    I'm not a vegan, but I come here all the time for the easy and delicious recipes. I also subscribe to your philosophy of make different foods every day, but use the foods you already made into new things.
    Your recipes work for beginners, and don't require special ingredients.

      My dad had this cartoon of a retired couple. The wife is cooking at the stove (something she’s done for decades) while the husband is sitting behind her, in a chair labeled “Director”, supervising her. The look on the wife’s face...well, you can imagine.

    I must say, learning a few years ago to flavour my lentils already during the cooking process was a game changer. They just taste SO MUCH better when you approach the cooking water as if you are making a stock ;D I always add soy sauce, garlic, a piece of carrot and parsnip and depending on the dish I am planning, dried mushrooms or tomato for all that umami :D
    I love the salad idea- perfect for this warm weather we're getting closer and closer to!
    It was also SO SO nice to "meet" your parents! Real authentic advice for a proper Indian daal!
    The last recipe was very interesting! I have never thought about such a flavour combination!
    Anyways, thank you a lot for such inspiring content! I feel like I'll be making some new lentil dishes from now on!

    My mom always did the cooking...and when I was growing up, it was all about convenience foods (70's and 80's). So I learned most of my cooking from my grandmother. I used to spend every weekend at my grandparents' 😊

    It’s 100 degrees here and the marinated lentils were perfect. I loaded them with tarragon and a little parsley, champagne vinegar and lemon. Then nestled them into Romain spears. Absolutely perfect on a hot summer day. Satisfying and light. Thanks Nisha!!!

    Now I know why you have such a cute personality! Your parents are so fun! I love that your mom gave you an 8 to be nice. 😂 Thanks for sharing them with us. I only recently started eating plant based and never had lentils before. I am obsessed with them. I have been sautéing onion and garlic in my Instant Pot, then adding the lentils and liquid and then pressure cooking them. I keep the batch in the refrigerator and make various things with them through the week. Yum !

The way your dad was trying to interrupt your mom and explain things, my dad does just the same.     I don't know why, but even plain lentils are extremely satisfying for me to eat. Just with some diced onions, salt, pepper and I'm happy to eat an entire bowl of lentils as my main meal. These 3 recipes look amazing though.

    The toasted black mustard seeds, and cumin seeds are what makes the day tadja for me. They are key to so many dishes. Also toasted urad. Thanks for the great recipes!

    I just made your dal version, delicious.
    Usually I don't make tadka but I put seeds (mustard and cumin in that case) at the very beginning of the recipe. I have the feeling there are more aromatics this way.
    The tiny modification I made was to replace 250ml of water with coconut milk. I love that taste in dals.

    Nisha, I made my second vegan dish of yours today, the green lentil salad. I fed it to my son, who wants to eat more plant based. He was in love! We added serrano pepper to the herbaceous part and vegetable bouillon to boil the lentils in. I have wanted to go vegan for such a long time, I am so grateful that I found food that looks, tastes and is beautiful for my body and my kids! You break everything down so easy! I am forever grateful!

    The single most important culinary event in my life was when I ordered an Indian vegetable curry from a restaurant called Anarbagh in Beverly Hills (yes I'm a yuppie - ignore that - I only mention it b/c the restaurant is worth plugging for what it did for my palate and everyone who can should go there) after I'd had my wisdom teeth removed. I figured a soft arrangement of vegetables in gentle spices (L-O-V-E hot stuff but ordered without cayenne b/c wisdom teeth removed) would be good for that moment but I had no idea... I'd never had Indian cuisine from an Indian master chef before that moment. Been a vegetarian (95% vegan except hard Italian cheese mostly) for years since then.
    As your boyfriend said in one of your videos his favorite thing that you made was malai kofta. It is without a doubt to my mind the greatest dish ever created by humans. Seriously. Spicy malai kofta with paneer naan... it ascends one to levels of pleasure I did not know food to be capable of. I hope you have a great pride for your culinary heritage as I can tell you objectively as someone who because of Indian cuisine completely abandoned meat, and as a white man with no ancestral bias, I firmly believe it is far and away the greatest cuisine ever created in terms of both health and taste: one of the great examples of bliss & harmony that we can achieve with mother nature without killing anything.
    Anyway if you're ever in Los Angeles, please take a trip to Anarbagh on Beverly Drive. It changed my culinary life. Thank you for and please keep up your work on this channel, I think the influence it will have on younger generations (who are cognizant of climate change and impact of animal products on the environment) is incalculable and yet to be seen.

