    I believe what you are describing is what’s called keeping an open mind. People used to be encouraged to keep an open mind. It’s all too rare these days though.

      Everybody is looking for an echo chamber, it seems. And upon exiting these echo chambers and finding their beliefs challenged, they have a melt down - very often going into attack mode. It's a bummer...

    I used believe that high amounts of fiber were necessary for gut health and losing weight. Obviously, that made carnivore a really bad way of eating.
    After going keto and losing weight you would think that I would have been in a really good place, especially as I was getting about 32g of fiber daily. Unfortunately, I found myself “bound up” all too frequently. Everyone kept telling me I needed more fluids. But if I had any more I felt like I would float away. So, what helped? Meat. The closer I got to carnivore and the less fiber I ate, the easier were my bathroom breaks. So, have I gone carnivore? 😂 NO, I like other foods too much. But I have changed what I believe is good for me based on my own experience, not just what it currently touted as “healthy”.

      I'm pretty much in a similar boat. Ended up off the wagon for a bit and had constant constipation. The moment I went back onto low carb, things cleared right up for me.

    My elder brother (#2 of 3 elder brothers -- he studied biochemistry & biology) told me back in 1974 that eating polyunsaturated fats and sugars were processed by the enzymes of the body to create the cholesterol like compounds that clogged the arteries, not dietary cholesterol. In 1993 or 1994, a presentation at a local American Chemical Society meeting of a published peer reviewed paper actually showed the enzymatic pathway and the reactions in the human body that created the scaffolding of the artery clogs (arachinoidic acid), which used poly-UN-saturated fats and blood sugar as the building blocks of the scaffolding molecules. Also, in Scientific American about that time, they showed how multiple copies and often mis-copied genes for the creation of the "hook" molecule that attached to the blood vessel lining and started collecting the cholesterol from the blood, caused a large excess of that molecule (and the improperly made molecule that only collected the repair materials and not the enzyme that did the repair (no place for it to dock), also caused artery clogs. So it appears that genetic factors PLUS eating excess polyunsatured fats and lots of sugar cause the blockages... exactly what has been pushed on us since the early 1970's by "The Science(TM)" and the food industry.

    Over the years and there is a lot of them, I have been on WW( age 14 ), starvation ( only a meal every other day), bulimic, caloric restriction, planted based( developed anemia) and SASS. Never considered keto until I was around 60. How I look and understand food and my body has definitely changed over the years. Thank you for sharing! Love and respect from🇨🇦

    I didn’t see the headline but I’m f I had seen it I would have laughed. I eat pork rinds daily. Dr. Berry’s children eat pork rinds. I try not to watch the news 😊. Talking about Keto/Carnivore, I am definitely Ketovore. Great video!

    Never heard of the pork rind story. I pay little attention to the main stream propaganda. Keto Certified, I needed a good laugh. The only certification I pay attention to is cGMP and GMP. What Westman said is correct. People overthink and complicate a very simple diet.

    I did not see that story, I'm not a fox news fan but hubby is. I'm surprised he didn't mention the story to me. However we did discuss the AHA poster on intermittent fasting.
    I started carnivore recently in hopes of helping my autoimmune disorder. It's a challenge even though I enjoy meat. So now I'm probably more ketovore . 😊 🤔

    This is great. Great commentary, great material, hypothesis, etc...
    I don't care for the "news" at all. I heard someone say recently that the most truthful thing on the "news" is the weather. During kovid I heard someone tell a story about a conversation that went like this, "The news is what's on TV. And what's on TV is the news." 15 - 20 years ago a late night "comedian" did an actual funny piece on how practically every news channel used the same words or phrases in their reporting. I've heard that most news outlets are owned by only a handful of corporations 😂
    I have nearly finished a huge bag of 4505 Chicarrones fried pork rinds and I didn't even go to the emergency room! 😂 I'll have to edit this after I finish watching. I'm really enjoying this so far. Edit: I did want to say, Steve, you a truly a prince among men. You are kind and considerate to others. We all appreciate that. Wish I were more like you in that regard.

