    For this recipe, you will need:
    🔸 Ingredient:
    1 Napa Cabbage
    3 ½ oz Scallion, chopped
    5 ½ oz Radish, cut into triangular shape
    2 tbsp Sea Salt
    2 ½ oz Chives
    🔸 Kelp Stock:
    1 ½ cup Warm Water
    1 Kelp, 4” X 4”
    🔸 Kimchi Paste:
    1 ¼ oz Onion, largely chopped
    ¼ Pear
    ¼ Apple
    5 Garlic
    1/8 oz Ginger
    ½ cup Kelp Stock
    1 cup Gochugaru (Korean Red Chili Flakes)
    1 tbsp Soy Sauce
    🔸 Glutinous Flour Mixture:
    1 tbsp Sweet Glutinous Rice Flour
    1 cup Kelp Stock, room temperature

      I don't think kimchi has alcoholic ingredients? Frementented vegetables do actually have alcohol because of something during the fermentation process, but it's not enough to harm you, and as a muslim I can eat pickles, which are also fermented, so you should be safe to eat non-vegan kimchi as well!

      Some type of kimchis have alcohol, and sometimes vodka is added to increase preservation of a pickle. ​@@IntenseWheeze

      Genuinely I wonder if you guys eat fermented food as well? Like fermented vegetables, kimchi, sauerkraut.. Because usually they produce natural alcohol during fermentation..

      These people can have fermented foods because the alcohol content is not intoxicating and not high like that in alcohols made from grapes, etc. As per some Islamic schools of thoughts, as long as it is below 0.5% that is okay as well. Last but not least, if alcohol is processed and it isn't intoxicating, no longer remains alcohol that is allowed as well ( like in medicines or so) @@MrAndalian

      Yes, it has nothing to do with gluten, rice is for fermentation

      ​@ashwinisharma3533 I was wondering too... I have never found sweet glutinous rice flour in my local grocery stores! But I found rice flour in the baby food section where it is used to cook baby rice porridge! Do you think this would work?

      Why don't you use wheat flour? Some Koreans use plain white flour instead of rice flour when making porriage for kimchi. @@pineapple1612

      It keeps getting more sour over time but I kept it many months in the fridge and I think you can store it a few months.

      As long as there is no mold and you think it's not sour enough

      Like others said as long as you don't see any mold, it's still good. I keep some aside to use for Kimchi pancakes and the more sour the better so I have a jar that's almost 18 months old in my fridge.

    Half a kilo of Gochugaro in Costa Rica it’s $15 USD. For me it’s expensive.

      @@momoland_merry86 thx. I’ve tried, but my family says they notice the difference since normal chili powder is way hotter 🥵 than the Korean stuff

      You can use plain water. Kelp gives umami.

      Yes! Kimchi is usually made with Napa cabbage, but it can also be made with any vegetables like regular cabbage, cucumbers, radish, green onions, etc!

      Most kimchi recipes would not have gluten. Glutinous rice refers to it being sticky like glue, it does not contain any gluten.

      I make homemade kimchi and usually you put fish sauce and shrimp paste. I'm interested to try Kombu instead of the fish sauce.
