- Super easy and delicious, light, crumbly and slightly crunchy homemade butter cookies with jam ready in no time. Just whisk all the ingredients together and add jam. Perfect treat with a cup of tea or coffee.

RECIPE: (makes 20 cookies)
120g room temperature unsalted butter
60g icing sugar
1 egg
200g flour
1 tsp baking powder
Vanilla flavouring
Pinch of salt
2 tbsp raspberry jam

I tried your recipe and it turned out really good. I had to withhold the last tablespoon or so of flour because my dough was quite thick and it was hard to pipe but I made it through. The sugar is just perfect in the recipe too. One thing I forgot to do is to seive or soften my jam before trying to pipe it because it was a bit clumpy and made piping difficult for me. I also baked the cookies for about 12 min at 350 Fahrenheit because I wanted less colour on them. Thanks for sharing your recipe and technique.