    I've also concluded at least for me your starting point blood glucose matters. So, if I eat something thst has 10 grams total sugars (or carbs) in it I most likely won't have a spike in glucose. I'm not strict about my ingredients, just my total glucose reaction to something. I've looked at artificial sweeteners and pretty much all of them are safe in my opinion. Just like everything it's dose dependant. From what I've seen all the dosages from testing these artificial sweeteners was extreme and is nearly impossible to have the effects that they report. Everything I talk about applies to me only, I always emphasize that when talking about nutrition and diabetes. Some people can have much higher carbs without any harmful effects from them, I'm currently not one of them. I've been looking into the weight vs insulin resistance and how that affects blood sugar. I haven't reached any conclusions yet, but I've heard that there's a theory that everyone has a body fat threshold that has an effect on how you respond to carbs. I'm still a little overweight, so who knows where or even if this has an effect on me. Lots of self testing is where I'm at.

    Steve...I always appreciate your pragmatic approach. And a label to signify certification that isn't tested....makes no sense to me.
    In this era, balanced thinking and resulting commentary have gone missing for so many. I trust you to NOT be in that category...ever. Keto on.

    I went carnivore a year ago. It was awfully hard to stay on it for me. What I find myself doing these days is 90% carnivore and adding some keto meals once in a while (ketovore). Don't blow your channel just yet. You might change your mind.

    Unfortunately, many people I know think I’ll die from living keto. Sadly, my husband thinks I’m eating just fat…on keto. What is your thought on maltodextrin in electrolyte packages for instance. Maltodextrin can be found in even supplements… such as ones you would find in vitamin stores.

      As I say, the dose makes the poison. Some people are highly sensitive to maltodextrin, so for them "the poison" is any amount. I find that for me, a small quantity has no impact. So it's really an individual thing.

    The article is just simple clickbait. Or ragebait... depending on the reaction. It gets eyes and it gets people talking. The content and what actually happened is secondary.
    And my 2 cents about the knowledge. I have been an IT guy all my life. My coworkers all pretended to know everything all the time. The IT guy needs to know every issue... bla bla... I always said "I will figure it out" and I listened to people telling me something, when I thought something different. I always do that in real life too. I (think I) know something and somebody tells me otherwise and I check it out if I am wrong. People say that this is low self esteem or something but that is not true. This way I learn all the time. And I change all the time.

    I'm a math and science person, so I feel kinda dumb asking this question. I really like the Better than Bouillon products, but I've suspended using them because one of the ingredients is maltodextrin. Same with Crystal lite. How did you compute the amount of maltodextrin in the product you sited? I'm thinking the manufacturer would not be willing to give you a percentage so that it could easily be calculated.

      It fell into the "contains less than 2% of the following..." category. So I rounded up to 2% (just to be safe) and then applied that to the weight of a total serving to approximate the number of grams of maltodextrin per serving.

    That Dr. Berry quote reminds me one of the book "How to Develop Your Thinking Ability" by Kenneth Keyes. Also, it reminds me a bit of Bayesian thinking - a subject I'm sure, with your background in stats, you're also familiar with. It's a fun topic with cover in the Discrete Math class I teach.

    Yep, my sister saw the article headline only, and started telling me I was going to kill myself and my body eating Keto. Meanwhile, I've lost 80 lb lower my a1c, and lower my blood pressure. If that's killing myself, I'm going to continue to do it

    My difficulty with the keto certified thing is the reliance on 'per serving'. That's how american nutrition labels manipulate buyers

    When I was in high school my friends and I had a homemade diet drink to lose weight and the main ingredient was maltodextrin--no wonder it didn't work for us!

    No more than 6 carbs per 100g was what I was told by a dietician 15 years ago. That's the only part of the label (plus ingredients to make sure there's nothing really bad) I needed to read.
    In Australia, it is required by law to have food labels include the amount of carbohydrates (and other factors) per 100g or 100ml. They can put on the amount per serving if they wish but they must have the per 100g list included. It makes it so easy to read and find out what each product is really made from. My problem with ordering from places like Amazon is that they often don't have this list, so I have to calculate it from their serving size so I can compare it equally to other low-carb products, if I can be bothered.
    Some places don't include any list of ingredients or their breakdowns. If that's the case, I steer away from these.
    If your country doesn't include the nutrient breakdowns in an easily comparable form, I suggest you start writing to your government bodies and get it included.

      Nutritional labels in the US are pretty much "anything goes". Lots of games can be played with adjusting serving sizes, rounding grams, etc. The food lobby in the US is far too influential.

      @@SeriousKeto That's bad. The labelling should be there, primarily, for the consumer. If only ' people' were prioritised instead of lobbyists, factions and greed. I'm sure there are cheats in any industry but you'd think a government body would be considering the end-user first and foremost. After all, a healthy nation is a wealthy nation.

