  • This Kabuli Pulao is the recipe you've all been waiting for. The full ingredient list and recipe is below:
    Ingredients
    2-4 tbs char masala (the recipe for char masala is here: afghancooks.com/afghan-char-m...)
    2 teaspoons cumin seeds
    1.5 lb lamb
    350 grams julienned carrots
    250 grams of raisins
    1/4 C sesame oil
    2 sliced onions
    4 chopped garlic cloves
    salt
    2 Tablespoons of sugar
    3 Cups Rice
    Kabuli Pulao Recipe Steps
    1. Rinse your rice. You want to make sure the water runs clear. This cloud water is the starch you that don't want. Makes for sticky rice. (Good for other dishes, not this one) Let the rice soak.
    2. Next, we are going to prepare the lamb. Break out your instapot, pressure cooker, or regular pot. Add your sesame oil and heat. Add your onions. Add your roughly cut garlic. Cook for 30 seconds and then add cumin.
    3. Next we will add our lamb. Then add tablespoon of salt. Finally, add 3 Cups of water. I cook in my instapot for 25 minutes on high pressure. If you cook in a regular pot it will probably take about an hour. You want the meat to be fork tender.
    4. While your meat is cooking, next cook your carrots and raisins. Add to pan some vegetable oil. Then, add your shredded carrots. This will not take long, cook until soft. Place on your foil.
    5. Next, your raisins. I soak mine in hot water for about 5 minutes. Then, you will drain and add to the same pan you cooked the carrots in. This will go quick. Only cook for about 30 seconds. Then add them to the foil with your carrots and wrap into your foil packet to add to rice later.
    6. Boil a large pot of salted water. Take your rice that you have rinsed and soaked and add to the boiling water. This is a step you have to watch. I can't give you an exact amount of time to cook the rice. But, you are only partially cooking your rice. If you fully cook it you will have mushy pulao. On average 4 minutes should get you there. If you can break the rice in your finger you are done. Then, drain your rice.
    7. Next, we are going to make our sugar solution to add a caramel color to our rice. In a pan add quarter cup of vegetable oil. Add your sugar. Let the sugar darken. Add 1/2 Cup of water, set aside.
    8. Take your meat out of the broth when done cooking. Now it is time to assemble everything. Take a big pot and add half of your rice to the bottom. Then, add your lamb. Then add last of the rice. After that, use a few scoops of the lamb broth, add the sugar mixture, and char masala.
    9. Poke some holes in the rice with the handle of a spoon. This will allow steam to release better. Take your packet of raisins and carrots and place in pan on top of your rice. I cover mine with more foil then put lid on rice.
    10. Cook on stove top on medium-low heat for about 25 minutes.

    As an Afghan being away from home for more than three decades, it feels so good to see Afghan recipes on youtube. I would love to see a Shola recipe here. I’ve tried many but didn’t quite get the same taste that I get when I was a child. Thanks for all the awesome recipes.

    I was in Afghanistan for a year and a half in 2012. I ALWAYS loved eating with the Afghan people and the Qabuli Pulao was the BEST! I have never been able to duplicate it - especially the raisins. Wht won't mine plump?! Yes, I tried this recipe and it was very delicious. Like she said, ALL recipes are different, but this was good. Also, don't wait for your rice water to reboil after putting in the rice. Oh, and make all 3 cups of rice. I tried to "not make too much", but my meat to rice proportions were off. I overcooked mine at 4 min boiling. Thank you, Miss. Miriam!❤

    Thanks for this recipe. I tried it at an Afghan refugee run place in Delhi and fell in love with it. I am gonna continue to eat it at the restaurant, as long as I am in delhi but once I move to a place without afghans around, will love to make it (saving this video in one of my private playlists)

    ❤ I expect to fail the first time, but this recipe has a lot of variables so timing is probably everything. Excited!

    This dish reminds me of the Bedouin Madlouba, except for the carrots and raisins, which I seen in Gazan rice dishes. It is sort of a fusion of the two. Looks wonderful, can't wait to try to make this one!

    Hello, Miriam! I just made your Qabili Palaw and it was a huge success! Thanks to you! I've never tasted such delicious rice and the lamb was perfect. There is one problem in your recipe that I thought I should point out. Step 7 is about making the sugar solution made to color the rice. You have us dissolving sugar in hot oil and then adding water to the mixture. This is very dangerous (we have a saying "oil and water don't mix")! I caused a great fizzling and spattering. I was lucky to get out of the way before getting severely burned. It could also have started a fire on the stove and as it was, there was a lot of spilled sugar solution all over it. I think the directions need to be revised to have the person take the hot solution off of the stove and cool it to room temperature before adding the water. By the way, I also made Shirpera and had an issue I'd love your feedback on. I could only find non-fat powdered milk and that might be the problem. What happened was that as soon as I started adding the milk powder to the warm sugar solution, the solution started to crystallize. The only way I could get the powder mixed in was to add some very hot water, a little at a time. I finally got all of it mixed in but the eventual texture was grainy and I suspect it was supposed to be smooth. On the other hand, it tasted fanstastic (even though I reduced the sugar by 1 1/2 c.). I look forward to learning more from you!

    Kabuli pulaw? Looks very similar to Uzbek pulaw... here in Moscow it's very popular dish... on my way home, I always pass by "Bukhara Plov Center" that operates 24/7, and the shop is always packed - both with Uzbeks and Russians. The tasty food unites...

    Looks delicious! We have a similar dish in southeastern Iran called "goboli" گبولی which is prepared in a similar way, but we use potatoes instead of carrots plus chickpeas (optional) and different spices.

    This looks insanely good! Could I also slow cook the lamb on a bbq? It’s a pretty seasoned bbq so may add a smoky flavour which is good… baaaad?

      You CAN do whatever you’d like but the idea is the meat is yakhni which means boiled/braised and the liquid is needed for the flavor in the rice. But give it a shot and let me know how it turns out!

    Phenomenal tutorial with amazing results. The last time I ate amazing pulao was when I visited the beautiful country of Afghanistan. I've been craving it for a long time, and finally found this recipe and felt inspired. I did the recipe, but in place of lamb, I used goat, and it was so delicious, easy, and authentic. Thank you!

    My wife and I were talking about the raisins in Qabuli Pallow a few days ago, while we were eating a salad that we'd thrown some sweetened dried cranberries into. We said that if cranberries grew in Afghanistan, they'd probably be used in Qabuli Pallow! Authenticity's a funny thing, no doubt!

    Wow Mirriam I felt in love with your youtube channel. I love cooking exotic food. Yesterday I prepared this recipe and invited a friend who also loves exotic dishes. Here in Argentina is difficult to find black cardamom, a friend who came from USA brought it to me. Wow your recipe is amazing.       You can. But as long as it doesn't smell burned it should be fine. Honestly, I've had to throw out batches of it because it burned so don't be upset if you don't get it perfectly every time.
