Sitting here in our camper in France and feeling home sick for my home county of Waterford...I hope everyone believes me now when I say Waterford is truly a hidden gem and vastly underrated. Thank for a beautiful video and all the belly laughs.
My Grandma Katie grew up in County Waterford... in the town of Capa Quin? In Dungarvin? Right at the Abbey there. Katie used to deliver fresh eggs to the Abbey and would share that you got up early if you wanted a pair of shoes to wear. To this day I never take my shoes for granted. My one regret is that I never traveled across "The Pond" to see the old homestead in person.
We were in Waterford a couple years ago while we were visiting Ireland to track down some relatives on my mom's side. They lived in Carrick-on-Suir, and I visited the church where the family used to go to!. I could literally feel my family around me when I walked through those doors to the chapel, knowing this was where they went to church regularly, where they were baptized, where they were married, etc. We then traveled all over the south while we were there and fell in love with Ireland! it feels more like home than the states do - though we were born and grew up here. We look forward to going back in a couple years. I've been camping since I was around 5 or 6 and have done so in just about every venue, environment, season etc. you can imagine. But I've never lived in a van. It was my wondering about what that would be like that led me to find you guys on YT. The result is that BOTH my wife and I were captivated when we found the first video of you guys --- and then binged watched ALL of them until we caught up to present. What a gift you guys are! We eagerly await the next videos each and every time - and have fun watching what you get up to. Later on, we comment between us about 'what Phill & Killy' would do in this or that instance... - and then just giggle helplessly knowing that you guys would make absolutely the most out of every situation - but still let your emotions, humanity and grace (yes I said grace...) drift out from your experiences from your videos. We're both closing in on our 70's now - but we still spend and much time outside whenever and wherever we can.... Your fresh approach to your adventures are simply a pleasure to watch. You guys are amazing!... Keep up the great work!...

Ahh homesick again. Sitting watching on a winter's day in Aussie. I did this trip a 5 years ago with my daughter's in a campervan. Planning on going home next year for an extended stay. Thanks for a great video. People leave Ireland to travel to the continent but Eire has so much to offer.

Foraging Nettles are very dense in nutrients and taste great. Beech leaves in spring, when they're still soft and light green, are great as salad. Dandelions, you can use everything, leaves taste like ruccola, the root can be dried and used as coffee, the flowers can be used for tea, or in salad, or on a cake.. There's so many plants you can add to your diet during spring and summer, I have a weed (several different types of weeds actually) that tastes like a mix between spinage and asparagus. I have some that tastes like garlic, and soon the wild strawberries will be ready, and then all the other berries come in and take over. My rhubarb is ready for its second harvest. Once you get the knowledge, you start looking at the plants around you very differently, its just suddenly food everywhere during summer. 😮

I take the ginger/turmeric/peperine in capsule form with some pineapple juice, it's the only way I can do it. You 2 did good chugging it down. I loved the Waterford area. I've often thought how nice it would be to live there during the warm months and then go some place warmer during the Winter. Ireland with the sun coming down on it is just sooo beautiful. And yes, keep the heart well exercised. I can't run any more but I love to walk/hike and bike. Ya just gotta try and keep movin as you get older. Running in a van everyday must be almost impossible . You’ve got to think am I getting a shower today? But if you can just try to add a step everyday . Sooner rather than later you’ll get old and the steps will go the other way .
You would need to either be able to get a shower or go for a swim. Philly has been cracking out the solar shower lately. But now he's inflamed an old injury in his knee running, so looks like we need to find another way for him to keep his heart rate up.

I laughed so hard to the moment of "height difference reveal" that I made an unearthly sound 😂😂😂😂 I believed that with my 171 cm height, I was tall for a woman while I was living in Turkey but I married a giant Italian (193 cm) and moved to North East of Italy and now they call me "average" 😂😂😂 so we also frame photos where either he lowers himself or I step over something ❤😂 by the way the Copper Coast is amazing, but if I had the chance I would have swam also in the first beach.. 😘😘
Don't persist the myth that you don't need sun cream in Ireland! It's so easy to get so badly sunburned in Ireland! Check the UV index on your phone!! Eeek!!
That's a good idea checking UV, I think we got sunburnt again. It's like the sun surprises you!! I do usually wear SPF on my face every day, so will definitely keep up that routine at home too.

Ahh homesick again. Sitting watching on a winter's day in Aussie. I did this trip a 5 years ago with my daughter's in a campervan. Planning on going home next year for an extended stay. Thanks for a great video. People leave Ireland to travel to the continent but Eire has so much to offer.

You know watching this video i just realised that i didn’t realise that the wild life situation is not so good in Ireland and am so vey sorry that ive been taking how much wild life in Australia we have for granted thank you so much for waking me up if I couldn’t hear a cookaburra or see an emu or the sound of a crow i think that i might of died.

Foraging
Nettles are very dense in nutrients and taste great.
Beech leaves in spring, when they're still soft and light green, are great as salad.
Dandelions, you can use everything, leaves taste like ruccola, the root can be dried and used as coffee, the flowers can be used for tea, or in salad, or on a cake..
There's so many plants you can add to your diet during spring and summer, I have a weed (several different types of weeds actually) that tastes like a mix between spinage and asparagus.
I have some that tastes like garlic, and soon the wild strawberries will be ready, and then all the other berries come in and take over.
My rhubarb is ready for its second harvest.
Once you get the knowledge, you start looking at the plants around you very differently, its just suddenly food everywhere during summer. 😮

I take the ginger/turmeric/peperine in capsule form with some pineapple juice, it's the only way I can do it. You 2 did good chugging it down. I loved the Waterford area. I've often thought how nice it would be to live there during the warm months and then go some place warmer during the Winter. Ireland with the sun coming down on it is just sooo beautiful. And yes, keep the heart well exercised. I can't run any more but I love to walk/hike and bike. Ya just gotta try and keep movin as you get older. And for you Keely.....keep the coffee brewing.😆Take care guys🤗

It was still yum, but very spicy haha, I think I've perfected it now. I put it through a seive so that helps with all the ginger fibres.

2nd edit: add some honey to the pineapple, turmeric smoothie. It helps with the “punch” of the taste. Also if u can get the Mexican fruit spice Tajin it brings out the flavors of the fruit but don’t use too much.

Running in a van everyday must be almost impossible . You’ve got to think am I getting a shower today? But if you can just try to add a step everyday . Sooner rather than later you’ll get old and the steps will go the other way .
You would need to either be able to get a shower or go for a swim. Philly has been cracking out the solar shower lately. But now he's inflamed an old injury in his knee running, so looks like we need to find another way for him to keep his heart rate up.

That's a good idea checking UV, I think we got sunburnt again. It's like the sun surprises you!! I do usually wear SPF on my face every day, so will definitely keep up that routine at home too.