    This is great info. It's why I like to use Dr Berrys term proper human diet. Because he has a carb range depending on what an individual can handle. If you ever try carnivore, I think you could still keep your channel. Because you are creative and it's not as limited as people think. There are so many people you could watch for ideas also.
    But anyway, n=1 do you keep doing you sir. As you said our beliefs can change! I use to be very anti keto and now I'm ketovore just for the sake of the label police out there.

    I'm just afraid of maltodextrin because it spikes sugar as much or more as regular sugar... according to some articles I read online. I know that for me to truly know for sure is to try some and test my sugar spike, but I'm doing so well in keeping in control that I just don't know that I want to risk it. It does mean I miss out on some tasty sugar-free stuff I could technically be eating, but still...

      Yeah I stay away from maltodextrin too, and dextrose. I only use liquid splenda occasionally, it doesn't have those ingredients.

    Thank you for sharing useful information and your thoughts with us.
    I definitely seek out and pay much more attention to pro-keto information. I know my beliefs are biased. When I hear of a study that goes against my beliefs, then I do want to know, what proof it provides for it's claims (but I expect the title to be exagerated or conclusions made from data that was misinterpreted or irrelevant to actual keto). I like to think that's open-minded enough.
    I also admit I feel superior when I eat my keto/low-carb meals and see what others are eating. Sad too, if they are overweight or obese, aging and unhealthy, but uninterested in trying even low-carb. I try not to act snobbish about it and in conversations (because I'm unwilling to never mention low-carb at all) I focus more on how happy I am with it and how interesting some recipes are - boiled egg pudding, fathead dough, the "flours", sweeteners and flavorings that allow me to keep my sweet tooth happy.
    I know trying to convince people, that they really should try something in the low-carb direction too, didn't work with my family and risks annoying those people, so that I usually hold in.
    When I see products with the labels no sugar, reduced sugar or low-carb, then read that they contain quite a bit of maltitol (most such products) I get so annoyed - it feels like false advertising, no matter that it's technically true. There is a refridgerated quark protein bar in Lidl stores that contains some maltitol, but is borderline ok in total macro's and only marketed as a protein product, that I do buy.

    Ugh..great. its headlines like that which make my MIL come at me with these bizarre keto theories. The other day I told her I was about to go into my fave keto store that was shutting down cause the owners osteoporosis is getting worse. She says oh does keto give you that? I instantly regretted opening my big mouth. I know better but I wasnt thinking. Yet she tries so hard to also do keto but still knocks it cause she knows it works since ive lost 40lbs...wth. I love pork rinds!

    Hi Steve. I didn’t see that headline. How misleading. Oh well. That’s the media for you, lol. I hope you don’t go carnivore because I love your recipes and cooking videos. Purely selfish reasons on my part. Honestly though, we all, as individuals, have to do what’s best for ourselves. At this stage of my life I find that life is too short to go on such a restrictive plan but others love it and feel great on carnivore so I think that’s wonderful. Thanks for the information on the labeling. Very interesting.😊

    I have lost quite a bit of weight moving between low carb and carnivore (75 pounds so far). What is interesting is feeling the differences between inflamed and uninflamed. It doesn't happen immediately for me, so the "I want it now" 5 year old in me gets kind of bummed out when I am good for say 5 days and I don't really see anything happening.
    But then if I stick it out for two weeks, all of a sudden I wake up and actually feel refreshed from a night's sleep. That is a great feeling. But, I am a mere mortal and old habits are still very hard to break. So perfect, I am not.
    I said all of that to say this; it is getting harder to see really obese people and not say something. I genuinely would like to help these people I see all the time. Especially those at my church. I want to let them know that they have been lied to, and that there is another way to exist. Or another relationship to food that will work with their body and not against them.
    I am thinking about making some cards and just handing them out. I think some various Keto and Doctor's UA-cam channels would be good. Who would you put on that card?

    As I watch this, I am eating pork rinds with my protein meal 😂
    The only thing that I eat is Ratio Keto friendly yogurt. The sunflower oil or olive oil? They don't seen to bother me.

      The problem with that is that the flavor of KC beef soup is really mild. Also, for whatever reason, KC causes the cracker to REALLY spread out and I'm not super fond of the texture.