    I'm temporarily on a 'pureed soup diet' because I'm having some dental work done and I am totally bored with all my soups! So I asked my bf to make me your red lentil soup and it turned out AMAZING! Even though my bowl had to be pureed, the texture remained pleasant. My insides are warm and happy which is wonderful because it is freezing cold outside. Thank you!

    I made the herbed lentil salad to bring for lunch while I'm camping this weekend! It's absolutely DELICIOUS. The spiced garlic oil is genius!!! I made everything according to Nisha's recipe, but also added sliced castelvetrano olives, toasted pine nuts, and diced cucumber and bell pepper. Wonderful! So glad I made extra.

    Hi Nisha.. in the WI the indian ppl cook dhall slightly differently ..... we add 3 cups of water to 1 cup of dhall. To chunkay the dhall in the end, I use a dhall ghutnee (it's really a metal ladle) and heat up some oil with geera and thinly sliced garlic. When the garlic begins to turn golden brown .... pour it over the cooked dhall and cover it for a few minutes. It's our way, I'm sure ppl of Indian origin does it differently in Tanzania, South Africa etc. We make do with what we have. I'm retired now after 40 yrs in Canada and do all the cooking (well, I never married and have no children)... I do like your wit and realised you got it from your dad. Thanks for keeping me entertained. Cheers.

    I love lentils. I have a few favorite ready made concoctions, but I like to cook without salt, and find that, with all the spices, I don't miss it. I do better if I cook myself. No oil either, so I find other ways to infuse my food with those lovely herbs and spices. Thank you for all your great recipes. Your parents are cool.

    I just made the creamy lentils! I used a lot of leeks (could only get 2 big ones together), had everything it called for, I made a few slight variations but it came out really good, esp with some basmati rice.

    Hi, your videos and recipes are very helpful for those wanting new recipe ideas. I however soak my beans,
    grains, and nuts and seeds before cooking or eating them. It helps create enzymes and reduce phytic acid
    which inhibits mineral absorption. It especially helps with large beans like chickpea and kidney beans. I would
    soak beans for 12 hour in water, then drain and rinse before cooking them. Been vegan for over 20 years. peace.

    Love the lentils recipes ❤️ I had my great grandparents as guardians growing up. She did all the cooking, American Diet, except Sunday breakfast, pancakes sausage/bacon. I transitioned to vegan after many yrs of refining what I ate. 😋 Love your style, videos. ❤️🙂

    First of all, loved your parents. I hope they make future cameos! I inventoried my pantry last night. I have so many lentils, red, yellow, green. Time to make some dal and rice (to start at least). My Instant Pot arrived yesterday, so I'm very excited to start using it.

    Thank you SO MUCH....I am trying to become vegetarian and I LOVE traditional Indian food... The Tadka looks so delicious.... I thought that I could smell the beautiful mix of herbs and spices as you were cooking it.. With food this beautiful yet still simple....who needs meat at all ?

    I love these videos. I am attempting veganism and i just buy vegetables and spices but i have no clue what to do with them. Your videos and cookbook have helped me tremendously. I never had lentils or indian spices until I started watching your videos and i love them now. I even got my meat only eating boyfriend to eat one of your dishes . Thanks again

    I substitute cooked red lentils instead of chickpeas when I make hummous. Lentils and tahini are match made in heaven.😋🇨🇦
