Any rooms that are too weird to inspire anything specific are great for storage or modified hang-out areas for lower members of the castle like a break room, but that depends on the lore you want to create. I understand the notion of using blocks that fit the area, but I do think it's reasonable to consider the possibility of the area being able to do trades and exports of exotic materials. That also has lore implications that one may or may not want to make, but imo it would be a way to expand block palettes to more unconventional materials while still being within reason.
I remember Shadiversity having a real good video on what you should keep in mind if you are designing a castle, not specifically for minecraft but quite good info in it. Anyhow great tips in the video, love it!
I have been trying to come up with a castle design for the server am playing on, and I have kept hitting roadblocks, thank you for your tutorial because it was very informative and I have a better understanding. Thumbs up👍!

Don't make a sandstone roof on a prismarine base - make a prismarine roof on a sandstone base (seriously, it looks a lot like fancy shingles).
Interior is just as important as exterior. Without it you just have an empty shell that can’t be explored. No life in the build