    The anti-keto bias is not political in any sense, it's all about money. Most of the food companies in the US are owned by 10 (or so) main companies. Those main companies and their subsidiaries advertise on all the major networks, including the so called "news" networks like CNN, MSNBC, etc.,etc. (almost all of them, no bias here). Those main companies and their subsidiaries have an infinitesimal amount of revenue from keto or low carb products compared to the mainstream garbage they produce. If any network started majorly covering keto favorably, those big companies would send their advertising dollars elsewhere. That's why no major network will touch anything low carb IMHO. These same networks loved the anti-fat movement of the 80-90s, which we all know was a major disaster to the citizenry. Fat was replaced with what......sugar. Fat is not a huge market seller, but sugar is, and a couple of those mega food companies own all the sugar companies. SSDD, if you know what that means.

    If you ever do go carnivore, you don't have to give up your cooking channel (just change the name😉). There are lots of good carnivore cooking channels on UA-cam, like Chris Cooking Nashville and Ketogenic Woman. I eat mostly ketovore, and I watch both keto and carnivore channels. And even an occasional vegan video, just to keep up with the propaganda. 😀

    I think a lot of fat, unhealthy people know that they should loose weight but don't want to.
    If they can “debunk” and show the flaws of the easiest, most effective “diets” then they can sit (literally) in their conceited, self-destruction and say to themselves:
    "Well, none of those diets are actually healthy, therefore I CAN’T change my diet.”
    ”I don't want to” in their mind becomes “I can't” or “I shouldn't.”

    Because of what I currently believe, I just wish that ingredients that are known to cause problems in some people had to be labeled and not snuck in under other names. There is no dose/poison amount of maltodextrin my wife can eat. It's all poison to her that causes afib.
    For example, if I'm making a peanutty product, I know some people won't buy it if they know peanuts are in it. I wouldn't sneak peanuts into it and called it a "natural flavor". We never say, "There is such a small amount of peanuts in this, it's insignificant". Sorry, but I currently believe that there is no insignificant amount of maltodextrin. Again, I don't care if it's used but please label and identify it.

      My thoughts exactly about LMNT that they have, what they consider " an insignificant" amount of maltodextrin. Insignificant can still be deadly to many.

      @pattylyman7907 Funny you mention that. Dehydration can cause afib as well, so the wife started pounding her LMNT electrolytes even more to get hydrated. Her afib got worse and worse. Finally it twigged and I wrote LMNT. They said they use maltodextrin but not to worry, it was insignificant. When she stopped drinking it, her afib went away almost immediately.

      The nutrition/ingredient labeling in the US is about as close to "anything goes" as you can get. I personally would love to see companies no long be able to define something as "natural flavors". In some instances, it's as benign as stevia; but in other instances, as you state, it could be something that could trigger an allergic reaction.

    There are 3 people on Fox news that are openly keto. I haven't heard anyone on CNN yet.
    Before keto I believed that my freshly made carrot juice with banana and protein powder were healthy. Then when I started adding flax seed oil...well..I was going to live til 200 yrs old! 😊

    Yes, yes, and yes, Steve! I'd looked up some of those "standards". Incidentally just found that La Banderita just came out with a new "zero" net carb tortilla. Finger pokes coming soon, to compare with their other "3g net carb" ones! They also have a smaller jalapeno cheese tortilla, but it smelled too strongly of jalapeno so I didn't buy them.

      I have one occasionally. I also fry them in avocado oil till krispy,, and make chips out of them. Can season them any way you like. I missed having chips n salsa. This worked.

    I like the essential stay in your own lane when it comes to food!
    When I was vegan I never pushed others to be vegan. Yet, others were continually pressing me to be a meat eater! Go figure!
    I simply make food that tastes good and no matter what one chooses as their regular dietary Lifestyle they should still be able to enjoy.. ( barring the vegans that is)-
    I too did the carbs are what the body needs to be fuel to it's best performance - I think it was Dr Robert Haas ( or Hass) who was the author of a book touting carbs and how the humble baked potato and bagels galore was the best fuel for the body.... uh huh- the nineties had the pounds rolling on as I got bigger & bigger! And more achey and more achey! Even though I walks upwards of 8 miles a day... and did 1/2 marathons and 10k walks... no fat! Lots of carbs! Yikes!
    Thankfully I gave that all up once and for all.
    I'm sure many people did quite well on that dietary lifestyle - me, not so much!

    Great video Steve. Thanks. For some reason, both maltodextrin and stevia are huge trigger foods for me, as is Sucralose. I am pretty close to carnivore now, mainly because I have a decent salad when all other options look bad. Thanks for your videos
