    Throw your garlic in cold olive oil so garlic has longer time to infuse while the oil heats up

    She's right that it shouldn't be blanched before sauteing. The slight bitterness is what makes it go so well with chicken and sausage.

    Soooo YUMMY!! I never Broccoli Rabe, but love broccoli. So, absolutely going to try this recipe. Gotta say, it's a little weird way back when, you didn't do taste test after you finish cooking...Lol I have learned so so much from you. Thank You Laura. Arlene

      +Money Mark LMAOOO Its a green vegetable popular in Italian and Portegese dishes .. If you buy it and see yellow in it Don't buy it .. should be all green

    I watched a bunch of videos on broccoli rabe before I got to this one and I like yours the most. I love the bitterness! Why would I want this to be less bitter?

    That's the way to do it Laura! You got it going on. I'm going to put this Rabe on top of some roasted pork loin with some smoked provolone and make myself a delicious pork sandwich for lunch. Keep up the good work!

    Thanks for posting this.
    In Canada we call this vegetable what they call it in Italy: 'rapini'. Rapini is an amazing vegetable. Try rigatoni or penne with rapini, sausage and fresh ricotta. And of course some of those amazing little peppers. Delicious.
    I use the Italpepe brand of peperoncini. Maybe you can order some from their website. We get them here, surely in the States you can find them.... buona fortuna !

    That intense bitterness is the whole point of broccoli rabe. Not sure how anyone could miss that.

    Good girl for pointing out that rapini is SUPPOSED to be "bitter" and that it doesn't need to be blanched. However, the stalks are delicious too, but they take longer to cook. So I cut them up in pieces and start sauteing them first, and then I add the leaves.

      Yes it is a bitter green and it is my understanding that it is in the turnup family. I use every little bit because it is quite pricey and the stalks are very flavorful. If the stocks are a bit large I will take a vegetable peeler and remove a bit of the outer layer. Happy cooking

      Hello, it is my understanding that broccoli Rabe is not in the broccoli family at all although the florettes resemble broccoli somewhat. I’ve been eating broccoli Rabe for many many years and enjoy it the way they cook it in Bari Italy and that is with sausage,Orecchiette pasta with red pepper flakes and fennel seed. Yum Yum. If you enjoy turnips then you will enjoy broccoli Rabe. I believe it is in the turnip family as it is sometimes noted as turnip tops. Happy cooking.

    I like to jus saute it in olive oil no added water. i find the water makes it very mushy n takes away from flavor. i like the bitterness! its rapini for goodness sake!

      Or maybe your grandmother understood that cooking is an art and is open to interpretation. With all due respect to your grandmother, who I'm sure was a wonderful cook, who wants to cook a dish the same way she did it or the next person does it? I sure don't. I like making a dish MINE. I'm watching Laura cook this, but I'm already thinking about what I'm going to do differently to suit MY taste. That's cooking.

      ***** Sorry no--it is not so much the way she cooks it--it is the way she cleans it--what a waste--Italians as most Europeans don't waste food--That is what she is doing--The stem should be slit with a knife into quarters & not removed from the leaves or tops--That will insure the proper cooking time of entire Broccoli Rabe plant--As for cooking yes steaming & sautéing in garlic & extra virgin with crushed pepper is correct except I use fresh hot peppers I buy in the same produce place sliced into pieces--As far as cooking Broccoli Rabe differently How--Garlic--extra virgin & hot pepper are perfection for this veggie

      Not necessary! My mother always made it like this. The bitterness is characteristic of this dish. I still remember how good they were in sandwiches!
