I’m pretty new to baking and this recipe was amazing. One small thing that did cause me to waste though was the fact that creating the caramel requires you to not use a non stick pan. I didn’t know that , and I tried twice before switching to stainless steel and fixing my mistake. Just a heads up for anyone who was wondering why their caramel was crystallizing before it browned

@Katia Otero Yes, we always do it on the stovetop, a Bain- Marie to be exact. I use only 4 ounces of cream cheese and 3-4 eggs, depending on their size. It comes out exactly like this one. I sometimes omit the cream cheese altogether. There are so many ways to tweak this recipe to your liking. Thank you for sharing your memories about your grandma with us. I’m Cuban and this is almost exactly how I make mine. Flan is a Cuban national treasure. Lol I blend all my ingredients in a blender, and bake at 350 for about 55 mins. I might cut my time down a little next time. Thank you for keeping the recipe authentic!
If anyone is thinking of trying this, do it. This flan is so good. Smooth and creamy and just sweet enough. It was decadent and even my boyfriend that hates flan loved this one! I will say not to start it at night unless you like being up until 3 AM 😂 I didn’t have a baking dish/roast pan large enough to fit my cake pan into so I separated the mix into some smaller casserole dishes and it was still perfect! I was so worried I had put too much air in it and that it would be full of holes but nope! I did tap it on the counter a LOT though Definitely the best flan I’ve ever had, and even more so the best flan I’ve ever made! Also a bonus is that it uses the whole egg so I didn’t have to figure out what to do with a bunch of egg whites

Made this yesterday for a dinner party. Our first caramel attempt was a huge failure. Went straight into the trash. We figured it out on the second try by following a different caramel recipe on UA-cam. Started with hot water. Stirred until it boiled then left it alone. We noticed there’s different techniques for caramel. Followed the rest of the recipe. Let it cool in the pan about an hour before refrigerating still in the pan. Took it out of the fridge. Put the pan in hot water before inverting it on a plate. Everyone loved it. Delicious and creamy. Thank you! 🤍
I made this a few days ago. It came out absolutely, flawlessly smooth. The smoothest flan I have ever made and baking time is only 50 mins. My normal flan recipe doesn’t have cream cheese but this one does and my husband really enjoyed the addition.

If you add two tablespoons of corn syrup to the sugar it won't crystallize. Also you can make many different flans by replacing some of the milk with fruit juices. Cream cheese is great even pumpkin flan,with pumpkin pulp. Just experiment. I've been doing it for 50 years.

In Colombia when my family (or myself) make this, we just put all the ingredients at once in a blender and we add a tiny bit of dulce De leche extract and whole milk (equal quantity as the sweet and condensed milk) instead of the cream cheese.

Hi John. Teach your viewers this safe and simple tip. When using a bain-marie, position your pans on the rack first. Then use your tea kettle to pour the boiling water up to the proper level, shut the oven and you’re ready to go. This way you don’t have to risk spilling or dropping boiling water while carrying it from the counter or stovetop to the oven, preventing burns. Thanks for another great recipe.
I love that you made a recipe for this! This is my mom's signature dessert that she makes for every birthday and holiday. We call it quesillo instead of flan but it's the same; also, my mom usually blends everything inside a blender to make the custard and has found that to be quick and have the same effect. I use 4 eggs. No need to use half a dozen! I place all ingredients in the blender and blend for a minute. I use a spoon to wipe off the bubbles that form on top and pour the mix into my caramel glazed pan. The rest of the steps are the same as John’s. Add 1/4 cup of Kahlúa and you’ll be in heaven! It just disappears into people’s stomachs ❤️ if the remainder of the caramel sticks to the bottom of the pan place it in a Bain Marie over medium heat and watch it melt. Pour all that goodness over your flan and chill. You’re welcome ☺️ !

I really love this flan, it’s always a hit whenever I make it. I think the only tricky part for some would be the caramel, a part from that, it’s the easiest desert to make and probably the fastest one to be eaten! I actually just put all of the ingredients in the blender, if it’s lumpy I strain it.

