You should go to Saudi Arabia it’s bet hard but you’ll be amazed in the traditions and history u can’t visit Mecca and madinah but you have Jeddah and Riyadh and a lot between
It's so great to see you exploring more Rural Places in the UAE instead of Dubai. Dubai has culture but it's very hard to find since there are so many foreigners. A Place like Al Ain is perfect to explore Emirati Culture. If you are able to meet up with families from Al Ain who know the place more and could take you to their farms and show you like the Camels and the real Emirati culture instead of Buggys that would be amazing. If you want the true UAE Experience in Dubai go to Deira. Its a city near Downtown Dubai where there are a few tourists and more locals. Its not that popular. the only popular parts of it are the souq and the Dubai Creek. Dubai is still a nice city. Downtown Dubai is the place which has less locals and more tourists. The Suburbs of Dubai have more Locals than tourists. Downtown Dubai is the main hub of tourists in The UAE

Please visit Saudi Arabia, since you love nature and historical places you should visit the northern province, it's so unique; there's mountains and farms also deserts and sea side , the southern province is so beautiful too there's some beautiful islands there like "Farasan" if you love diving you should visit Jeddah city and check the diving clubs there, the rest of the country have a lot of historical sits and beautiful places also, but this is my personal preference although I'm from Najd province. It most likely was turkish coffee. When middle easterners drink coffee it's usually turkish coffee, with some middle eastern spices like cardamom and cinnamon. I have also known people from southeastern "balkan" europe that also drink turkish coffee.

The outer structure of the fortress seemed so similar to Agra Fort. The kettle is actually called surahi from which they probably drank nectar or sherbet. What you describe as arab coffee sounds like kashmiri Kahava
i think the government wont allow tall buildings because of the natural underground water channels becomes hallow in summer when it runs out, it can't support heavy buildings.
