not granted asylum). If she is here as an asylum status, then if she goes back, she looses her "credible fear" and thus her visa/green card is revoked. She could also already be a USC, but unlikely given she never says anything to that affect.

    Dear Beloved Eden,
You are rocking sister, you have a super quality personality and when it comes to your business- and the nature of the business fits you 100%. I believe coming to America at the young age from such a humble Eritrean family you saw everything when it comes to the Eritrean and Ethiopian food. I see here unique about you is your education - business. Now combing the traditional food of Eritrea and Ethiopia plus your education- came out a super model of business with character in New York.
Your personality and communication with the customers and genuine and delicious food is something unique and noble and I felt it you customers enjoy the food. My mouth was watering and I wish I was there to taste it.
Dear Eden I wish you the best and will see you in the future your business goes to the roof with success.
    VIVA EDEN GUAL ERITREA!
