1 small Shallot, finely minced
5 Chives, finely minced
3 Garlic cloves, minced
2-3 tbsp prepared horseradish
2 tbsp Dijon mustard
3 tsp minced fresh thyme
pinch of cayenne pepper
Salt and Pepper to taste

4 tbsp butter
Juice and zest of half a lemon
4 cloves garlic, minced
1 tbsp Dijon mustard
Pinch of cayenne pepper
1/4 tsp paprika
2 tsp fresh chopped parsley
1 tsp freshly chopped chives
2 tsp minced thyme
1/4 tsp crushed red pepper flakes
Salt and Black pepper to taste
* WHISKEY BUTTER *
4 oz unsalted butter
1 Shallots minced
3 tsp minced Cilantro or Parsley
1/2 tsp Dijon-style mustard (optional)
1 tbsp Worcestershire sauce
3 tsp whiskey
1/2 tsp sea salt or salt
1/2 tsp ground black pepper

I find it's always better to reduce any alcohol I use for seasoning/marinade/etc. If you don't it leaves a slight astringent flavor to whatever you're making, whereas reducing it allows for the flavors to shine through and sometimes adds some caramel undertones.

Awesome test. Suggestion, with your other recent test, I'm surprised you didn't do a coffee based butter, I'd also try one with olive oil poached garlic cloves fortified with a good quality mayo to make it creamy, and not melt when the hot steak hits it. Great videos!

Have you tried using the cowboy butter in th sous vide when actually making the steak?
Marinate a couple steaks with the cowboy and pintrist for 2 hours! See what happens against a control! Would be an amazing quick video!

My man! You have got to burn off the alcohol whenever you cook with it, it’s a MUST lol not optional.
Maybe put it in a small container and set fire to it and use what's left behind which should be mostly the flavor without the alcohol.

This new setup is really good but the guy with the gimbal is making me sick, was really good for the closeup but when wide was unnecessary, i think with a tripod for closeup only is going to be much better 💪