Would like to add that it's very important to take it out of the oven while it's still a little jiggly in the center, or else it will overcook, the texture changes, it's not as creamy. John, I love your recipes, and I admire your brave effort to offer them to everyone. The family I cook for raved over this flan and requested another, despite a substitution I made: I used Neufchatel rather than cream cheese. It pushed the taste and richness over the top, but it made the texture a tad "curdy." I don't recommend that substitution. 🙄😀
Here in Brazil, we call it pudding and the original recipe is: milk, condensed milk and eggs, with the caramel sauce. I'll give you a tip that we use here to unmold, in addition to the knife. .. Pass the form over the stove top for 10 seconds. It's enough to let go. 😘😘🇧🇷🇧🇷🇧🇷 Sorry my english😁
Hey there John! I have tips and techniques to take out your flan super fast Haha! 1. If you want to, you can scrape the sides, but you can also just leave it be so that the beauty of the flan's sides are perfect! 2. Technique to take the flan out is to put the Plate you want to serve it over your flan filled pan (the pan with the flan). 3. Invert it. Then while standing, Hold it tight with both hands to prevent throwing the beautiful flan hahaha! Move your body to the side while your legs are still in place. (right or left) Then move your body in back in its place again and swing with a little bit of force. 4. Then flan will just pop out from its place very easily! Take out the pan. 5. Then Vóila! Beautiful Flan! (I just found this technique out so its not originally mine haha!) If you can see this, Hey John! I love your cooking!

I added some liquor and some pure organic vanilla extract (which contains alcohol as an ingredient I noticed) to your recipe, and it was delicious!! I called it "Flan Envinado!" It was a hit with my family members!
For the caramel , better to use a not stick pan place the sugar in the middle forming a small pile (1 cup) and pour right on top of the pile and and the water will spread the sugar evenly and you dont need to scrape the sides it will become caramel evenly . When it starts to turn golden then slightly swirl with a wooden spoon until desired color . Pour into pan cover bottom and sides . Do not let get to dark because with heat it continues to cook and will ruin the caramel and will taste bad (amargo)

I was preparing a 17 ingredient Cheesy Tuna Casserole (the little can fell directly into the casserole dish)! An easier and foolproof way to make the caramel: Mix 1 C sugar and 6 T water in 2 cup pyrex (clear) glass measuring cup. Microwave on high for about 4 minutes and check for color. Continue microwaving on 20-second bursts until proper color is reached. My microwave took 4 minutes and 40 seconds--- yours may vary. Pour into flan pan and allow to cool. While caramel is cooling, put ingredients for the custard in the blender and pure. Strain into flan pan and bake at 325 in a water bath. Easy peasy!

Cover the pan with aluminum foil since when water boils it can get into the flan . When you remove the flan from the oven and is still very hot swirl the pan gently and the flan will pull off the edge of the pan and you wont have to run a knife around the edge when its cold !!! When you invert the pan push a little bit in the center and it will come loose onto the plate !!! To make it a coconut flan ... substitute the evaporated milk for coconut milk and Vanilla for Coconut extract .... place 1/4 cup of sweetened coconut flakes on the caramel before pouring the mixture ... Coconut flan is “delicioso”

In Colombia when my family (or myself) make this, we just put all the ingredients at once in a blender and we add a tiny bit of dulce De leche extract and whole milk (equal quantity as the sweet and condensed milk) instead of the cream cheese.

En mi casa lo hacemos con una lata de leche condensada, una lata de leche evaporada, una lata de leche entera, 3 huevos, canela, esencia de vainilla y de dulce de leche. El caramelo lo hacemos mas o menos igual y para cocinarlo solo pongo el recipiente directamente en el orno, no me preocupo por el recipiente con agua. :)
I’m Guatemalan and what I do is that I just add evaporated milk sweetened condensed milk vanilla eggs and heavy whipping cream, for the caramel we don’t add water either just let it melt

When using a bain-marie, position your pans on the rack first. Then use your tea kettle to pour the boiling water up to the proper level, shut the oven and you’re ready to go. This way you don’t have to risk spilling or dropping boiling water while carrying it from the counter or stovetop to the oven, preventing burns.

I love that you made a recipe for this! This is my mom's signature dessert that she makes for every birthday and holiday. We call it quesillo instead of flan but it's the same; also, my mom usually blends everything inside a blender to make the custard and has found that to be quick and have the same effect. I use 4 eggs. No need to use half a dozen! I place all ingredients in the blender and blend for a minute. I use a spoon to wipe off the bubbles that form on top and pour the mix into my caramel glazed pan. The rest of the steps are the same as John’s. Add 1/4 cup of Kahlúa and you’ll be in heaven! It just disappears into people’s stomachs ❤️ if the remainder of the caramel sticks to the bottom of the pan place it in a Bain Marie over medium heat and watch it melt. Pour all that goodness over your flan and chill. You’re welcome ☺️ !

I love flan (crème caramel in my house) as well, and have made it often. I have never thought to enrich it with cream cheese; thank you for the inspiration.
Edit: I love all the versions of custard; being Southern, the most frequent form is custard pie.
I made this for my family this past weekend. It was a magnificent flan! My Hispanic family could not stop raving about it.
I really love this flan, it’s always a hit whenever I make it. I think the only tricky part for some would be the caramel, a part from that, it’s the easiest desert to make and probably the fastest one to be eaten! I actually just put all of the ingredients in the blender, if it’s lumpy I strain it.

