    1oz (30ml) Pineapple Juice
    .75oz (22.5ml) Lime Juice

    I tried a few of these rum subs for a recent cocktail party! Here are my thoughts:
    Soda water: I didn't make the Palm Trees Attack recipe, but I did successfully sub soda water for rum in a Painkiller and a Zombie. I also used it in another NA drink recipe found on Reddit, "All the Sunny Fruits." All three were delicious.
    I was reluctant at first to rely too much on soda water because it felt like a boring, easy answer, but after trying s few things, I actually think it is the most versatile substitute. It's flavor-neutral, so it goes in anything. The bubbles add a sharp zing to replace the alcohol burn. And if you use 3-4 oz of soda in place of 2 oz of rum, it dilutes the sweetness of the final drink a bit, which I think you need if you don't have the alcohol in there to balance the sugars.
    Mock-tai: I did make this recipe and it's absolutely delicious. It had sort of a creamsicle flavor - very sweet and orange-forward. Not super similar-tasting to an alcoholic Mai Tai, but really excellent. I think that if I wanted to make it less dessert-ey and more aggressive, I might reduce the OJ and add a splash of soda water.
    Blackstrap Tea and NA-vy Grog: I tried this and liked it, but I don't think the Blackstrap Tea is super versatile. On its own it tasted sort of unpleasantly spicy and funky, and when mixed into a Zombie the end result was not very well balanced (unlike when using soda water). The issue could be with my methods of brewing the tea - looking back at the recipe now, I realized that I used allspice instead of nutmeg - oops. And I think that I may have oversteeped it. If I try it again, I might try just eliminating the spices altogether and relying on syrups and bitters to bring the spice elements to drinks.

    Now that new ingredient (English breakfast+blackstrap molasses) is inspiring!
    I might even consider that the caffeine content is low enough to share that NA Navy Grog with my 5 years old. He get so jealous when i make myself a cocktail.
    How long do you infuse the tea and why add spices with the tea when you already involve a cinnamon syrup in the cocktail?

      I infused mine for about 30 minutes. I added the spices for additional layers of flavor in the cocktail. The cinnamon syrup adds a nice rounded spice upfront while the infused tea adds that rounded spice, from the cinnamon, on the back palate.

    For rum substitute I just use Dr Pepper 😂
    Maybe that's wrong but it's dark and fruity.
