저 도자기는 한국에서는 '옹기'라고 합니다. 주로 숙성이 필요한 장류 혹은 저장음식을 보관할 때 땅에 묻거나 서늘한 곳에 두어 보관하는 전통적인 집기입니다. 저렇게 만들어진 옹기는 현미경으로 봐도 무척 작은 미세한 구멍이 나있어서 나쁜 물질을 걸러내는 일종의 필터 역할을 함과 동시에, 바깥과 내부가 건강하게 순환이 되어 발효와 숙성이라는 과정을 돕습니다. Actually, one shown in this video is medium sized. There were much bigger ones. They are used to store rice, pickled vegetables, sauces of all kind. Even valuables.

This type of more jars are already kept in Padmanaba Palace, near Nagercoil, in TamilNadu which were used to saving pickles for all soldiers and other people. And also in village peoples are using for saving paddy and other grains.

To keep kimchi and traditional fermented soy sauces etc. My mom uses it to make and keep soy souce and soy paste. I asked her if she can use an other jar, like a glass jar. She said glass jars are usually small and fragile, transparent so the sunshine makes the food go bad. And also she said this type of traditional jars control the humidity itself so that the fermenting process goes really well. And I guess she has a memory of childhood when her parents nourished their big family with these big jars full of kimchi, soy souce etc. when there wasn't electricity in the village.
