Want a snack fast and out of this world, try this roasted potato recipe. This dish can be served on its own or as a side dish, I like to make a lot when I have a party.
I like crispy potatoes but here I did not reach the point of it being completely crips on all sides. I like it to be crunchy on the edges and soft on the inside. Try it both ways and tell me how yours turned out.
Ingredients
1 1/2 lbs. - Potatoes, any kind, skins on or removed
1/4 cup - Vinegar, any kind
Olive oil as needed
Salt as needed
Dressing
1 - tsp. - Dijon or grainy mustard
3 - tsp - Mayonnaise or whole-milk plain yogurt
Pinch of garlic powder
Pinch salt
Pinch granulated sugar
Freshly ground black pepper
Parsley as needed
Notes - preheated oven at 350 degrees F. for about 30 to 35 minutes, for crispier potatoes, leave a bit longer. Also, give the tray a bit of a shack every now and then.

I made these tonight to go along with roasted chicken thighs and Brussels Sprouts. They taste great! No dipping sauce needed! The smells coming out of my kitchen while the potatoes boiled in the salt and vinegar, then roasted in the oven were wonderful.