Love watching your videos! This is exactly how I make my flan. Would like to add that it's very important to take it out of the oven while it's still a little jiggly in the center, or else it will overcook, the texture changes, it's not as creamy. And the flan comes out with a lot of little holes on the edges, classic tale of an overcooked custard. Thanks John!

John, I love your recipes, and I admire your brave effort to offer them to everyone. The family I cook for raved over this flan and requested another, despite a substitution I made: I used Neufchatel rather than cream cheese. It pushed the taste and richness over the top, but it made the texture a tad "curdy." I don't recommend that substitution. 🙄😀

Here in Brazil, we call it pudding and the original recipe is: milk, condensed milk and eggs, with the caramel sauce. I'll give you a tip that we use here to unmold, in addition to the knife. .. Pass the form over the stove top for 10 seconds. It's enough to let go. 😘😘🇧🇷🇧🇷🇧🇷 Sorry my english😁
In Puerto Rico, we do add cream cheese to our flan! A blender is often used as well. Great video, John, love all your recipes.❤️
Hey there John! I have tips and techniques to take out your flan super fast Haha!
1. If you want to, you can scrape the sides, but you can also just leave it be so that the beauty of the flan's sides are perfect!
2. Technique to take the flan out is to put the Plate you want to serve it over your flan filled pan (the pan with the flan).
3. Invert it. Then while standing, Hold it tight with both hands to prevent throwing the beautiful flan hahaha! Move your body to the side while your legs are still in place. (right or left) Then move your body in back in its place again and swing with a little bit of force.
4. Then flan will just pop out from its place very easily! Take out the pan.
5. Then Vóila! Beautiful Flan!
(I just found this technique out so its not originally mine haha!)

I appreciate that you didn't edit out the evaporated milk falling in your bowl. So many times people strive to only show the perfect. I made a video a few months ago for my channel and dropped the measuring cup in the bowl. I'm like "well that wasn't part of the recipe". I left it in the video. This looks delicious. I haven’t tried it with cream cheese, but I will. You really don’t need a mixer, I always use my blender and it comes out sooooo smooth, no lumps.
Hello! I am from Leon, Guanajuato Mexico. However, I live in Nebraska now! GO HUSKERS! LOL! We love adding liquor to deserts. I added some liquor and some pure organic vanilla extract (which contains alcohol as an ingredient I noticed) to your recipe, and it was delicious!! I called it "Flan Envinado!" It was a hit with my family members!
For the caramel , better to use a not stick pan place the sugar in the middle forming a small pile (1 cup) and pour right on top of the pile and and the water will spread the sugar evenly and you dont need to scrape the sides it will become caramel evenly . When it starts to turn golden then slightly swirl with a wooden spoon until desired color . Pour into pan cover bottom and sides . Do not let get to dark because with heat it continues to cook and will ruin the caramel and will taste bad (amargo)

I made this recipe last night and it came out delicious! Only thing though, I used a loaf pan so you definitely need to keep it in the oven a bit longer. I did about 1 hour and a half and it came out great!

here in the philippines, we call it leche flan. it's one of my favorite desserts and what we do is that we just steam it with boiling water.

I was preparing a 17 ingredient Cheesy Tuna Casserole (the little can fell directly into the casserole dish)! Needless to say, I had to start all over again. lol

An easier and foolproof way to make the caramel: Mix 1 C sugar and 6 T water in 2 cup pyrex (clear) glass measuring cup. Microwave on high for about 4 minutes and check for color. Continue microwaving on 20-second bursts until proper color is reached. My microwave took 4 minutes and 40 seconds--- yours may vary. Pour into flan pan and allow to cool. While caramel is cooling, put ingredients for the custard in the blender and pure. Strain into flan pan and bake at 325 in a water bath. Easy peasy!

The shortest title for a youtube video I've seen in a long time!
Cover the pan with aluminum foil since when water boils it can get into the flan . When you remove the flan from the oven and is still very hot swirl the pan gently and the flan will pull off the edge of the pan and you wont have to run a knife around the edge when its cold !!! When you invert the pan push a little bit in the center and it will come loose onto the plate !!! To make it a coconut flan ... substitute the evaporated milk for coconut milk and Vanilla for Coconut extract .... place 1/4 cup of sweetened coconut flakes on the caramel before pouring the mixture ... Coconut flan is “delicioso”
